    I think fruity rum drinks come out particularly well with clarification

    I always find the clarification takes the flavor profile down. I haven’t had a clarified cocktail that I though was really Wow! So, I’ll try this one because it’s right up my alley! Thanks Dave! Cheers!

    Hey my freind! This is a very good video and great content! Very good explained and nicely biuld. Thank you for that. Just one question: Is there a specific ratio between Juice, citrus and lemon so that the clarification works best?

      It all depends on the acidity level. The rule of thumb is your entire mixture to dairy. i.e. 4:1 So for example. If you cocktail is 4 oz/120 ml the you need to add it to 1 oz/30 ml of dairy. And lots of time for the filtering.

    If you make it in a large batch, how long is its shelf life before it spoils? And does it have to be refrigerated?

      Hello, that depends on a couple of things. The process is originally from the 1600-1700's and was used to store punch for long duration's. However that would be in a sealed bottle, that was sterilized (boiled) before bottling and sealed afterwards. But, if you have opened it I would keep in in the refrigerator and it should last almost indefinitely there. But you should always be careful and do more research if you plan to keep it for long periods.

    What’s the point of clarifying the punch? Just curious

      If you have bitter agents in the cocktail it will remove them. It will also make the cocktail shelf stable for a long time in a bottle. It used to be a technique that used to keep alcoholic beverages for long periods. But as a fun aside it changes the flavor and makes it look great :)
