A word on siphoning:
Siphoning is caused by temperature fluctuations. Now, in canning there will ALWAYS be temperature fluctuations. The very nature of pressure canning is to heat your jars to the point that pressure is created. this creates a vacuum. that is the only way to get your water above the boiling point. Your job is to control that heat fluctuation so that only air is forced out the jars, not liquid.
Any sudden pressure change during the canning process can cause water to gush out of your jars. That is siphoning. Changing the temperature changes the pressure differential between the product inside the jars and the water and atmosphere outside the jars. Here are some ways to prevent this...
1. Match your jar, canner and product temperature as much as possible.
2. After the lid is on bring up the temp slowly and allow a full 10 minutes of venting before you drop the weight.
3. When you reach proper pressure, lower the burner temp as low as you can while maintaining pressure. Find the "sweet spot". This will take some practice. Try canning some water to find it without risking food spoilage.
4. When canning time is up wait 5-10 minutes after pressure has reached zero before removing the weight. Wait 5-10 minutes more before removing the lid and then another 5-10 minutes before removing the jars.
There are other factors. Proper head space is essential. Sometimes in raw pack there is air trapped in the product, so you have a lowering of water level, but that is not siphoning, and it won't be much.

To reassure new canners who may not be able to budget in an AA, honestly, a Presto and AA canners have the exact same end results. Set jars processed in each one next to each other and you won’t know which jar was done in which canner, they have the same with taste and texture of the food processed in both canners. I always suggest to those with budget limits to get a Presto and then buy as many jars and lids as they can, especially with the shortages we have experienced in the last few years (Superb lids are excellent, heavy duty, and made in the USA!).
Prestos are also passed down generations.
I have 3 AA and 2 Prestos and also don’t find the AA “no seal” to be any advantage at all. The AA still require the rims to be greased up or the lid won’t seal and I find the lids sometimes finicky and just more work to do all the tightening than it is to just put on the Presto. I have a 25+ year old Presto still going strong with the original seal, but I do have extra seals on hand if needed.
The weight of the AA’s is now a actual concern as I get older (I hate to admit that! 😉).
With all that considered, I feel it’s really just personal preference on which canner a person chooses. I use my Prestos way more than the AA, they are just easier to use. I also now use only the weighted regulators (jiggler) and no babysitting the gauge. This can be doen with both the AA and Presto. The presto has the 3 piece weight.
But for big canning batches, the AA is the way to go. They make some LARGE canners, ours are too big to set of the stove so must be used outside on a propane burner. It sure is nice to do big batches all at once when you need to.
Thank you for your video, it’s so nice to have ready made meals on the shelf. I thinks it’s especially important these days as weather and other issues seem to be happening more frequently. It’s an important skill to share with others.
Great information! Thank you for taking the time to share! I’ll pin this comment so others are sure to see it ☺️
I have the Instant Pot Max and absolutely LOVE it! I have pressured canned for years in the presto canner and what a pain it was. With the IP Max there is hardly any fuss! However, it only does pints, which for me and my husband is perfect.
I love my Presto canner. I got it at a flea market and just had to buy a new rubber gasket and got a weighted gauge. Cost about half of what it would have new.
Great info. We have 2 Presto canners, both passed down. Had to buy a new weight but only because we lost the old one. It will show up sometime LOL
After purchasing two Prestos, both of which still work well, I got fed up with replacing gaskets, often even after testing before a new canning session when they appeared to be okay and then began spewing steam when the actual canning session began. I donated both to charity and purchased an All American ending that anxiety permanently. When I purchased the first Presto I had never even heard of the All American but if I had, I think I would have done more research and just bit the bullet and saved up for it. This is my canner for life; no electronics to fail at any point and no gaskets to fail at the moment they are needed.
Also, I purchased the 930 allowing me to can 14 quarts at a time saving tons of extra work and time on large batch canning. No Presto or other electronic device will handle a double rack of quarts. Time is money and life is short, so cutting a 6 hour process in half is significant, leaving time to perform other duties elsewhere.
I find that when canning anything that's even a little bit greasy, using vodka to clean the rims works better than vinegar. I've had far less siphoning issues since reading this tip in the comments on another canning video a couple years ago. I highly recommend it!
How interestine!
Thank you for sharing your tip!
Great idea!!
Thanks for the information
Great tip!
