    Kerisik is a condiment made of grated coconut which is toasted. It is the secret to the nutty caramelized flavour to perfect rendang. Kerisik is known as coconut butter due to its fragrance and natural oil.
    Kerisik, made of toasted grated coconut goes perfectly well with the caramelized curry known as ‘[rendang](www.nyonyacook.... Besides ‘rendang’, other dishes such as ‘[nasi ulam](www.nyonyacook..., ‘nasi kerabu’ and ‘serunding’ (spiced grated coconut) uses this special ingredient too. It is used for its fragrance, creamy flavour and natural preservative function. Dishes which have kerisik added to them last longer. This is a little trick used back in the days when refrigerators weren't widely available.

    Grace, can you teach me how to cook Pickle chee ya hoo Penang style please? My Mo, used to make this and kept it in a clay pot. Those days in the 50s we didnt have a fridge, in Taipinh Perak yhe pickles never went bad. My Mother was a Nonya too and a fabulous cook

Its Hari Raya and I need to cook my rendang but unfortunately there's no fresh coconut here in Turkey, they only have dry coconut for cakes & biscuits..       you need to realize that desiccated coconut and freshly toasted coconut for kerisik is going to have different flavor profiles. If you've never made it and tasted it with fresh grated before, then you kinda don't have the liberty of saying 'it came out fine' because you've never tasted the original to compare it to.

    I try the Khind recipes to cook the black chicken. The black chicken, my aunt can rear and keep a very rare chicken with black skin. Anyway, the recipy I used quite successful.

    I recall my grandparents own a small groceries in Kuching Sarawak. He cooked bunga tongkeng the fragrant flower soup. The smell can cover the pig blood soup. Grandparents prepare pig blood soup for religious reasons. Also, the mugwort herbs for the Chinese tomb festival. I recall my uncle
    rearing the quail successfully. Using the quail eggs to make century eggs. But I don't like it smell like urine and the perfume is too strong.

    Hello Grade..as i understand in live in Germany...and i saw u used quire a lot of fresh ingredients like fresh wantan noodles..yellow noodles or even kuay tiew...where do you get it if you are living in Munich as well? Thanks in advanced. I am also malaysian and love cooking like you... 😁

      Some Asian grocers sell it, fresh or maybe frozen. Yellow noodles and flat rice noodles are dried but hydrated before using.

    The other trick is to melt creamed coconut (NOT coconut cream). It comes in block like butter which u can buy from Indian/Asian grocery store. I was looking for kerisik here in Las Vegas but couldn't find any. Btw, did you soak the grated coconut first. I can only find the dried desiccated coconut here.

      Nah, it's not available in many places. And even if it's available, it is hella expensive. A jar of 200g of creamed coconut butter costs at least S$12 here. That's a lot more costly than to get a much higher amount of shredded coconut, toasting it then creaming it into a paste.

      @@BeyondTheMind007 That's why the cost disparity makes getting the dessicated coconut and creaming it by oneself more worth it. 400g of dessicated coconut costs S$5 to S$6, so that makes 200g of it S$2.50 to S$3, which is appx 1/4 of the price for the same amount of already creamed coconut.
      The most absurd thing about the high cost of creamed coconut is that it is mostly sold by Western brands using South Asian coconut sources but marketed for the Western market hence the inflated price, but the dessicated coconut also comes from the same South Asian sources but not marketed by Western brands hence doesn't have the same price tag. I'm not paying extra for Western brands' marketing costs for the Western markets since in Asia, I already know what the different formats of coconut are and can be used for.

      Hi, would you mind if I add my 2 cents? If it was me, I'd go ahead and add the oil, but I'd heat the oil first in a small pan. At this time usually, I would add whatever I think needs a little adding in my curry like curry paste/ shallots/ chilli paste, then pour the oil back into the cooked curry.

    When there is no more new video or any message or words left on this channel by Grace, as commented by many of her followers here, I too wondered what had happened to Grace and was concerned if she was alright and if anything had happened to her. Seeing the replies here from Admin, I am making a guess that Grace had probably bailed out and sold or transferred Nyonya Cooking to other people to run while she move on with her life. Which is why there will be no new video as she would need to appear in any video herself unlike written recipes which can be done by anyone. It’s a sad ending for one of my favourite CZcams cooking channel. Time to move on instead of waiting for her to come back which i am sure is not going to happen now.

      Hey, thanks for your message. Grace is still the sole owner of Nyonya Cooking. However, we are now a small team. As for now, CZcams is no longer our focus. All new content will be uploaded on our website instead of CZcams. Hope you can support our independence on a platform we own and manage 100%. So it’s not a sad ending, in fact a new beginning which Grace will announce through our newsletter. 💛 - Admin
