- Join chef Samantha Seneviratne as she makes Ruffled Milk Raspberry Pie. Galatopita, or ruffled milk pie, is a Greek dessert in which phyllo is baked directly into a simple custard. It’s prepared in stages so the top stays buttery and crisp while the bottom turns into a sort of phyllo bread pudding.

How To Make Ruffled Milk Raspberry Pie | From The Home Kitchen | Bon Appétit - Jak na to + styl
I could see this being made in a big casserole dish to feed more people. It looks so good for being so simple.
She didn't say how many sheets to grab at once and how many she used for the whole thing. most people use two to three together
My sister bought so much phyllo thinking it was the same thing as puff pastry. Glad you shared this recipe so I can use up all that phyllo!!
That looks like a really nice and simple recipe!
I'm not really sure guys I might be wrong but I have a slight hunch that she really likes filo.
I've never seen the spelling filo but searching says the phonetic spelling is legit. Something new I've learned.
her voice is so calming
Samantha is definitely one of my favorite new hosts at BA.
This is actually a really brilliant idea. Sometimes magazines snd channels are doing things to give you ideas, but you have kinda already seen it before or it’s not really something really new that is worth putting in your file for a really long time, but this is actually something somewhat unusual that you don’t see all the other places doing. It’s got to be incredible as well with the soft vs crunchy and the way the phyllo should soak up on the bottom part.
I just made this today and it was so yummy! I used mixed frozen berries, added white chocolate chips and almonds and walnuts to it. I baked it 5 minutes less after adding the custard. Thanks so much :)
I came here for an electronic device called Raspberry Pi, but was not disappointed.
Why would you come here for the electronic device called raspberry pi?
This video was recommended in my feed. I am an electronics student and videos on electronic devices swarm in my feed. So, I just thought it is one of them.
I love that you enjoyed the video, since it's such a polar opposite to what you were thinking. 😊p
Yes! I'm stoked y'all are making a video for this recipe!! I cannot wait to bake this for my next dinner party!
Cardamom. I was thinking before you even said. Looks fabulous!
Me TOO!
Throw some cardamom in there and sprinkle pistachios on top right when it comes out of the oven so they just get warmed through and don't burn... I think I'm going to try that.
ever since i saw this on BA's IG i wanted to make it, glad I procrastinated enough for the video to come out first.
Um, please do more videos with Samantha! She’s lovely and I really appreciate our mutual love of PeeWee’s Playhouse 😂
she has her own series on Food52 :)
Wonderful presentation! Thank you!!
I kinda wanna make this a savory quiche
That looks incredible!!!’
Just made it and it was wonderfully fun and turned out so great!!!
Oh my gosh, I am going to make this this weekend! Looks incredible!
I made this and it was amaaaaazing. Definitely my new favourite thing to make and eat. Thank you!!
I could listen to you all day! You’re so awesome thanks for the great recipe
Oh my god I literally have to make this good lord. That looks incredible.
LOVE!
Can't wait to make this ! Also your dress is so lovely 😍
THIS LOOKS SO GOOD
Love this pie😊
Totally making it on Saturday 🤤
Her hair is beautiful
Just watched the Food52 recipe, this is the perfect dessert to go with the squash risotto!
This was so therapeutic to watch! Might actually do it out of self love
Brilliant!
Gonna have to make this one 😊
This was the most adorable video I've ever seen on this channel.
I see Samantha, I click.
Thank you.
This looks so good 🤤
I was just looking for a good way to use my raspberries! Whoa.. quit reading my mind, Bon Appétit! 😆
I made this recipe so many years ago and it was so easy and tasty 😋
Different and looks wonderful but I'm sure tastes even better. My kind of dessert and I'll make it tomorrow after the dough thaws ! YUM
Shes great.
she is gorgeous
Pie lady: Bees Plants Pollen Vanilla
Also Pie Lday: It's magic ✨
This is my new go-to “looks fancy, but so easy” dessert!
PS - where do you get all your beautiful dresses, Samantha? I love them!!!
