      Back in the 50s or 60s, my mom got a bad ear infection. The Dr told her to use the same to get rid of it abs to use a bit in each ear every time she washed her hair! It's awesome!!!😊

    I am 76 years old and never heard of debubbleing or measuring head space either. You keep on being you. You are one of the hardest working women I have ever seen and that is intimidating to some people. I love your teaching, you go girl.

      @jr8627 I raised my kids on the farm too, they always complained about the milk at school tasting spoiled. Raw milk never hurt anyone I knew, including the 3 dairy farmers up the road. Their families all drank raw milk too.

      Oh yes, you should debubble jars. Bacteria can build up in the bubbles. Shaking the jars is also a nono... I have been canning 50 years. I can count on 1 hand how many jars I've lost to bad canning .

    I am a emergency room RN who was attacked at work and now have a head injury. I started watching your videos a few months ago as I am home a lot. I have been able to make a few things from your videos after watching it a few times. I want to thank you. Because of your teaching I have been able to learn new skills that my family really enjoy ( especially sourdough bread)
    I’m going to give you some advice… don’t listen to negative people. They will always have an opinion about everything. Keep to the way you learned how to do things. Your education was an intense degree in home economics. People travel out of there way to amish and Mennonite country just to taste and buy the products that you make on your videos. So keep doing what your doing. I watch every video and I thank God that you share your knowledge with us. God bless you😊

      Your video is an absolute blessing❤ I have been canning for a while, but the issue of botulism has always been in the back of my head. I know that people are scared into not canning so to not be prepared. In the last week there has been a debate on one of my groups about canning a curry pasta salad, it contains sugar, curry, salt, vinegar and store bought ketchup. I feel there is so many preservatives in there it should last for years if not thickened. Please give some insight on pasta.

    Ruthann, I am. Not Mennonite but my grandma who raised me, canned exactly the way you do. She was born in Aug 1900. There was only waterbath canning when she grew up. Even meat was canned for winter use. We never boiled the lids either and lids were always used more than once. During the depression years they only had rubber rings. Anything in boiling water will be sterilized after 10 minutes.
    Don't listen to people that have never had to go without money and convenience. They will always be negative. You teach people how to survive outside the grocery store. That is important with the way the world is going. God bless you.

    I’m 50 and my great grandmother was Mennonite, she was an incredible strong woman. When I was a little girl in Girl Scouts we went the nursing home in our small town and I told my leaders my great grandmother worked there, I was hoping to see her working when I was there visiting. My troop leader told me “Sweetie you mean your great grandmother lives here, she doesn’t work here” We ended up seeing her there and yes she did work there! She was amazing, she was taking care of people a lot younger than her. She lived simply, worked hard and lived a very long life. I just found your channel and I love it bring me back to my childhood and helping great grandma Cook. Thank you for teaching the “old ways”

    There's a difference between education and wisdom. I'll take wisdom every time. I know a lot of educated people who are ignorant. Thank you so much for sharing what you know. It's invaluable to someone like me new to canning. I certainly consider the FDA guidelines, but I also use common sense. And as you said, everybody has to use do what they're most comfortable with. You are an excellent teacher. Keep teaching us!

      Exactly. In America, Public school Education is mostly indoctrination, and has little to do with applicable intelligence or wisdom. They teach you how to follow suit, submit to authority, and don’t think for yourself or ask too many questions, or you’ll be labeled rebellious or ostracized. This woman is actually intelligent because she thinks critically for herself and has education that she can apply to prosper her family as God has instructed his children! Whomever said she sounded “uneducated”, was an individual with a weak ego who must attempt to invalidate others in order to feel valid themselves. The fact that this beautiful lady responded to their rudeness with critical thoughtfulness and graciousness, just even further proves her brilliance and what an absolute class act she is! I just Love her response to that, her willingness to teach, and her warm energy. I’ve never watched her before, but I definitely am a new subscriber today! 😊❤️🤗

      Respectfully, I'm also uneducated.
      I'm 53. I have all of 6 grade 9 credits. Went to work full time at 16 at a mom and pop grocery store..
      Been a multi award winning homebuilder, been part of award winning, cityscape changing infrastructure projects and part of multi billion dollar contruction projects. Highly involved in the high-school builders internship program.
      Hired and fired MANY highly educated people.
      Your attitude determines your attitude.

