The more I watch this the more I think Mel was playing a character to mix things up.
If you think about it, a lot of the best jokes were made at her expense. It made for good TV, and fans of the show haven’t stopped talking about it since!

I feel bad for Mel - she takes herself waaaaaaaaaaaaaaaaay too seriously and feel that it's probably due to some painful issues (hurt people hurt people). Conversely I feel bad for everyone having to put up with and coddle her cringe, elitist attitude. Jimmy's feeling like a fast food worker dealing with a snotty Karen.

It felt like she was trying to play a character the whole time, but the character was falling flat while she kept doubling down. I don't know if she's really like that, but it didn't feel genuine.
