- Dear friends presenting MUTTON PULAO BIRYANI. Make it for yourself, for your friends and family, or for your business. You will be No.1 for sure.
RECIPE CARD: Mutton with bones: 1 kg, Basmati Rice 800 gm, Oil: 1 Cup, Yogurt: 1 Cup, Chopped Garlic: 1 Tbsp. Fried onion: 1 cup, Garlic Pate: 3 Tbsp. Ginger Paste: 3 Tbsp.
PULO MASALA to be boiled: Fennel seeds: 2 Tbsp, Coriander Seeds: 2 Tbsp, Cumin Seeds: 3/4 Tbsp. Kala Zeera: 1 Tsp, Cloves: 1 Tsp, Black pepper: 3/4 Tbsp. Star Anis: 2, Black Cardamom: 3, Green cardamom: 10. Cinnamon Stick: 2 of 2 inches. Whole Red Chili: 20. BOIL in 2 glasses of water for 30 minutes, Separate all whole spices from the BROTH. Keep broth on a side.
Discard red Chili, Cinnamon Sticks and Black Cardamom and make a very fine paste of the rest. Keep the paste on a side.
MEAT BOILING STEP
Mutton 1 Kg. Salt: 1 Tbsp, Water: 3 Glasses.
Cook for 30 minutes then add Whole spices Broth in it and cook until meat tenderize 85%. then remove Mutton and keep YAKHNI on aside.
In the same cooking pot add oil, then add ginger garlic paste, Whole spices paste, fried onions, black pepper: 1/2 tbsp, cloves, 1 tsp, green cardamom: 12, and then mix well on 1/2 flame for two minutes. Add cooked mutton ans yakhni to it cook for 2 minutes and then Put for Dum on very low flame for 5 minutes.
BOILING RICE: Soaked Basmati for 3 hours, 5 tbsp salt, 10 green pepper whole.
DUM; Oil one cup, Kewda water: 3 tbsp, Rose water: 2 tbsp
FOR 2 KG MUTTON/BEEF/LAMB
RECIPE CARD: Mutton with bones: 2 kg, Basmati Rice 1.6 kg, Oil: 11/2Cup, Yogurt: 2 Cup, Chopped Garlic: 2 Tbsp. Fried onion: 2 cup, Garlic Pate: 6 Tbsp. Ginger Paste: 6 Tbsp.
PULO MASALA to be boiled: Fennel seeds: 4 Tbsp, Coriander Seeds: 4 Tbsp, Cumin Seeds: 1.5 Tbsp. Kala Zeera: 2 Tsp, Cloves: 2 Tsp, Black pepper: 1 Tbsp. Star Anis: 3, Black Cardamom: 5, Green cardamom: 20. Cinnamon Stick: 4 of 2 inches. Whole Red Chili: 35.
MEAT BOILING STEP
Mutton 2 Kg. Salt: 1.5 Tbsp, Water: 5 Glasses.
WHOLE SPICES TO FINAL MASALA WITH YOGURT:
Black pepper: 1 tbsp, Cloves: 1.5 tsp. Green Cardamom: 20
BOILING RICE
Rice: 1.6 kg, Salt: 8 tbsp, Green Chili: 15
Dum Lagana:
Oil: 1 Cup, Kewda water: 5 tbsp, Rose Water: 3.5 tbsp - Zábava
For best Results, Mix well after final DUM.

Yes use any of them. Cooking time varies. Also Sela Basmati can be used. Not regular Sela.

In your recipe of 3kg it's almost 1 cup and in your recipe card u have written 1 cup in 1 kg as well which is i think too much for 1kg
Recipe Card is always FINAL after all checks and balances. Salman you have to be a detective. You observe deeply.

You are my favorite chef love your recipes but I disagree two things you make the world number one biryani and use the store bought onions and store bought ginger garlic paste these two ingredients are the most important ingredients in desi recipes and you should use the fried onion oil not from the bottle to give the depth in flavor
Please upload shami kabob recipe your old one needs to be modified because you did not use onions in that recipe

U talk too much and not onpoint. Your recipe is not well organised thats why you are not getting enough view.
5 minutes recipe u extend to 15 minutes or more.