    FINALLY! I find someone who actually gets it. My Mom and me always water bathed everything out of the orchard and the garden. Then, as deer season and salmon season commenced, we WATER BATHED meat as well!! I believe the Slavic's do it this way and we never got sick a day in my 61 years and neither did any of my family. You are super skilled and thank you for sharing your wisdom.

    I love how you say you are "skilled". I have learned more from the 40 years of dairy farming and gardening than any book could teach me. People frowned at the idea of us raising our family on the farm using raw milk. We raised our own chickens and beef. My boys never had any allergies and I truly believe it's because of the home grown foods and not the processed food from the store.

      I also grew up on a farm. Why would we pasteurize our milk? It went from the cow to the separator then to the refrigerator. Sometimes people just follow rules without ever using their brains.

    Wow! My Dad had an eighth grade education and was awarded when he redesigned the guns for battle ships. Drove without a license until he moved to Florida as a 70 year old and had to test for it.
    Skills of all kind are lacking in today's world and

      I can’t believe anyone has called this wonderfully knowledgeable lady “uneducated.” I have over a decade of formal education more than her and I am learning so much from this video alone. I have friends who are professors and very highly compensated professionals/experts in venerated fields, and very few of them will survive without food delivery apps or the complex telecommunications networks they rely on daily. I value the info she is sharing here, because it’s essential information with hundreds of years of tested and proven knowledge developed by those who came before us.
      The true fools are those who cannot appreciate the diverse skill sets of others.

      Same. My Grandfather had to join the workforce in the 5th grade to provide for the family. He was taken under the wing by an architect and became one himself. He was very skilled with very little education.

    Hello Ruthann, I'm Jacks wife, we are in our 70's. I have canned all my life. When I was young and worked in a hospital with a young Mennonite man who was doing his 2 years of service as there was the draft and the Viet Nam war at the time. He was the kindest person and had good moral values. Being an orphan, I was working and paying for schooling myself. Canning helped me achieve my degrees without going hungry. Good values, kindness, helping others are wonderful no matter who or what you are. Education and money are not of great value in the long run. Kindness and helping people will be very needed in the way our country is going. So just bless the hearts of the people who are rude and say a prayer for them. Bless you for helping and teaching people who didn't have moms and grandmas to teach them. I have found that people who say rude things to make themselves feel better or superior end up in court; my area of work and they don't realize they did it to themselves!

    I grew up canning the way you did. My mom and grandma fed our family with food canned from our garden. Food up to the neck of the jar. No water over the top of the jar. I knew about botulism but it was never a problem for us or anybody we knew. Im so glad i found you. Subscribing and following. I look forward to more. Yes to the gov't wanting us unhealthy and dependent. Edited to say: you do NOT sound uneducated. You communicate better than 80 percent of youtubers. I have three college degrees, and I admire what you are doing SO MUCH. Thank you for what you are teaching.

      education is learning skills for a job. that is all it is. doesn t make you smarter or wiser. being able to can and feed your family for years is quite a skill! it s smart and wise!

I am "educated" but I recognize that the "education" isn't a replacement of having skills, especially as inflation and poor quality food continue to be rampant in our culture. Skills are becoming increasingly important and I'm grateful for people like you willing to share with us regardless of the people who think their education is better than skills.

People can be rude to me about this comment but yesterday when I waterbathed canned stewed tomatoes I did the canning exactly like you show it done it works so much better than the water over the jars.       I agree! I purposely did not have internet in my house until my son graduated from highschool. I also involved him I'm our meal planning and making. We live in an apartment so most of our food is from the store... but we both would love to homestead

