Welldone but as a correct Calabar chick, I'd like to let you know it is "Edikang Ikong" in two separate words not Edikaikong. Edikang ikong means "fried vegetables". As you know, it is cooked virtually without water. The vegetables, the waterleaf and the Ikong (ugwu) contain a lot of water which basically is the water for the soup.
You avoid adding much water during the cooking of the meats, let the water be almost gone by the time you are done cooking the meat, then add the oil and then the vegies. The oil draws out the water from the vegies.
As I said before, the fact that it is almost fried in oil is what gives it the name "Edikang ikong" (fried vegetables).
You did good though.
