    It's CURRY LEAVES
    we malayalees can't cook food without curry leaves... in kerala, every household will have atleast one curry leaves tree... bcz, we can't live without them.... its so flavourful as u can find it in almost every dishes and its good for hair growth tooo( it's used to make traditional hair oil & mallu girls have loooong hair)
    Rick, the black thing in the fish curry is not mushroom, its kerala tamarind... basically we don't eat that... its for the flavour

      True about the Kari leaves, but the black thing is not a tamarind, rather called Kokum in english or Kudampuli in mallu (hence people associate it with tamarind) which is used in costal Kerala to Goa to Maharashtra..

    26:24 Korbin, if you remember, you have seen this dish in a movie before, Jaya jaya jaya hai, its called Idiyappam, the son wants it for breakfast everyday, his mother squeezes the idiyappam every single day for him 😂😅 its made of rice flour, not fermented like idli but steamed in same idli steaming dish, thats why same shape, Its a tedious process squeezing it with the idiyappam maker though.

    Appam with Kuttanadan Duck curry is so delicious and You should try it. If you ever come to Kerala, don't forget to visit some toddy shops in Alleppey.

      @@maverickspencer5581 There are many toddy shops in Alleppey that cater a different varieties for Kerala foods, particularly non-vegetarian dishes. As a part of houseboat tourism toddy shops are also visited by most of the tourists.

    In the South of India 'CURRY LEAVES' are used in all the dishes. BASIL is predominantly used in Italian or Thai dishes.

      Basil is used mostly in northeastern part of india . It is used in stir fry dishes,, to flavour chutney or used in meat stew. Also we make basil chutney .
      Curry leaves r also used for cooking but we used it as main ingredient. We stew it with tomato, chili, onion , garlic n flavour it with dry fish n also we fry the whole stem of curry leaves by dipping in a batter. We cook catfish with lots of whole curry leaves or with curry leaves paste.
      You will find curry leaves shrubs growing in abundant here. Basil is seasonal so we use it as fresh or in dried form .

    Hats off to you for diving head first into another culture so enthusiastically. The openness to a totally different flavor profile from what you are used to is admirable. Rick enjoying the strong red fish curry is Anthony Bourdain level of exploration for American food sensibilities.
    One thing to note though- I’ve seen great reviews of this restaurant. The only thing is (surprised no one mentioned it) the Malayalee staple food is rice along with vegetable side dishes plus fish/meat. They should have explained to you that the green beans, Avial, red fish curry are all meant to be eaten together with the rice. Not separately. It totally changes the experience/flavor of what you are eating.

    31:50 Reason why we were invaded 😂 reason why vasco da gama found the sea route to India reached the shores of kerala- for spices. kerala is the land of spices, we grow spices that's exported al over the world. Almost every house has spices growing in their backyard, mostly not planted they grow on their own 😅 like weeds.

    The coconut in that watery dessert called 'payasam' she mentioned was coconut milk, freshly extracted it imparts a mild sweet taste while also imparting a thick texture to the dish , coconut being abundant in the region it find it self into many forms across dishesh of the cuisine...

    Most genuine and authentic reaction on Kerala food! So glad you guys got to experience some real good Kerala food. ♥️ But next time I hope you guys have the rice, fish curry, beans thoran, aviyal etc and all other items together as a meal! You guys will love it! 💯✨
    Also you must try kozhikode style biriyani and thalassery biriyani too, the famous biriyani variants from Kerala.

    Yup, Kerala food is generally flavourful and spicy, but again depends on each person's spice preference to how spicy it could get (depends on the chef). Andhra Pradesh (Telugu) cuisine is said to be spicier than Kerala food.
    Your favourite curry from the menu is "Chicken Stew" if I'm not mistaken.
    Kerala Chicken/Vegetable Stew is something that is low on the spice index but yet flavourful and we generally have it with appam, porotta, idiyappam (the noodley stuff), pathiri (rice roti) ( I think Korbin was right with the "STEW" reference here) 😅
    Come to Kerala you'll love the food and vibe but make sure to visit when it's not summer lol 😂

    Guys Kerala is known as the Spice bowl of India. Britishers and portugese first landed in Kerala for its spices and later on conquered india. Britishers and portugese specifically came for the black gold said at that time for the black pepper of Kerala. Kerala , the name itself translates to kera means coconut and altogether as coconut land. It's the only state that has only production of cardamom, tea, and what so ever spices altogether in India.