This was by far one of the best videos on canning, especially for a beginner, as you not only demonstrated each step clearly, you explained the purpose of each step, ie, why headspace is important, wiping the rims, etc. I began my pressure canner journey spring of last year. Honestly folks, just read your approved Ball or USDA guides carefully, watch a video such as this one, have all of your supplies clean and ready and take your time. Don't rush or skip steps. This will build your confidence and ensure you have safe food for you and your family. Plus, it is a real good feeling of accomplishment to see the resulsts of your work all lined up on the shelf! God bless everyone.
Finally someone explains & shows the venting to gauge proceedure! Thank you
I'm a beginner and I keep looking for videos that tell me whether or not I can cann beef and chicken at the same time. THANK YOU for answering this question. God bless you!
Separate jars in The same canner load? You can, but if one gets processed for a longer time you must process both at the longer time.
I love your idea of pressure canning jars of water first until the "sweet spot" is found. I have had my pressure canner for over a year but have been too intimated to dive in. I will use this tip in order to get comfortable with my canner first! Great video, thanks!
Awesome! I’m so glad it was helpful! As soon as you get that confidence there will be no stopping you! You can do it 🤍☺️
Plus, you're supposed to have a gallon of water, per person, in a household, per day, stored up; in case of an emergency, where you lose electric, for several days, and your water pump runs on electric, or for emergencies that contaminate the ground water we drink, for those on a well.
Same here. My son gifted me a Presto at Christmas and I have yet to do anything except taken out of the Box. I'm glad I am not alone, and it is great idea to practice this way. I'm glad I am not alone, and it is great idea to practice this way.
I did dry beans. I thought that would be good to start with and if it failed I could freeze them.
There are so many unsafe canning videos being posted on You Tube, it's refreshing to see the care you take to explain the process accurately. Tasty looking meals, too! 😊
Thank you ☺️❤️
I do however think it's a good idea to ask oneself, safe according to who? The USDA or actual science? The WORLD outside of the US can things very differently to USDA "approved" recipes and methods and are tested as safe too. And the USDA have been known to be wrong at times due to letting students perform the testing. And haven't ran any tests since the 70's. A lot has happened since, and there's European source's that test today. So if safety is a priority (which it of course should be) I'd update my scientific knowledge and contemporary tests elsewhere and not just the USDA's old recommendations. It's not rebel at all to keep updated.
Totally agree about too many unsafe canning videos. I just hope newcomers realize it.
@@Caprifool 👏👏👏👏👏
I watch several women from Eastern Europe, Russia, India, Turkey ECT and have canned many items in their ways and have had no problems. I like the idea of having multiple ways of preserving food these days.
Made all 4 of these recipes one day last week. They turned out beautiful. Doing a freezer clean out as half a beef coming soon. Really great and easy recipes. Can't wait for more!
I really like the idea of making multiple recipes in one canner load. We can try it to see if we like it, but this will also allow me to quickly stock my parents’ pantry quickly with a variety of ready to eat meals. Such a wonderful idea!
Definitely subscribing. Thanks so much for the great ideas.
Thank you! Those were my thoughts too, one load of small batches to make sure we enjoy them before running bigger batches ☺️
@@seedandsparrowhomestead Keep the canning videos coming!
Will do!
I remember those days of helping the folks. Kudos to you for helping your parents.
@@dustyflats3832 Thank you!
You are correct about add the spices later when you open jar. I found that out with cayenne added to tomato bisque soup. Yikes it got hot.
I love my electric Presto pressure/water bath canner. I don’t do huge batches and this is perfect for us.
I had the microwave over the stove and out it went- always in the way.
Love the idea of make ahead meals! Thank you.
Currently into soup bricks for freezer. When summer is busy those quick meals are handy! Or anytime as sometimes cooking is a drag for me anyways.
Very good how you showed ALL the important processes before adding lid. Good Job!🎉
One thing I want to mention about cleaning lids. Do not scratch the coating as it will cause the lid to corrode.
Nice that you mentioned how you will use the end product.
I’ve seen siphoning on other canned goods, it must be the length of time in those type of canners. I had a bit on one batch of tomatoes in my electric, but I think I should have waited to remove them a bit longer even though there is a built in cool down time.
I found out that garlic becomes amplified also in canning and definitely in freezing meals. So I do add chilies, peppers, black pepper, capers, etc at half batch in the jar and then add more when I dump it into a pan. I just never know how hot or strong certain spices will get in the canning process. It also depends if the spice is fat soluble or water soluble - look up what spices are fat soluble if you have a more fat in the recipe or are using a fatty cut of meat.
I have the NESCO electric canners and it is perfect for me. A lot of ladies as they get older have a hard time making large batches and hard to lug around a giant metal canner in the stove.
Thanks for such clear instructions. I was taught by someone who did not always follow safe procedures and
guidelines, but I am now a by the book canner.
Neither myself nor the family who taught me ever had any problems, but I feel much more confident when I follow tested methods and recipies.

