@toby-nq9di I was taught to put it in the fridge between each fold. After you make your dough, chill it. If you butter is at room temperature, spread it into a sheet on some plastic wrap, put it on a sheet pan & put it in the fridge while you roll out the croissant dough to about the same size you spend your butter out to plus about 1/3 longer. Once you have your dough rolled out, grab your butter & flip it onto the dough. If you're worried about flipping that big of a sheet, cut it apart with scissors or a pizza cutter & flip it onto the dough piece by piece to cover 2/3 of the dough & peel off the plastic wrap! DO NOT FORGET TO PEEL OFF THE PLASTIC WRAP! lol Fold the 1/3 dough without butter over the top towards the other side, then fold the other 1/3 that has butter showing to the folded edge. Roll it out, fold by 1/3's again, then wrap in plastic wrap & put it in the fridge for 20-30 minutes. Then roll it out, fold by 1/3's again, put it in the fridge for 20-30 minutes again. Repeat this roll out, fold, refrigerate process like 2 or 3 more times. After the last resting time in the fridge, make your croissants!
