- In my humble opinion, Oven Roasted Garlic is something that everyone should know how to make! Whether you're a seasoned chef, enthusiastic home cook or just a plain and simple garlic lover, roasting garlic takes it to a whole new level and is a simple way to add boosts of flavour to any dish. It makes a great appetizer or snack slathered onto some bread or crackers, is an epic part of any cheese or charcuterie board and is so much easier to make than you might think. There is so much you can do with roasted garlic including eating the soft and tender cloves right out of the head itself!

It came out so strong and not like a paste. What did I do wrong?
Hmm not sure as mine comes out perfect every time. Some tips to consider: make sure the time and temp are just right - roasting garlic at too high a temp or too short a time can result in a harsher flavour and less soft texture. Ensure you cut off the tops and expose the cloves and tightly wrap in foil - this helps steam the garlic, softening it and mellowing the flavour. Make sure you use fresh and high quality garlic to begin with. And finally, use a sufficient amount of oil and let it cool slightly after roasting. This can help it become more paste like as it cools.... hope it comes out better next time. Everyone squeezes the garlic out in these videos but no one mentions the peels/paper. Dont you have to pick all that stuff out???

I tried it but my garlic turned out to be hard instead of gooey. What could I have done wrong?
Oh no! Sorry to hear that. Garlic can turn hard when it's overcooked so just make sure youre keeping an eye on it starting at the 30 min mark.. also don't forget the olive oil on top of the cloves before roasting which prevents it from drying out too fast and turning hard.

Why does mine always taste terrible, acrid and bitter?
That really sucks since when done right, the sweet and caramelized flavour is hard to beat. I'm not sure what the problem could be - too high temp in oven, bad garlic, etc. Wrap it in foil and put it in the middle oven rack. You shouldn't have to look or touch it for at least 40 minutes. Have you gone to the website link to see the full written recipe? The video is just a fast version and could be a little hard to follow exactly.
