  • Join chef Samantha Seneviratne as she makes Ruffled Milk Raspberry Pie. Galatopita, or ruffled milk pie, is a Greek dessert in which phyllo is baked directly into a simple custard. It’s prepared in stages so the top stays buttery and crisp while the bottom turns into a sort of phyllo bread pudding.

    This is actually a really brilliant idea. Sometimes magazines snd channels are doing things to give you ideas, but you have kinda already seen it before or it’s not really something really new that is worth putting in your file for a really long time, but this is actually something somewhat unusual that you don’t see all the other places doing. It’s got to be incredible as well with the soft vs crunchy and the way the phyllo should soak up on the bottom part.

    • @amritg6349
      @amritg6349 Před 3 lety +5

      Yessss! Absolutely, do it along with cardamom or cinnamon and bake it in the same way. You might also want to use some citric extract as a replacement for the vanilla just to bring out layers of the same ingredients. You could also add some zest just before serving or right out of the oven, so at to not let it get bitter! :)

    • @9gagHasMySoul
      @9gagHasMySoul Před 3 lety +1

      @@amritg6349 to avoid the bitterness, theres also infusing the cream with citrus rind before adding it to the custard

    • @amritg6349
      @amritg6349 Před 3 lety +1

      @@9gagHasMySoul yesss, you could do that too! I find that adding any citrus component to dairy is just a risk and you might end up with buttermilk, as the milk might start curdling. So do keep an eye on that :)

      Well the OP @MartyisGreat2020 sounds pretty ignorant. But I will comment anyway🙃. The reason she is called Samantha is probably because she is Christian. It's not uncommon for Christians all over the world to be given English/ Portuguese/ Dutch sounding names, though they may be of different ethnicities. Because, yeah colonization. That did happen. Also going by her surname, she is Sri lankan, not Indian.
