  • Join Carla Music in the Bon Appétit Test Kitchen as she makes BA's best banana bread. Here at BA everybody has their favorite banana bread recipe. We made every one-14 to be exact-until we came up with a collective favorite. Dark brown sugar is key and a dollop of mascarpone makes for superior tenderness. Walnuts optional but encouraged.

    here's the ingredients
    1½ cups all-purpose flour
    1¼ teaspoons baking soda
    ¾ teaspoon kosher salt
    1 cup (packed) dark brown sugar
    ⅓ cup mascarpone, plain whole-milk Greek yogurt, or sour cream
    ¼ cup (½ stick) unsalted butter, room temperature
    2 large eggs
    4 large very ripe bananas, mashed (about 1½ cups)
    ½ cup chopped bittersweet or semisweet chocolate (optional)
    ½ cup chopped walnuts (optional)

    Carla! I just made this! I didnt have a stand mixer(used a hand mixer, my hand hurt but it got the job done), and I also used tiny loaf pans and knocked out four mini loafs of banana bread! It turned out absolutely perfect! The last time I made banana bread was freshman year in culinary. This was somuch better!! I love yall at bon appetit!!

    I just made this recipe, actually I made a triple batch and cooked all three at the same time. It was absolutely delicious. I used plain organic yogurt. I did add a teaspoon of vanilla to this recipe though, so it was a tablespoon for the triple batch. I also used a little more than 1-1/2 cup bananas it calls for because I had huge bananas so I measured them and it was closer to 5-1/4 cups for the triple batch (1-3/4 cups each). I coated the top with the turbinado sugar similar to the "Sugar In The Raw" Carla used and it made an awesome semi-crunchy texture to the top. I used some Ghirardelli semi-sweet chips in one of them because it sounded so good and it did not disappoint either. Everyone including myself who has tried this banana bread has said it is the very best they have ever tasted. I'll be making more at Christmas time. So easy and so good. Mine took about 1 hour 20 minutes to cook and it was Moist (capital M intentional).

    My favorite dessert to make ever:
    -Broil a slice of buttered banana bread in the oven
    -Add a scoop of French Vanilla ice cream
    -Coat with homemade toffee sauce (very easy to make)
    -Sprinkle with candied bacon
    -Profit

    Made this about 2 months ago. Only had light brown sugar and used sour cream and it was wonderful! Making it again today. This time I have dark brown sugar, still using sour cream and this time on top instead of white sugar I sprinkled some Ceylon cinnamon with brown sugar on top before baking however I don't see how it could be any better than the first time I made it. Thank you for a wonderful recipe!

    I made this last month, like right when Quarantine started, and it turned out beautifully. I loved adding the sugar in the raw on top. It gives it such a sweet crunchy texture on top.

    I made this. It's excellent.
    If you have molasses but don't have dark brown sugar, don't fret!
    Adding about a tablespoon of molasses to one cup of white sugar or about a teaspoon and a half to a cup of light brown sugar will give you the same awesome flavor and won't affect the moistness of the final loaf. Also, don't worry about getting little pockets of molasses in the final product, by the end after all your mixing is done, the molasses will have fully incorporated into the batter.
    If you really wanna make sure the molasses is incorporated though, pulsing the sugar and molasses in a food processor will incorporate the molasses fully into the sugar. I don't recommend this though, because it may also break down your sugar crystals and that might make creaming your butter unnecessarily difficult.

      Same unless it's an Apple Banana which is a type of banana grown in Hawaii (and Philippines and Southeast Asia) that are smaller and more tart and firm like when a regular banana just barely turns all yellow (they are not the same as other small bananas with just a different name, they are their own type). I can't get enough of Apple Bananas and even when they are brown on the outside they are still firm and not at all mushy liked regular bananas. They make the BEST banana bread and if you ever are in the Philippines, Hawaii, etc. definitely try them.

    Yesss!! I grew up with The Fanny Farmer cookbook and putting cream cheese on banana bread too!! I usually add vanilla extract, cinnamon, nutmeg, and cloves to my bread though - it really takes it up a notch! 😍

    Great ,Carla made this to your exact method and ingredients ,before today I always added a pinch of cinnamon,and 1/4 tea of van extract, this recepie is so much better and not as sweet with just the brown sugar,nice addition to the top! Thankyou,great episode,your one of my faves!

    I’ve made this 3 times since the start of quarantine (lol) and every time it comes out perfect!! It’s best to serve this the day after baking, idk the science behind this but the flavors are amplified but completely complements each other

    This really IS the best banana bread ever, freezes beautifully and that little crunch of sugar on top, especially when you reheat it, is wonderful! I’ve been buying ripe bananas, anticipating the next batch (2 loaves at a time is just as easy), which I’m making NOW! Yum!

      Here is one tip similar to cream on banana bread. Next time you eat icecream sprinkle it with cookie crumbs. This literally elevates it to some michelin star level.

      Plain fresh banana bread is great alone, but butter and cream cheese are just nice for variation and elevation. I often toast it with jam and/or peanut butter for something more 'substantial', or toasted with ice cream and syrup for a dessert treat.

      Nutella on banana bread 🤯 Not all the time but sometimes... when you've had a hard day. Warm banana bread, a little nutella, maybe some whiskey (if that's your thing) to wash it down. I'm gonna pretend I had a hard day today.

    Mother of gods! If this is what banana bread is... I have never had banana bread before. Holy moly this turned out so perfect. I halved the amount of sugar because I can't handle sweet, and hoooooooboy did it ever turn out fantastic. 12/10 best banana bread recipe ever, hands down.

      If you halved the amount of sugar, you made a completely different recipe. Sugar has a big impact on the final texture of baked goods. No hate - just not the same recipe.

      MetalChica7 you totally can. It will affect the taste a little, because brown sugar has a more rich caramel molassesy flavour, and white sugar is just one-note sweet, but if your bananas are nice and ripe, it should turn out great either way.

    Made these over a dozen times, even before covid. I’ve been making them as banana bread bites (like with the mini cupcake pans) with mini chocolate chips and walnuts, and out of the oven in 12 mins! Delish!

    It's been a while since I've made it, but if I recall correctly this is VERY similar to the recipe we used at my house growing up. Warm banana bread with melted butter...perfect! I never met anyone else who liked it like this. I'm not alone! This and my great-grandmother's apple cake are my fav loafs.

    I made this today and it's DELICIOUS. Probably could have done with five more minutes in the oven, but still very good. I included walnuts and choc chips and it worked very well.

    Omg i finally found the recipe for banana cake or bread. I been baking a ton of it using different recipes n wasn't happy with it. Finally i baked using this recipe yesterday n it turned out like a gold bar. Everyone loved it. It be up on my menu soon with a little modifications. But super yumms. Tq so much

    Ive used this banana bread recipe (mascarpone instead of yogurt and add in chocolate chips) for 2 years now and it truly is THE BEST.