    I'm a little late responding to this video and as you were winding up you apologized for the length of the video. All I kept thinking was this video is just not long enough I could sit here and watch and listen to you for hours and hours out of the day. You have helped me so much I was born and raised in New York City where nobody can and nobody grew anything and I am now in Florida when covid hit and I am desperate to put back food so I have hounded every video I could find on canning I've gotten two canners, pressure canners, and a whole host of other paraphernalia. You have got to have the most absolutely interesting and informative CZcams channel that ever existed on canning. I equate you with Chef Jean-Pierre as the Primo video on cooking. I watch so many of your videos but I don't get them all and I don't get them in the proper order but I guess what's really important is I get what I need when it's needed. I saw some comments that apparently somebody was disparaging you and I beseech you to ignore them. Do you have no idea how valuable your input and information and education and knowledge has been to those of us who are trying to get one leg up

    You are an educator. Unfortunately those “groomed” by formal education aren’t educated in generational knowledge and don’t recognize how valuable it is. Thank you for teaching this 65 yr old a few tricks. My Mom and Sisters canned enough for me, my whole life. I literally never had to purchase a can of tomatoes until they passed.     Thank you. My grandmother was born in 1887. I remember her sewing without ever using a pattern. She could do everything. Hunt, garden, cook, drive, and she was a post mistress. I wish I had paid more attention when she canned . The old ways are disappearing, but need to be brought back and passed along! Thank you! Stay strong! I TRY to listen and take all the hints anyone wants to pass along. I may have to watch a few times before I even try.       If you can follow a recipe you can do this. Sometimes things don't seal, even for experienced canner. You will know when it is bad, for the most all of the time.

    I just discovered sourdough and as a result I landed on one of your videos. Let me just say I'm 60 years old and I want to be you when I grow up. I came for the sourdough but having never canned a day in my life yet watching THIS video, I stayed because you are amazing. The knowledge is one thing, but your pure spirit, the way your family radiates love, your kindhearted children, and the joy you take in the work you do makes you someone worth watching. I'm sorry people can be so careless with their words but whether I ever milk a cow or make a wheel of cheese, I will tune in to see what's new on the Zimmerman homestead as long as you make content!

      I just made her zucchini pineapple pieces. I live alone, so I only made 3 little jars, but it is something! Her cracker recipe is great. Oh, and I did 4 jars of dry pack potatoes. It adds up. Little by little. I am 79. Takes me longer......

    Oh. My. Goodness. I came across your channel totally out of the blue. Boy, am l ever so glad, Jesus led me to you! I do water bath only. I like this method, & I’m a “small batch canner”. I’m a city dweller in a small apt. I’m still working full time (I’m almost 67). So my canning projects are done on the weekends only. Ever since C hit in 2019-2020, I’ve questioned the government on EVERYTHING. For that reason, I’ve become your newest subscriber. You’re such a blessing. Ty from the bottom of my heart.❤❤❤

    The world needs more people like you--skilled, fearless caretakers and good stewards of all that God has blessed us with. I have had my own personal struggle with "FDA safe canning rules" as I've experimented with canning and preserving over the past few years. (As a nurse of 15 years, I tend to doubt anything 3-letter government organizations have to say about health and safety...most of it is fear-mongering nonsense). Thank you for sharing the time-proven, safe, traditional ways of canning and preserving practiced by numerous previous generations. May God richly bless and prosper you and your family!

    Ruthann, I am a german 😊 in Germany and grew up in a Christian household with grandparents. They thought us three sisters the way of canning you are doing. We grew up with fresh farmers milk from the village. Never got sick from it. Healthy cows in healthy pastures. What you are doing for your family and teaching us is priceless and a blessing.     You are so right about using stock pots with heavy bottoms. My enamel pots never lasted more than two years and ended up in the garden as flowerpots. I bought some cake racks that fit nicely. As the decades went by, the lids we bought had less rubber on them, and now the label says "good for 18 months" on them. Who needs that? So I bought some rubber rings that can be used up to 8 times, so it works out much cheaper and reuse my lids with them. And by the way, my Mennonite father only went to school for three years, but he eventually spoke three languages fluently, worked at a dairy in his 20's, then came to Canada and worked as a logger, bricklayer and welder, and had a small farm. Uneducated? Hardly.

