Dear friends presenting one of the most favorite Biryani in Lucknow. One of the TOP Biryanies in the World. IDRIS BIRYANI Style. Copyright Protected
RECIPE CARD: Mutton with bone: 1.5 Kg, Rice: 1 Kg or 1.25 Kg (Extra Long Grain Basmati Preferred).
STEP ONE (YAKHNI)
Mutton: 1.5 Kg,,
Paya bones: 750 gm,
Oil 1 Cup,
Yogurt: 1 Cup,
Garlic Paste: 3 Tbsp,
Ginger Paste: 4 Tbsp,
Salt: 3 Tbsp,
Red Chili Powder: 2 Tbsp
WHOLE SPICES to be crushed:
Fennel seeds: 3 Tbsp,
Black Pepper: 1 Tbsp,
Clove: 1 tsp,
Green Cardamom: 20,
Black Cardamom: 3,
Cinnamon Stick: 2',
Jyfal (Nutmeg) ½ Ball,
Javetri (Mace) : 1 Tsp
STEP TWO: MILK with Spices, Frying Onion and Mixing and cooking with Yakhni
Milk: 1 Liter,
Sugar 2 Tbsp,
Whole Spices grind very fine:
Fennel seeds; 2 Tsp,
Jyfal (Nutmeg) ¼ ball,
Javetri (Mace) ½ Tsp,
Cinnamon Stick: 2”,
Green Cardamom: 6,
Cumin seeds: ½ Tbsp,
Kewda Water: 4 tbsp,
Rose Water: 2 Tbsp ( Final Yakhni and Milk Mixture must be 1 Liter approximately)
Onion: 150 Gm sliced,
Oil: 1.5 Cups
THIRD STEP: BOILING RICE
Rice (Extra long Grain Basmati): 1 kg to 1.25 kg Soaked in water for 45 Minutes to 4 Hours
Salt: 6 Tbsp,
Cinnamon Stick 2 of 3",
Clovrs: 10'
Green Cardamom: 10,
Oil: 4 Tbsp
FOURTH STEP: DUM LAGANA
Water: 1/2 Cups, Kewda Water: 5 Tbsp, Orange Food Color: 1 Tsp, Saffron: 2 Pinches. Remaining Oil from Fried onion, - Zábava

Made this on thrusday night for dinner..Must say long process hard work but the end result is yummm.Turned out amazing.I had made it with 1.5kg mutton and 1kg rice. Though I forgot the last 1/2kup water + kewra water before finally closing the dum, still the taste n flavour was too good. I had used 3-4drops of mitha itar also.

Best procedure of making biryani. Sakkar se dahi ka khatta pan balance jota hai. Masala dudh se biryani umda banta hai. Thodi der aur rakhtey to aur accha hota. Pakney ke baad aur 10 minute rakh dete to aur accha hota. Sukriya chef ji for your delicious biryani recipe 😊🙏

Hi brother.. I did the recipe.. One twist is, I did with prawn briyani... Excellent taste.. And the best fit method for prawns as it has less masala..
1) For yakni- I used the removed skins of prawns instead of prawns.. Wash it very well for 3-4 times, just rinse once with salt.. If we use prawns directly for yakini, it might overcook so I used the skins of prawns.. It worked very well..
2) I put the prawn at the end after mixing milk and boil for 15 minutes in low flame.
3) I used long grain basamathi and instead of boiling rice seperately, I directly put the rice in briyani.It came perfect.. The measurement is for 2glass rice = 2.5glass yakni + 1glass milk + 0.5glass coconut milk(I used this because of prwan. Coconut milk enhance the taste of prawn). Soak rice for 1.5 hours in water.. Keeep high flame in open pot and put the rice directly.. Wait till water 3/4th of water evaporates. When rice and water reaches same level, then put on dum.. Put above a tawa close the lid tightly and keep in low flame for 20-30 mnts.. You will get perfect rice.. This is the measurement and method to follow if you want to put soaked rice directly into boiling briyani mixture.. Else, follow the measurement from video..

Dear friend you actually surprised me. I really want to know who told you to Use PRAWN's (Shrimp) skin to get broth (Yakhni). Where are you from??? I am serious. I use prawn skin also for Yakhni when I make Shrimp Pulao or Biryani but never disclosed and never shared because I thought it would consider odd. Tell me about yourself.

I cook briyani for local friends gatherings and society parties.Local friends like my briyani's very much.I am not a commercial cook. I follow your channel for 3 years,and I have seen your previous version of briyani before 3 years itself.
Using shrimp skin is very common by traditional and experts cooking as I have heard about. Even in all star hotels, they serve prawns with shells in plate for decorations. so it is definitely edible :) . You know, the yakhni itself is like a best soup to taste for all prwan lovers.I really enjoyed it. In my future restaurant , sure i am going to add this as shrimp soup recipe(Cheap and Best :) :) ) . As long we are cooking healthy , it is all good. Only cook should know about kitchen not the food eaters.
We can use the shrimp skin yakhni for shrimp gravy usually. But I got my idea to use it for briyani yakhni in this receipe . Because i thought boiling shrimp for long time could make it smashy. Only thing is we need to rinse very well. And before making yakhi, just smash the skins couple of times so it gives good essence. Easy to keep in cooker for 3 whistle and switch off!! So much of fragrance in the briyani. I was very happy that he briyani had come out very well.
But we have more money or more free shrimps , we can make soup or yakhni with prawn itself :)
Chennai Dindgual briyani or most briyani will be with sticky masala.IDRIS or your briyani is non sticky because of the filtering process and very nice to eat. Thanks for your wonderful video and reciepe shared.

Please advise me what to do as our Biryani always tastes like we are eating boiled rice by putting cooked qourma separately on it. No typical Biryani taste. We have tried Saila, Tilda, Slam all types of rice which are available here in UK. Meat or chicken, home made or Laziza/Shan biryani masala.... result is Same. No biryani taste. Taste only looks like boiled rice mix with meat. Please give us your expert advice. Thank you.

Dear, I always used India Gate basmati till I lived in Mumbai, but struggled with Tilda etc once moved to London.
However India Gate Basmati 2 year long grain is available at Indian stores like quality in Southall & probably in East Ham plus at Harrow & Wembly. Do check when possible
