- Dear friends proudly presenting 2nd recipe of Aapka Restaurant. World No.1 Qorma Mutton Qorma Beef Qorma, Purani dilli ka shahi qorma style.
RECIPE CARD: Mutton/Beef: 1 Kg, Onion Sliced: 300 gm, Yogurt: 3/4 Cups, Oil: 1 cup, Mustard oil: 1/2 Cups, Cream: 3/4 Cups, Almond Paste: 2 tbsp, Ginger Paste: 3 Tbsp, Garlic Paste: 3 Tbsp, Coconut Chopped: 1/2 Cups
Ground Spices: Red Chili Powder: 1 Tbsp, Kashmiri Chili Powder: 1 Tbsp, Salt: 1 Tbsp or to taste, Coriander Ground: 4 Tbsp,
Whole Spices will be used whole: Cinnamon stick: 3 of 1 Inch, Bay Leaves: 2 Black Pepper: 1/2 Tbsp, Green Cardamom: 10
Whole spices will be used Ground: Black Pepper: 1 Tsp, Cumin seeds: 1 tbsp, Cloves 10, Black Cardamom: 3, Green Cardamom: 10, Javetri (Mace) Flacks: 4, Crushed Star anis: 1
Spices for DUM: Green Cardamom Powder: 1/4 Tsp, Javetri Powder: 1/4 Tsp, Jyfal Powder: 1/4 Tsp, Saffron: 1 Pinch in 2 Tbsp Milk, Kewda water: 3 Tbsp
FOR 5 KG MUTTON/BEEF
Mutton/Beef: 5 Kg (Puth ka Gosht preferred)
Yogurt: 3 Cups
Onion Sliced: 1.5 Kg
Oil: 4 Cups
Mustard oil: 2 Cups
Cream: 3 Cups
Chopped Coconut: 2.0 Cups
Almond Paste: 6 Tbsp
Ginger Paste: 15 Tbsp
Garlic Paste: 15 Tbsp
Ground Spices: Red Chili Powder: 5 Tbsp, Kashmiri Chili Powder: 5 Tbsp, Salt: 4 Tbsp or to taste, Coriander Ground: 20 Tbsp,
Whole Spices will be used whole: Cinnamon stick: 12 of 1 Inch, Bay Leaves: 10 Black Pepper: 2 Tbsp, Green Cardamom: 50
Whole spices will be used ground: Black Pepper: 5 Tsp, Cumin seeds: 4 tbsp, Cloves 30, Black Cardamom: 12, Green Cardamom: 40, Javetri (Mace) Flacks: 20, Crushed Star anis: 5
Spices for DUM: Green Cardamom Powder: 1 Tsp, Javetri Powder: 1Tsp, Jyfal Powder: 1 Tsp, Saffron: 5 Pinch in 8 Tbsp Milk, Kewda water: 15 Tbsp - Zábava

Bhai I love and follow your recipes and style. Reminds me of my dad who was from Faizabad, Lakhnao. I like this recipe but I loved you years ago shared qorma recipe because not only for its flavor but it’s “Daan e Dari”. Keep on shining bright.

Sir, just wondering if I have to cook say 3 kg or 3.5 kg or any other number so is there some kind of formula which would help me to portion the ingredients that would make exactly delicious as your 1 or 5 kg receipe you published. It will really be of great help to me. Thanks.
Its not a fix formula because for more than 1 kg multiply by whatever kgs you are using but always SALT is to taste

Now I get it- Salt is the only thing which needs to be worked rest of the spices can be just multiplied by taking reference to 1 l kg receipe.

Sir nariyal ka burada use karein. Fresh mein woh baat nahi hoti. Dahi Bina faite daalein aur brown onion ko haath se crush ke Dale. Korma danedar banega.
Surkh lal mirch ki jagah peeli mirch use karein.
Aap shayad bakre ka gosht nahi use kar rhe hain. Mujhe toh bhed ka lag rha tha. Bhunai humesha high par kariye. (Purane khansame humesha mutton aur kachche pyaaz ki bhunai saath kartein hai. Isliye half kachcha pyaaz half barista ka proportion sahi rehta hai)
Sarso ka tel wala suggestion bahut badiya hai! Mein bhi mutton sarso mein hi banata hu.
Halaki Aaj kal purani Dilli Wale restaurants zyada tar dalda ya refined use kartein hai.
But all time fav .... Jo na kar paye ma ya pyo woh kare Desi ghyo.

Sir don't like mustard oil ,if I don't use so what quantity I use regular oil
Salam alaikum bhai would appreciate it if you could clarify two things:
1) Which brand of mustard oil is relatively pure? It seems most mass market branded mustard oils being sold in India and Pakistan are heavily adulterated.
2) Whole spices used in these quantities are very hard to separate once they’re added to the dish and make it hard to chew each morsel. Will the taste be significantly altered if I grind everything?

Cream...In korma sir g??? in simple words thats not authentic....but if ur doing modified " shahi" korma than cream would come....

Exactly. Ghee is healthy. And these traditional recipes wont have its authentic taste if they r not cooked in desi ghee.
