Haiyaa sorry niece and nephew Uncle Roger make mistake. Dum is cooking method, not cooking vessel. Uncle Roger got confused because I don't speak the language. I just assume when people say "dum biryani" it mean what they cook biryani in. But that wrong assumption
You should watch video of vill food kitchen tooo

They are yelling bcz, in the beginning of their channel they didn’t have a quality microphone to record their voice , so they had to make sure their voice is clear to the person who wathching the channel. But at the present it became something unique about their channel 😌😇
Yeah
I was curious as well, thanks!
I just love the excitement and enthusiasm they show with their yelling. The yelling they do is of pure passion for cooking.

Hey @mrnigelng. Thank you for being soo generous to not roast them for their colour, for their cooking style, or anything. When you said you can't roast when they're feeding the old orphans, I see our roots are connected even though we're from different parts of the world. At the moment, this makes me feel like the world is not so big after all. I respect people who respect others and you have my utmost respect. Damn Nigel we both are same age. Im uncle Raghav 😁. The reason they're yelling is because when they started making CZcams videos they din have proper camera or mic. So they need to say every ingredients louder so it gets recorded properly. Later it became their trademark style so they does that in every video... Now they're the first youtube in India to use red V Raptor XL camera💥
So they are not only roasting goats, but also bad microphones. Okay, okay!

I'm not sure if I'm just an ignorant-ass white American but I've always always admired the no-BS attitude of Indian culture in general. On point, it is just as utilitarian as it can get in India.

Well I'm a North-east Indian, the chefs in video are South Indian. Each part of India have their own culture and a way of living, shouting is just a way of showing compassion, excitement and joy. I do understand it's kinda overwhelming and they seem aggressive, but trust me on this, South-Indian are very friendly, humble and welcoming (It's is really easy to create a bond with them, Also fun fact they speck better English over Hindi Including elderlies).
Love from TN my friend. Ur state ?
Exactly, you said it right! It's an expression of passion and excitement especially in rural Tamil Nadu. Yelling is not always a bad thing in rural India generally.

@@RanjanManohar that's the best comment i read today
On the contrary we boil our rice(from where I come from) , pressure cooker doesn't give that great a consistency. Pressure cooker rice tends to be stickier.
Right 👍🏻
INDIANS use pressure cooker just for lentils not rice, idk who told you that?
0:56 in India you can get fresh turmeric everywhere
As a tamilan (means im in the state of tamilnadu in india where village cooking channel is) seeing foriegns seeing our food and cook it is fun
0:59 not randomly find fresh turmeric.. in india some people grow turmeric at home only in their backyard.. it grows in our home too..
He was joking 🤓
It was meant more as a joke rather than factual statement
Actually fresh turmeric paste is awesome and good for health too. Dried powders don't have much nutrition. 😊😊
Yup we grow in in our backyard too..
that was a joke dum dum
2:27 Dum aint a cooking vessel uncle roger, its a cooking technique. Meaning to slow cook the food in a sealed vessel, with heat from the top using the hot charcoal from the fire or any other form of heat to ensure complete cooking.
dum cooking is when food is cooked by circulation of steam... that's why we need a properly sealed vessel, but in this case, as the vessel is so huge, there is much more steam inside than what is escaping.
And heat from above is necessary only when the steam takes time to reach the top as they form water droplets on the roof of the lid.
yes this is true.
IT IS a cooking vessel lol.
Excuse me ? It's a vessel

Its not wierd. That's the nomadic methods used since ancient.
1:29 that yelling is like a trade mark to that channel😅

😂😂
Dum is not the vessel. Dum means "Pressure" - It is a cooking technique where the vessel is sealed to induce "dum" over a low flame. :)
Edit: OMG Uncle Roger acknowledged my comment! 😁
"Dum" isn't pressure actually. It's very slow cooking with steam. In Bangladesh we do it for Polao/Pulau/Pilaf and Biriyani. In Bangla it's "দম"।
Dum indeed means pressure or rather lack of air. That’s where the hindi phrase “dum ghut raha hai” comes from - “I can’t breather”

Uncle Roger, India has multiple types of biryani, like Kolkata biryani has egg and boiled potatoes while Lucknowi Biryani doesn’t. Likewise there is Malabar, Sindhi, Hyderabadi, and Kashmiri biryani. Similarly, the uneven coloured grains of biryani is actually the way it is made in a lot of places. It’s not because of not putting enough spices, it intentional to have some rice grains the colour of saffron and some grains to be plain. Hope this niece made it clear haiyaaaaa 🤝😂
Yepp... In fact, in a perfect Lucknow / Kolkata Biryani, 'half' the rice should be plain, and the other half coloured with saffron. And the meat (Chevon) 'must' be falling-off-the-bones tender. Hyderabadi Biryani doesn't even count because you'd need the 'gravy' to add the required 'moisture' and the 'raita' to cool off the 'heat '- not what a 'Biryani' is supposed to do to you in the first place. lolz 😀
Yes, we love our Kolkata style biriyani half coloured and moderate spices. Because in that way we can get the essence of basmati rice as well.
It's a hyderabadi dish and you people are rasict
Racist people it's a hyderabadi dish
@@RonBhattacharya isn't Hyderabad the most popular state of Biryani the recipe originated there?how can you not count the original also biryani will always be hot on the stomach because of all spices

Uncle Roger if you had time do visit their place & you gonna have a very good experience..! Their language is a nature things & they not yelling..! Peace out ❤
The problem is cultural difference. Indians in general are loud people especially in their close circle. Most foreign culture hate being loud... maybe only Americans enjoy it. Even Brett Lee who is otherwise considered friendly towards Indian and even starred in an Indian film called Indians being loud as their 'beastly' nature. Not to mention one of the most famous Britis Prime minister also called Indians as 'beastly people with a beastly religion'. Japanese are also a similar culture with too much norms and regulations making them unable to appreciate Indian loudness.😂
Bro you did not have to defend.
The foreigners would not look down on them because of their behavior.
Don't forget kerala It is famous for biriyani
what does degree have to do with cooking, why did you say that,. everyone in India has some degree
It is mainly a cultural thingy. Japanese and many European cultures are really silent while Indians within their group and close family are quite loud which most culture do not appreciate. There are many instances of them not liking it and saying mē@n things to us ( in previous comments I mentioned some instances but it got deleted so I can't mention it again).
They talk very loudly because they don't use microphones and the setting is outdoors....so lot of Natural Ambient sounds. All the food cooked makes it's way to this Old Age Home. Very Noble Enterprise
Also, Uncle Roger...you must explore the 'Non Ginger and Garlic' part of Indian Cusine eg: Jain, Gujrathi, South Indian Brahmin etc.

I'm from Tamil Nadu, India, from where this channel is from. Actually the side dish they are having is Brinjal Gravy for Briyani. It is a traditional side dish served with Briyani along with Onion Raita. The brinjal gravy gives more spicy kick to the Briyani and Onion Raita (made with curd) subsides the spiciness so that everyone can have Briyani as they wish!

That's what I m going to say 😅
Yes I prefer mine with white and yellow and orange rice. ❤
It varies on where the Biriyani is made, not sure about how other countries or other other states of India do it. But it’s even different in different cities. The closest resemblance of that particular biriyani in that frame, I think it’s Pakistani biriyani, where there’s a white and yellow hue to the rice, it doesn’t have much in terms of spice, and the best part of it all, gives you a huge insulin crash which enables you to sleep like a baby later on
