Fresh Fava Bean Pasta with a Special Cream by Acquolina in Bocca.

  • Pasta with Fava Beans: For those of you who follow me, you already know I love to improvise, experiment, and always try new recipes. And here we have the fabulous FAVA BEANS, cooked with a special cream of my own creation! Hehe, they're fantastic... tasty... flavorful... they’ll literally make you drool! :-)
    Be patient and don't miss the chance to try this very special pasta! Enjoy your meal! ;)
    Ingredients:
    160g whole wheat fusilli
    About 200g fresh or frozen fava beans
    500ml broth
    2/3 anchovies
    5/6 capers
    1 shallot or 1 small onion
    1 garlic clove
    Juice of half a lemon
    2 heaping tablespoons of Grana or Parmesan cheese
    Extra virgin olive oil to taste
    Salt to taste
    Pepper to taste
    Instructions:
    Boil the fava beans for 15-20 minutes in a pot of boiling water (the same water you’ll use for cooking the pasta), squeezing in the juice of half a lemon to prevent the beans from turning gray.
    Once cooked, use half of the fava beans for the cream by placing them in a container for a hand blender. The other half will be used for the sauce.
    Note: If you don’t like the skins on the beans, feel free to peel them one by one-I personally don’t mind them!
    Add the pasta to the pot and, while it’s cooking (usually 11-12 minutes), prepare the fava beans.
    To prepare the sauce, heat some oil in a pan, add the garlic, and as soon as it starts to sizzle, add the finely chopped anchovies and capers (add a small portion of the capers to the fava beans for the cream). Allow the anchovies to melt down, then add the onion.
    Sauté well (about 5 minutes), then add half of the fava beans, a pinch of salt, and a bit of broth. Add a spoonful of the sautéed mixture to the container for the cream.
    Let the sauce simmer on low heat for about 5 minutes.
    To prepare the cream, after adding the spoonful of the sautéed mixture, add some broth, olive oil, Grana cheese, a pinch of salt, and pepper. Blend everything together-if the mixture is too thick, add a bit more broth and a drizzle of oil (this will help make the cream smooth and glossy).
    Remember to set aside 2 tablespoons of fava beans to garnish your plates! :-)
    Add the pasta to the pan with the fava beans, pour in the cream (adjust the amount to your liking), and mix well.
    Serve the pasta, garnish with the reserved fava beans, and finish with a sprinkle of Grana cheese! Enjoy your meal!