    It was plantain not banana fritter , grown plenty in Kerala and used both raw and ripe form in several dishes. Avial ( mixed veg) and beans thoran (stir fried with coconut)are classic sides eaten with rice. Appam (fluffy bread) is made from fermented rice and coconut batter. Idiyappam is steamed noodles made from just rice flour, hot water and salt. And it’s called porotta in Kerala, layered bread from plain flour which is different in texture to the parathas found elsewhere in India. Glad you enjoyed Kerala food! And last but not least, no savoury dish in Kerala is complete without the curry leaf.

    The black thing in the fish curry is basically Garcinia Indica commonly known as malabar tamarind / kokum. Highly nutritious with anti-oxidative properties.

    29:44 its actually called porotta . Flour , sugar , salt , water , oil , and eggs . The dough is then stretched and folded to give layers just like a croissant.

    when you try two different type of payasam, there is a trick to enjoy both of them. Make sure you're drinking butter milk or rasam between those payasam to break the sweetness.

    That leaves are called the Curry Leaves or the Sweet Neem Leaf. Those are commonly used as fried seasonings on Kerala curries or vegetables (one of the reasons they are just called the curry leaves).

    The small bowl given along with the coffee cup is similar to saucer. If the beverage is hot, then pour a little amount of the beverage into the bowl and sip; the beverage will get cold soon. Also it can work as a lid if you want to drink the beverage in the end and want it to be hot, use the bowl as lid to the cup. 😊

    ONIONS used in the Kerela dishes too are different. They are neither the 'White Onion' consumed widely in the US to the 'Red Spanish Onion' generally used in India. They are also not the 'Shallots' or the small red onions used as a marinated vinegar condiment served in Indian restaurants, but, they are special 'Kerela Onions or Sambar Onions' that have an unusual taste.

    All the standard South Indian dishes --- viz. Dosa, Vada, Idli, Uttapam etc. are served with the 03 condiments --- Coconut Chutney, Tomato Chutney and Sambar. There are some restaurants that also serve Ginger Chutney and Peanut Chutney. It is good to try out each condiment standalone and then mix all to get an altogether different flavour.

    Combos you can try next time
    1- Try the banana fritter with beef
    2- wrap a porotta around the banana fritter and try it with/without beef/chicken curry
    3- pour the saymia payasam onto the porotta and try it.
    4- try the jaggery payasam, mixed with pappadam (salty ones)

    From 34:40 onwards I was yelling to korbin to Dio the porotta in chicken curry , he did exactly the same. And gave the exact expression I was expecting.
    As someone from Kerala who've lived many places across India. I have never felt any other food (Except Bengali food maybe) worthy enough to eat when high in weed.

    My favourite as a Malayalee is Appam (rice coconut batter) or Idiyappam(rice noodles) with chicken curry the last one you had and yes, we dont add lentel in Appam or idiyappam. And the Appam stew also very good combination. Dessert Ada payasam the brown one is awesome. Parotta with chilly chicken, ❤❤❤ You guys didn't try rice cake or Puttu with Chickpeas curry, very common breakfast here. One combination you had it wrongly was banana fry with chutney😂😂😂. It's evening snack,we only have banana fry alone without any combination. Recipes are available in Google. Anyway loved your reactions.❤❤❤❤

    Rick, she will not like the fish as you think, Bengali and Keralites love for fish is just as whole, but they have very different taste profiles the preparation is very very different also the type of fish each likes is different. As far i have seen both Bongs and Mallus their taste pallets don't like each others respective fish currys. Fish Fry is a different case that they find a middle ground as the marination are almost same just oil used and its taste is different but its manageable.

      I also think it is the type of fish. Bengali's mostly eat fresh water fish while people eat sea fish in Kerala. My father studied in REC engineering college in Durgapur, West Bengal. The Malayali students would become vegetarians on the days fish was cooked in the mess. Mind you this was 50 years ago.