This was the perfect pressure canning video to teach anyone how to pressure can. Having ready meals on the pantry shelf is 1 of my favorite things!
Thank you! I appreciate that 🤍☺️ aren’t they great?!
I also have been doing this for a long time. I work a ton of hours and feel there's nothing like pulling a healthy, homemade meal from the pantry and having it ready in a short amount of time. Thank you for this!
Right?! It’s the best. Thanks so much for watching! ❤️
Thank you for explaining the REASON for head space. It makes sense, but it helps to hear the WHY.
Absolutely! I love knowing the "whys" :)
My pantry of meal jars is almost empty. Thanks for the inspiration and motivation to start canning again!
Thanks for watching! Happy canning ❤️
That kitchen hits me right in the nostalgia
So clear on every step! Wish I'd had something similar when I was starting out!
Thanks! I’m definitely going to try these.
Meals look yummy. I can’t wait to try these. It is so nice to have meals on the shelf ready to heat and eat!
This video popped up as a suggestion and I am so glad it did! I have a new (well, I bought it 2 years ago as a "backup" for the one I had) AA 921 still in the box. The pressure canner that I have been using is no longer made and the gasket is stretched and dried out. Part of that *could be that I let it sit in the box for 5 years because I was intimidated by it! But after watching a couple of canning videos, I took the plunge and never looked back! I chose the AA 921 because so many you tubers back then seemed to prefer them. Plus, they were so much cheaper and easier to find. Anyway, I plan on unboxing it here in the next few days so I can can some "on sale" chicken breasts and beef roasts. So, this video was perfect timing! Thank you for sharing your recipes. New subscriber.
Yay! I’m so glad it was helpful. Thankful your here ☺️ happy canning ❤️
Thank you for always following SAFE and TESTED recipes..
Absolutely! Thank you for watching and commenting 🤍☺️

I’ve canned garden produce for years but never prepared meals. Love this idea. I’ve used Presto canner for years with no problems. I also got a canning book from our county extension office. The are a great resource.
Having ingredients canned up is wonderful, meals in jars are more so.
Excellent tut! Thank you so much! I will go now to make these.
Thank you, enjoy!

