    Butter Chicken and Chicken Tikka Masala are 2 different dishes. Moreover the Butter Chicken we get in restaurants are not the same Butter Chicken you will get in India. Here in Australia it much sweetened.

      It’s different now but it shares recorded same origin, it’s a fairly new dish as well…very similar way of cooking as well!

    Yup I agree, world over the majority of Indian dishes foreigners get eat are no way authentic. They are just sugar ladden watered down poor copies. Even in UK - the 2nd hometown of Indian food - there are just a handful /few restaurants (in single digits) that can make decent Indian dishes...rest 95% are Bangladeshi and Pakistanis restaurants/ joints that don't know how to cook Indian dishes. Btw, i wonder if most people realise that you have you cook an authentic tandoori chicken first before you make this Raveer's fast version of butter chicken. One of my favourite recipes for butter chicken is from Punjab - two stage of marination (both stages overnight) with a peronalised masala blend >> Then it goes into the tandoor for a roast >> the final stage of the tomato sauce, cream, cashew cream. It's takes me 1.5 to 2 days to prep/ make this amazing dish. And the rewards are outstanding.

    Kewra water is Pandan leaf extract. Very popular in Thai deserts.

      Yes Pandan leaves and flowers and Basmati rice has same aroma giving chemical components. Pandan flavor is extracted as Kerwa water.
      If you add a bit to non basmati rices, or even to basmati rice it accentuates that unique basmati rice flavour and taste.
      Yes in Malay, Thai cuisine, let it be savoury or desserts pandan leaves is predominant. They even use bunch of fresh leaves as car air freshner.

    kewra essence or kevda water, is a fragrant Indian floral water, in the tradition of rose water, extracted from the flowers of Pandanus tectorius.

    any indian grocery shop have Kewra water(its an essence of srew pine flower) and Kasoori Methi.

    Butter Chicken is a Panjaabi dish and Chef Ranveer does the most authentic version and does the recipe justice. It is one of the greatest dishes in the worldc although it is very rich. The sauce is silky and luxurious becaude of the copious amounds of butter and cream. Even as a Panjaabi, I would only eat Butter Chicken once a week but a Butter Naan and some Garlic Fried Rice. No need for Raita as it's not a "hot" dish. Chicken Tikka Masala isn't even in the same league as Butter Chicken. CTM was originally made at the Moti Mahal restaurant in Delhi way before it made it's way to Britian, it's more tomato based rather than butter and cream based so less rich and elegant but hotter.
    Kewra water is Rose water. Mostly used in Indian deserts but should be easy to find in Indian supermarkets.

    For me looking at this video made me realise the question of Butter chicken & Chicken tikka masala difference. Around 10:40
    So my take is if you used chicken tandoori from a previous day for this dish it becomes Butter chicken… and if you make the chicken fresh it becomes tikka masala

    Please mind that chilli powder he is adding. We have 2 types of chilli powder.
    The one he is using is called "deghi" or low-heat, high flavor and color powder from Kashmir (also called Kashmiri chilli powder; also grown in some other parts of India).
    The normal one is high-heat. So if using that one, reduce quantity (or you may have to add even more butter).
    Btw, butter is not the heart-attack inducing thing Western science has made it out to be. Obviously overdoing anything is bad, but it is not the villain it is made out to be. Overeating is the killer.

    Kewra water = rose water; please don’t get hassled by the chilli powder ….. this is ‘degi mirchi’ which is primarily used for Color. It has no heat. It’s sourced from the state of Kashmir. And you need not add as much butter as he has; but don’t compromise on fresh cream.
