    Herring is a common thing to have on Christmas and New Years in Milwaukee, WI. We buy ours in a jar in wine sauce cut when I went to Poland I was in heaven having fresh herring dishes. Yum!

    Re: onions; my Yugoslav landlady always put her sliced/diced onions into ice cold water; then drained and dried them before she added to her "famous" potato salad that her dinner guests always asked that she made. The onions were crunchy but not smelly. Thank you so much for bringing back so many comfort food memories.

    The herring with oil. I'm from Sweden, quite close to Poland. And we eat a lot of herring here too. But this one was an interesting twist, herring in oil? I've never seen that in Sweden, it's always pickled herring, or smoked herring, or fried herring with mashed potatoes and lingonberry jam, or fried herring pickled with red onions and carrots served on top of rye bread. But never oil. I'll have to try that!

    My mom made the herring and onion dish for daddy; she and the kids wouldn't touch it. The herring came in small wooden barrels and I think she put them in water for awhile to take out salt. As I grew up and learned to cook for my new husband, his mother taught me this as he enjoyed them. Buy roll mops in the refrigerated section (usually with pickles in that section); drain; add sliced onions, sour cream and canned cranberry sauce (not jelly); let it sit in the fridge for a couple of days. Turns such a pretty pink, the herring is so soft; serve with rye or pumpernickel bread. Very tasty and I would serve at cocktail parties and most non-Europeans had NO CLUE what they were eating!

      What are roll mops? Your "situation" sounds alot like mine. Dad was Polish and mom was Italian, so she didn't seem to like those much! But I grew up liking just about everything he made (and also what she made), so I love to see shows like this, and read comments like yours!

    We Poles have traditionally had BALTIC SEA "HERRING" done: Smoked, pickled, salted, and occasionally fresh as their seafood staple. (River TROUT and occasionally CARP are usually the favored "FRESH WATER" finned fishes.) Thanks to our Scandanavian, deep sea sailing neighbors, and their South Western European counterparts, the Portuguese, COD fish, heavily dry salted to preserve and cure it on those long sea voyages and from the "secret" fishing grounds, was also available but rarely used because of it's greater expense as a "premium" product.
    Before Europe's expansionistic colonial period during the "Age of Discovery" of new trade routes to the orient and access to new spices, foods and HUGE tracts of fertile land to establish large scale plantations (ie."fasendas" in Portuguese) sheep and cattle ranches, the humble HERRING and COD were the ONLY main sources of good, alternative, affordable protein for most of Europe's population.

    I've not seen the Herring and Onion one, but Herring Salat was a favourite when I was a child. I used to help my Oma make it. Same recipe but no walnuts. Maybe the German, or at least Hamburg one didn't have them. I still make this every year at Christmas for our children and grandchildren who absolutely love it. I've only just found this channel so I don't know if it's featured but I also make Flieschsalat and saure Sulse at Christmas. Excuse my poor German spelling, I spoke and read German from an early age but was never formally taught it.

    Even the name sledzie scared most everyone in my family. It just sounded gross. My professional chef grandmother made them every Christmas, only at Christmas. She made two kinds; the version with oil/onions, and creamed herring. I was the only child at the table who loved both, but the creamed herring was my favorite. I hope you have a creamed herring recipe. My siblings and cousins thought I was weird for enjoying herring, so Mark's comments made me laugh. After I moved to NYC in 1979, I would see herring prepared in several styles in Jewish delis. I would order creamed herring with a poppyseed bagel, and that delicious lunch would remind me of my grandmother and holiday joys of childhood. It wasn't exactly as I remembered them, but they came very close. There was a famous upscale Italian restaurant that catered to actors on Broadway known as Sardi's. In the 70's and 80's, as an appetizer, they offered creamed herring. It was a superb version, served with delicious buttered bread. I had it there many times. Such memories this dish conjures. Haven't had herring in over 30 years. This is a special video.