    Dear Heart! I have 10 years of education which includes a doctorate. Let me tell you, I never learned anything more worthwhile than my search into homesteading and plain and simple common sense!
    You ARE educated and educated in life skills that help us to survive. Those who can't see that and it's benefit, probably can't keep themselves alive in a crisis! Of course, there will be some who have an education in both areas, but there are few.
    Take it from an educated AND skill ed old woman...YOU ARE EDUCATED! Don't believe anything else! May the Father bless you. Dear!

    My mother and grandmother never canned, and neither learned much about cooking or baking either. They said they just weren't meant for the kitchen and I grew up believing that about myself too. Since I've gotten engaged I've been trying to learn how to be more comfortable and useful in the kitchen. I had a friend whose tomatoes over produced this year and they gave me some- now I have a handful of cans of homemade pasta sauce and a few jars of salsa! I know it's just a start but I couldn't be prouder! Thank you for giving women like me a chance to learn these skills from the older generation when we wouldn't have been able to before!!

    Btw maybe your mother and grandmother did hot water bath canning the German way. In Germany the traditional German jar company Weck advises in their official canning book to not fully cover the jars. Of course you can cover them with water, but it suffices to cover them 3/4. Never did do us any harm 😉

      ​@@RuthannzimmThe German WECK-company advises very well-researched & safe water bath canning procedures for over 120years in Germany & Europe!
      However, as they also approve the stacking of their all-glass containers (jar & lid) inside the water bath (= fully submersing the bottom layer of jars), submersing itself is no problem as such. It is just not needed, but also no problem.

    I'm 70 plus years, and live in australia,and canning isn't something my family has never done. I find it very interesting. My husband left school in 5th grade and worked on the family farm in sicily. Academics do not define who you are. Life skills are so important. Live your channel.

    Ruth Ann, you are a breath of fresh air! I am 67 and have been canning since I was 24. I had no one to teach me so I went by the canning books that I had found. I love your channel! I am so glad that I found it. I love learning how your family canned foods! So interesting. I believe that because of canning our own food, this is why my husband and I are so healthy at our age.     There are some things that I question but I do not ever down grade anyone for their ways. Some things I do in canning is the way my grandmothers taught me and are not approved by “the man”. I have started water bathing like you do and I’m loving it. It makes sense. I reuse lids as well. I even use an Instant Pot to can small amounts. I can meat and low acid foods in it. I enjoy your videos. Keep them coming. 😊

    The information you share is very appreciated. I'm a nurse and my lovely hillbilly momma with her 8th grade education was one of the most intelligent woman associated with my life. I believe common sense cannot be taught, you either have it or you don't and it has nothing to do with the amount of education someone has.     In Europe there are generally 2 types of preserving jars = 1 is kilner, 2nd is Weck jars. No pressure canning in hundreds of countries.

    Great video. I have learned so much from you. Growing up in Michigan, my grandmother canned but my mother did not. 🤷‍♂️. I have now canned tomatoes, my tomato sauce and the pineapple zucchini (❤). I think you are genuine and so relatable. On a side note, I have a master’s degree. That only means I was trainable, followed through to completion and checked a box for corporate upward mobility. You, Ruth Ann are street smart👍

Watching you I have about got my nerve up to try cheese making. My problem now is no place to purchase raw milk. I was buying but then farmer quit selling. So I can’t find any other options to buy. But please don’t stop doing videos, because you do have a lot of people learning so much from you. Thankyou for all your time and effort you put into making videos. You are such a blessing.

      If I remember correctly she mentions in her cheese making video that you can use any type of milk other than the ultra pasteurized milk (the kind you buy in tetra packs) for making cheese.

    You never sound uneducated to me. You have something that most people do not have these days: common sense. You are raising wonderful children who will know how to take care of themselves and not be a burden to society and would never dream of being. What they teach in high school these days, for the most part is not good. And that is putting it kindly. You know how to think for yourself and your children are able to do the same.     You're highly intelligent. The difference is they don't understand that you know canning based on 100's of years of experience/education which lives intuitively in you because of how you were raised. I'm an environmental research biologist/botanist. People in academia make me furious. I'm in Alabama & our canning methods are like yours.
    My neighbors that are hunters & farmers have more knowledge & a complete understanding of plants, animals & the environment than my colleagues with Phd's. I'd always tell them, "just because someone isn't using OUR fancy terms doesn't mean they don't know what they're talking about & they probably know more than you."