Outstanding-Thank you ♥️
Patricia
I used presto pressure cooker for yrs. I have an all american 921 for the last ten yrs. I love it! I have been canning for 45 yrs and I still follow safe canning recipes.
exellent point about the spices in pressure canning, especially sage
Thanks for sharing your experiences! It's making me less nervous about trying pressure canning for myself. I'm going to give it a go when I get my new Presto pressure canner. Can't wait! Also, I love that you're in Pennsylvania Dutch Country! We aren't PA Dutch or Mennonite, but we do have family in York so seeing these folks and their farms was part of my growing up. Have a great summer!
Thank you, Kelsey! Wonderful video. 💛
Thanks sweet friend ♥
Great video! Very thorough!
Thank you Heather! ☺️
great video showing the correct process for canning meat. Thank you
I am planning to can a few of these meals in a jar this weekend, so it was nice to watch a video about doing just that. Getting back into canning after years of not doing any canning,I am pretty rusty, you covered all the things that I was trying to refresh my old memory. Thank you,
Excellent video and very informative. I love how you explain everything. I am new to pressure canning and have watched MANY videos over the last 4 months. Thank you very much for sharing your knowledge!!
This is encouraging! Whenever they do the challenge to put things up, I think of easy meals as timesavers. These look great!
Thank you! I’m glad it was encouraging, enjoy! 🤍☺️

Hi, there is nothing better than meals in a jar. I love them. Great video ❄️🇨🇦❄️
Thank you ☺️
Watching you as I pressure can potatoes this morning. It's one of our most commonly used home canned food.
I have the 921. My microwave also prevents me from a taller canner.
YES! We love canned potatoes! I hope you have a lovely weekend! Thanks for watching 🤍☺️
Very well done! Thank you
Thank you!
I'm going to try this.
I love this! It helped making more space in my freezer. They are in the canner now. Cant wait to try them! 4 meals in one canning session. WOW! Thank you!

Wonderful canning demo.

Right?! I love that it saves room in my freezer! Enjoy 🤍☺️
Hi from Nova Scotia, Canada. I have a Presto which I have had for several years, use it all the time and wouldn't be without it. Love your videos btw.
19:30 - Best explanation of headspace and why it's so important I've heard. Shocks me all the canning people that don't follow headspace guidelines. Keep up the great work. Blessings!!
I have the 941 and love it.
Isn’t it great?! So glad I made the investment ☺️
Wonderful!
Thanks Cheryl!
Great job,and yes even those who have canned for many years still get siphoning once and a while. Think I'm going to implement your ingredients for my next go around of pork .
First time viewer and did enjoy it.
Thanks so much Claudia! ❤️
Great video! Love the recipes! Subscribed!

Hi all the way from South Africa...thank you so much for such an informative video
You are so welcome! Thank you from Pennsylvania ❤️
I absolutely love your channel! Your videos are so well thought out, technically, creatively, and artistically. I've learned so much from you already.
Love the meals in a jar. Too many canning recipes are condiments.
You've got this!
Aw Carol thank you so much for these kind and encouraging words. They are much appreciated. I’m so glad my videos have been helpful! Thank you for being here ❤️
2 comments: 1) you DO Pronounce Worcestershire correctly & 2) Trick to get Tomato 🍅 Paste out completely & easily…. Open 1St side & then, turn can upside-down over your pot or bowl. Use can opener to open other side completely. The tomato paste will TOTALLY SLIDE OUT with NO MESS.
My Granny (Italian Granny) showed me this MAGIC!
Good video; I’m buying a Pressure Cooker today…. You convinced me.
I am a newbie..I am so very happy that you do it the ball safe way.. today you came across and I am so glad I checked your content out.. looking forward to more..

