That's all well and good but my real interest is what that funky machine was that was shown about 3 times. The one that makes the dough look like its being puffed up. That's the only reason why I watched the video.

My town has one of these and it looks nothing like that. Besides the bread board. But they give us little tastes. Still the cheese focacia or something like that... SO GOOD

Yes, they had one job.
That machine is just a dough divider. We have one where I work.. Ours is 16 portions. So if I need two pound boules, I put 32 lbs in the machine. It is a real time-saver.

the great harvest bread co. in my town that had been there since i was a kid closed about two years after a panera opened on the same street... i didn't realize they were a chain so this video made me happy. still really miss their cinnamon chip bread though.