    What a fabulous video! I am a true novice to canning, uncomfortable with the process because of the admonitions from some of my friends and family about sterilization of equipment, how to fill the jars, and so on. Your simple and easily understood explanations of the how's and why's of your "old Mennonite" style of canning were spot on. I feel comfortable enough now to begin my first year of canning a few things from my garden. I have subscribed to your CZcams channel and hope to enjoy more of your presentations as I navigate the homesteading learning curve.
    Now, for those not-so-kind comments you have received from some viewers about your methods or "level of education", I have this to say...IGNORE THEM ALL!!!
    I am closing in on 70 years of life, with a professional experiences behind me that have included service in Army Intelligence, government positions in intelligence analysis, and teaching at the college/university level -- English, business communications (including video presentations!) and writing. You are right on the money with your philosophy that education and skill (and/or lack thereof) are not the same. I am highly educated, and very intelligent in many fields; but your experience, knowledge and skill in the field you have chosen far surpass mine. I can "sound educated" with the best of them in my own fields of endeavor, but I'm an idiot when it comes to matters of preservation and the world of homesteading.
    Keep doing what you are doing. We 'Tube-ers' out here need more of your sound advice and sharing of time-tested methods. No, we don't have to follow through with everything you may present, for reasons of our own. But refusing to listen or consider alternative ideas simply because we may tend to agree or foster another line of thinking is just plain "uneducated". And, frankly, we have the choice to listen, walk away, or just change the channel. That is what we do in this wonderful country of ours!

      I'm 63 and just started canning this year. I'm using my insta pot it only cans 4 pints at a time but I bought a # 10 can of tomato sauce and a #10 can of pizza sauce and canned them, that may be cheating but I have them on the shelf and I got some practice while learning and watching videos. Now I have bought butternut squash, pie pumpkins and potatoes, I've made soup and chili. Just 4 jars at a time but now I have several cases of food put up that can easily last a year. Good luck on your canning journey.

    I grew up on a dairy farm. My father had an eighth grade education. I went on in school to receive two Master's degrees.
    Education has absolutely nothing to do with living skills. It breaks my heart to hear that you have been exposed to this abuse.
    You are a wise and skilled woman, who can teach me and countless others to live a good and sustainable life.

    As a retired public elementary school teacher who didn’t teach when my own children were little but stayed home with them, I have to say that skills are every bit as important-if not more important-than book learning. And I incorporated a lot of practical common sense learning into my classrooms.
    I canned produce, used raw milk, and had chickens and a garden when my kids were growing up and even after they left home. We ate wild meat, too, and we raised 4-H and meat hogs.
    Now that I’m retired, I want to get back to home canning again. One summer when my son was 2 1/2 and my daughter was four weeks old, I canned 35-40 quarts of tomatoes in one day because my tomatoes were all ready at once. (My kids are now 46, 44, and 37.)I can still do this!!!

      Your explanation of the canning process is excellent. Thank you for taking the time to make this video. I'm sure many will benefit from it. I learned to can from my grandma when I was 17, decades ago. She mainly waterbathed. All of my canning has been waterbathing. I've done roast, hamburger, chicken, all for 3 hours.       I keep a bathroom fan running in my basement to prevent moisture damage. Made a huge difference. Also, I learned the hard way that washing your jars of food after canning prevents rusting and unsealing. It takes time but is necessary in my opinion. Your tips and advice are a valuable resource. Especially from someone who is educated. 😂 Keep up the great work.

    This is gold! Our culture puts value in all the wrong things. Education is valued above knowledge and conforming to messages from those in positions of control is valued above using common sense and logic. I'm so thankful I found your channel.     I just told my husband the other day I MARVEL at your intelligence!!!!!! You're AMAZING!!!! As far as I know, there has only been 1 case of botulism in the USA from home canning. Yes, we need to be afraid of foods canned from commercial canneries according to what I've seen. Can't wait for your next video. I learned soo much! THANK YOU!! 💞🙏🏼💞

    I'm a fairly new canner (about 3 years). I've not had anyone teach me except for videos and the very little I remember from when I was a kid. My mom was a farm girl, so she did forbidden things like reuse the lids. Anyway, I've had a lot of trouble with siphoning especially. Because of your complete explanations, I know exactly what I did wrong.
    I appreciate you explaining the "why" of it all. That helps to figure out what goes wrong and fix it next time. It's irritating when someone just says 'do it this way' without the reasons.
    I'm also glad to hear you stress the fact that if people stop worrying as much about germs and bacteria, they develop a healthy immune system to take care of the body.