And I like your outfit, looks so comfy😃
Thank you Wendy! It’s the best having canned meals on the shelf! Thanks for being here ❤️
Great video, I'm looking at the same canner, so it was nice to see a video with the same canner.
Glad it was helpful! Thank you for watching ❤️
What a wonderful video! You have inspired me! It's just me and my husband now, so having quick and healthy meals on the shelf really appeals to me!! God bless you!! Thanks for sharing so beautifully and giving such great tips!
Thank you so much! Enjoy ❤️
I loved this video, very well done I especially like your emphasis on food safety I wish I would have watched this video before I started canning.
Great video; thanks sharing!
Thank you Wendy! I appreciate you watching and commenting! Blessings ☺️🤍
Thank you this is a great video. Just got a pressure canner for my bday and the Ball book. You did a great job explaining things to a beginner. I also think I’ll try these recipes. Cheers
Thank you so much, Cindy! I hope you love pressure canning! ❤️
Thank you for showing us the different recipes. I would definitely do 7 quart jars of all the same one recipe.
We jus had a bad ice storm and lost power! I wish I would have had easy meals in my pantry, and what a great idea for warm weather fast meals, I do not have this ball book, love the idea of canning three meals at once! Great Job
Oh no! Hopefully every is back to normal. These meals really do come in handy!
Thank you for your instruction and advise concerning pressure canning. I have done water bath canning for years, but have yet to purchase a pressure canner. Love your recipes.
Thank you so much! ❤️
Hey! This is my first time watching you! Great job Mama!!! Thank you for the wonderful ideas! I can in a Presto but I've not done multiple recipes before! What a great idea!!! 👍 God bless you and I look forward to seeing more!! 🙏🥰
You are so welcome! Thanks for being here ❤️
Great video! Thank you for your clear communication. The only thing I didn't hear you mention is that everyone needs to know their elevation to know their correct canning pressure. You stated that you use 10 psi, and mine is 12 psi because of my location. You made quick work of that!
RIP to the cover…lol. Bless any two-year-old who wants a BIG book. (From a retired teacher…)
I did enjoy your show
Thank you ❤️❤️❤️
Thank you for sharing. I am going to get the Ball canning book. So far have been canning straight meat to save from freezer damage and bone broth. Plan on doing some strawberry jam this week also. I definitely will have to give some of these meals a try.
Awesome! Thank you ❤️
Great video - please make more of these
Thanks, will do!🤍
Great video! I agree with the rest - I am in the process of switching from Presto to American Canner. This is by far, the best instructional video on how to use the American Canner! I thank you so very much! Trying water this weekend!
Thank you, Tanya! I appreciate that ☺️ I’m glad it was helpful, happy canning!
Love It! Just found your channel and giving a fellow homesteader a sub!
Those look like great recipes! I haven't done much prepared meal canning so far, but I think I need to give it a try. RE: the siphoning -- When I open the canner, I usually prop the lid over it so that it cools off a little more slowly, and wait more like 20-30 minutes or more before taking the jars out. It seems to minimize the siphoning to give the cool-down process a bit longer.
Yes! Great tip, thank you!
I have my Grandmother's All American I use all the time and recently bought a Presto so I can have two going at once. You're right, the AA is a tank!!
It’s my dream to have two! What a blessing ❤️
Great video!!!
Thanks Angela!
I have done the same thing with canning multiple different like-type items when I just have small batches and they all have the same canning pressure and time. Otherwise, these would take forever to get done in separate batches. Great job and excellent explanations for the newbies!
I love your recipes. cared TO DEATH of pressure canning though. LOVE the info on the new Ball book. Will be ordering one
Thank you! It can seem scary, I assure you it’s really not. You can do it! ❤️
The All American canner is great, it’s made in Manitowoc Wisconsin
Nice job!👍
Thank you! ❤️
Very nice!
thank you!
Hi, thanks for this. Just subbed from Canada 🇨🇦. My mom taught me how to use a basic pressure cooker so i had one for a few yrs. But now watching a few channels on water canning and pressure canning i want to do same as a woman in her late 60s. But im a bit timid. And i dont have much room. And i have brain fog .
What a great video! I've had me nesco for over a year and have yet to use it...
When I looked up my elevation, I'm right in border line between the 2 weights, sinit sure what to do 😐
Good job!
Thank you, Caroline!
Thank you!
❤️
thank you❤
Sure thing! Thank you 🤍
White wine for drinking on the job...always a winner 😆