I remember that episode of Peewee’s Playhouse! Just love your videos! 🥰🥰🥰
Mmmm!
deeeefffinitely gonna try making this; maybe take it all the way to baklava territory by adding pistachios/walnuts!
I wouldn't go for custurd and pistachio.Better keep it simple, some fruit and custurd is just fine!
😋😋
You are so beautiful and magical. You blum my heart watching you. You are a vanilla bean. Your dish looks so beautiful and delicious! Totally going to make it, thank you!
I'm gonna try walnuts and apples in mine cinnamon and cardamom
She’s very pretty!🥰
I need someone to love me like she love pheelo
I sooo wanna try this! If I were to zest an orange/lime/lemon would that just go stirred in with the cinnamon part before cooking custard??
Yessss! Absolutely, do it along with cardamom or cinnamon and bake it in the same way. You might also want to use some citric extract as a replacement for the vanilla just to bring out layers of the same ingredients. You could also add some zest just before serving or right out of the oven, so at to not let it get bitter! :)
@@amritg6349 to avoid the bitterness, theres also infusing the cream with citrus rind before adding it to the custard
@@9gagHasMySoul yesss, you could do that too! I find that adding any citrus component to dairy is just a risk and you might end up with buttermilk, as the milk might start curdling. So do keep an eye on that :)
Oooo!!
Oh true.
Imagine a nutella drizzle
Demeter really thinks she's slick hiding in this form huh. Thought we wouldn't notice if you hid in plain sight!
Paul Hollywood said it’s easy to make 😂
I want this with rhubarb so bad.
Custard: How much milk? Cup? How much sugar? Cup? Half cup? How much heavy cream? Cup?
where is my ice cream
Can you really fit 10-12 sheets of phyllo into an 8 inch pan?
🤤😩
She's so sweet
You can make phyllo that thin (pulling by hand or using rolling pin) and it is much better tasting ofc when made by hand. When in rush, store bought is ok, but nothing beats pie made with hand made phyllo (savory or sweet).
Will for sure try this recipe, looks yummy.
Stop it
@@simplypaul8681 ?
Has anybody made it yet?
Anyone know what the Greek dish is? That this is a take of...
it says in the description box, Galatopita
Noti Gang
🐧🐸
She should be drzzling the butter on the filo sheets, not brushing it onto them (to avoid rips amongst other things)
So, I am really confused. Why is she baking it for so long if she hasn't added the custard yet? I've heard of par baking but I honestly don't remember it ever going 20 minutes it seems overly long.
I think it's so the pastry gets crispy before she adds the custard.
Want Claire back.
I get that this being a dessert, you relate it to Claire, but Claire has her own channel now and posts more than she ever did with BA
Seems a little unfair to Samantha to be commenting like that but I guess whatever floats your boat ¯\_(ツ)_/¯
@@ltdtoo5 I want Claire bickering with Brad
Does anyone know where the original crew has gone ? I miss them so much
Cancelled by woke mob

9:28 of making excuses about making phyllo no hate btw just funny
beat me to it
10x? Why can’t food people ever just call things what they are? It’s powdered sugar girl.
Idk why you're so pressed about this lmao. Just be glad you learned something new lmfao
You don't have to talk with your hand or whether your body
Hello my name is phyllo 😳
I see they finally diversified the BA staff.
"Samantha"....wouldn't want anyone to think you're Indian with the gold jewelry and dress....
Not everyone names their children consistently with their ethnicity. Also not everyone expresses their culture the same ways, especially those who are mixed or raised in different places.
Weird
So... you think her name is some kind of evasion? I guess we could say the say for yours.
@@kimhesketh2016 No one uses their real name on YT, yes its a nickname.
Well the OP @MartyisGreat2020 sounds pretty ignorant. But I will comment anyway🙃. The reason she is called Samantha is probably because she is Christian. It's not uncommon for Christians all over the world to be given English/ Portuguese/ Dutch sounding names, though they may be of different ethnicities. Because, yeah colonization. That did happen. Also going by her surname, she is Sri lankan, not Indian.
So icing sugar isn’t cool anymore we had to change the name to 10x