      I too had a siphoning problem and know what I did wrong as well… I also learned about the rings and stacking my canning produce. I got scared and backed off of my canning, now I am ready to tackle it again! Thank you, Ruthann! I have decided to stop thinking of all the do’s and don’ts of the Ball etc “safe canning techniques” and relying on generations of canning techniques and the wonderful knowledge you shared!     You are more educated than half of this country! These trollers you encounter are so used to buying their food off the shelves and will starve when the doo doo hits the fan! I drank raw milk at times when I was a child because my relatives were dairy farmers. My infant children drank the same milk and are healthy and productive adults. Don’t be discouraged by the people that think they know everything! You’re living proof from generations that you don’t need a grocery store to survive. ❤ I just subscribed! My Aunt Darlene showed me how to can venison and it was the best experience ever!

    I love the methods of canning you use. I used to do hot pack canning but got scared by the many rules and regulations about canning. My family never got sick. I really lost my joy of canning. I am reassured that the only thing taking my joy of canning away, was fear. Thank you so much. As for the rude comments from people, they should realize we all have our own personal gifts. I would sooner be able to care for my family when needed than be a scholar. You are wonderful and your teaching has lifted my spirit and given me confidence that I can go back to my tried and true way of canning with out the fear. Live, love and have a great life. You are teaching your children a way of life that will serve them in the future. Self sufficiency is a smart way of life.

    Thank you Ruthann. I was raised on a rural farm in New England in the 60's. My mother canned with the glass dome lids and runbbers. She never gave us anything that was bad. If it looks bad or smells bad, don't eat it or give it to your family. It's as simple as that. A little common sense goes a long way.

I'm sure you learned more in your 5th grade education than most people in college learn today. My mother, wno had an 8th grade education, was often surprised to learn what I did not learn in school.

    I learned canning by helping my mother 50-odd years ago. Everything she canned for our family of 14 was pressure canned. When I started canning for myself and my husband earlier this year, I did a lot of research, and came to the conclusion that the government used fear to convince housewives that they would kill their families if they didn't pressure can certain things. I reasoned that, after all, Amish and Mennonite mothers have been water bath canning for generations. Presumably, if that method were indeed killing their families, they would not keep using it. I'm 68 years old, and have never based my decisions on the government's fearmongering, and I don't intend to start. Thank you so much for providing this channel where I and others can learn to water bath can safely.

    I have never used a pressure cooker to preserve food. I turn 38 in the next week and I regret not remembering how grandma could prepare a meal for six from a package of hamburger two potatoes and a loaf of bread! I want to relearn/remember these skills to save our garden excess and be able to feed our family. Thank you!

    NEVER say you are uneducated. You talk more educated, and precise than 99.9% of the CZcamsrs out there. That is why I watch your channel. You do not say uh or um every other word, and that is a sign of your education. Formal schooling is not all it’s cracked up to be, listening to people talk these days. Keep up the good work, I’ll be watching. Obviously you were taught a lot more manners than the rude people who say you are uneducated. I guess proper English is uneducated. Also, water bath canning is STILL DONE IN OTHER COUNTRIES, so those who think they are so educated, need to do some more learning.

    Don’t let miserable ignorant ppl who can’t think for themselves get to you. Your way of canning is becoming a lost art. It is beautiful and so is your family and the way you talk. Education nowadays is just indoctrination anyway. Thankyou for educating and empowering ppl to put healthy food in their pantries.

    Ruthann ...never listen to other people...my mom had an 8th grade education and she was the best cook ever and a spotless house keeper...also you have a good education of canning and
    Taking care of farm animals...the majority of people could not do half the work you do...keep up the channel...I love it!!!