      @PolishYourKitchen  Před 3 lety +2

      I make creamed herring with onions and apples for Christmas and maybe one other time throughout the year (when I really crave it), otherwise there is such a large variety of herring that I can pick and choose. It’s an absolute staple here in Poland and we all eat it all the time. It’s such an unusual and distinct flavor. I just love it.

    • @KJ_nyc
      @KJ_nyc Před 3 lety +2

      @@PolishYourKitchen Thank you for your response. My grandmother's creamed herring also had onion, but I think the white onion slices may have been pre-pickled. Not sure if her cream was a mixture of sour cream and heavy whipping cream. I remember the luxury mouth feel, and the cream was not overly sour. No apples. I happen to love apples, and their addition sounds very interesting to me. I'm not surprised Poland offers many varieties. I hope you consider dedicating a video to the creamed variety. I would be very interested in those recipes. Thank you!

    My Grandfather made his own pickled herring 2 ways . One with wine & onions and the other with sour cream and a little dill. I started eating them when I was a little girl in Milwaukee , Wisconsin and always loved it! Later when I married and moved to California it was hard to find pickled herring except around the holidays. Most people thought it was disgusting so I thought more for me to eat , lol. My former MIL introduced me to a herring salad that’s very similar to yours except it also has roasted pork in it. She made it from her Husband’s Mother’s recipe who was from Germany . I absolutely loved that salad but haven’t had it in many years. I can’t wait to make your salad! Thank you so much. for sharing these recipes with us. Thank you for these recipes! My dad always used to make herring that was dried - they called it blind robins. He would soak it a bit to get some salt off and have sliced onions, peppercorns, salt, pepper, and sometimes a bit of sugar. A little dill if we had it on hand. He would cut the herring into pieces and pack it in a mason jar with the onions. Then cover with distilled vinegar/water mixture with the spicings in it, then pour it over the herring. After a few days, he would start picking on it. So good! Do you ever make it like that? Also, the fresh herring like you had - he would get those in containers and would rinse or soak in water. He would split them open and take out the roe or the "milkers." We would also eat that. I prefered the roe! He would make a vinegar bath like above and put them in jars with onion slices, or in jars with sour cream. I never had it with oil like you made, or in a salad like you made, but I hope to try those recipes soon! They looked very good, and the pickles too! Thanks for your great videos!

When I was young, the smelt of herring was disgusting, and later, when I worked on a ship, I changed my mind and I still like it in various forms, whether in cream or vinegar or in oil and others. Now I don't work on ships anymore, but I really like herrings. Now I can say that they are tasty.

    My Dziadek would catch herring with his friends; we would make a whole event out of it, it was like a holiday weekend for us when I was young. Then Dziadek and Babcia would clean them and Babcia would cure them, in a crock in salted brine, then oil. It was an annual ritual, and then the cured Śledźie would be put up in onions just like you are doing here. The stuff we get in the stores today hardly resembles those favors and aromas of my youth. Many years ago now, my Mother presented me with a bag of frozen Śledźie that a neighbor friend of hers caught, and I went by memory, and some old notes I had about the process, and we had lovely pickled Śledźie for Lent one year. Babcia and Dziadek are gone, my Mother is now with them as well; I must find a way to make them soon for this Lenten Season.

    Any ideas for those of us in the states for an appropriate substitute? I’ve checked the local grocers and can’t find salted/ brined herring.

    My Polish late mother in law used to make a cucumber and onion salad with sour cream?? maybe, not sure. Was good. Don’t know if it was a polish dish or not.

    What about about the marinated herring? Can you share the Baltic secret ? 😁 All countries from the region are making the same thing and sometimes with little differences

    Whenever buying herring I would rather choose those ones , which are harder fillets than softer.

    Herring, animal organs shall never cross my lips. I won’t hold it against you, my dear friend. My late mother in law tried. If she couldn’t do it, no one can. My poor children were traumatized. I had to buy them long John Silvers dinners to feed them. 🤪

    Déjà-vu i was wondering when you were going to do herring and here you are.
    Put onions in microwave after cutting them. It's best and easiest.
