1 lb 80/20 ground beef
1 lb ground pork
1 box Boursin Garlic and Herbs
1/4 cup diced parsley
1 bell pepper diced
1/2 large onion diced
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle. - Zábava

I made this last night and OMG! Best meatloaf I have ever tasted and I actually made it! Amazing! My wife loved it. And by the way, I hate sour cream but you said take your word for it and you were right. I think the secret ingredient in the Boursin cheese. And cooking it on the wire rack was ingenious. I also used the pork with the ground beef. It was perfect. Thanks for sharing! You are helping me look like I know what I'm doing in the kitchen!
My step dad used to hate meatloaf until I made mine. Took 65 years and a great recipe for him to come around 🥰 yours looks good too but my grandma taught me to use ritz crackers instead of bread crumbs
i used to always use Ritz, but recently just started using Stove-top in its place, hands down best meatloaf filler!

A little tip to elevate this recipe is to sear it in the broiler first. When seared first it will allow the glaze to stick to the texture. After you're sauced up, slightly caramelize under broiler. Glaze again then bake until finished. Turns out with a nice glazed crust and juicy inside.

Matt I am so glad that you actually know how to season food. I see so many cooking videos that have like 2 lbs of meat and they will put 1/4 tsp of salt to season. The food just has to be bland which is criminal.
Looks delicious! I've made a cheddar cheese meatloaf like my mother's, lowfat turkey meatloaf with chicken & wild rice as a base and just experimenting on others. My grandmother made an out of this world meatloaf when I was 12 and I've never been able to replicate it. If we go out to eat and meatloaf is on the menu, that's what I get.

Exactly! This recipe looks delish! learned a long time ago when fixing meatloaf that sautéing the veggies first makes a big difference.
This recipe is phenomenal. Best ever. I took my leftovers and diced it up and then mashed it with a potato masher. Added mustard, horseradish and some tomato paste, salt and pepper and turned it into a type of pate. Great on bread with melted cheese, especially with little party pumpernickel slices for the holidays. Thanks for the great recipe. God bless.

I recently tried this recipe. I can attest to the deliciousness of this recipe. I am a southerner and usually eat my meatloaf with gravy. Also the sauce is awesome. My husband bottled it and is looking for things to put it on. You will not go wrong with this.

I made this last night! I was scared cuz it was so far from how I usually make meatloaf, adding sour cream felt weiiiird. And the boursin cheese in my area was about $7 so I was praying it was worth it. Man it delivered, it was full of flavor, held together well, and made my kitchen smell amazing. It looks great and the list of ingredients sounds like they make a tasty loaf but I have to comment on your mixing technique. You're not alone, most people do it wrong.
First, use a cookie sheet, not a bowl.
Second, break apart the meat(s) by hand into smaller pieces and spread them out, making sure you're blending the two meats.
Third, in a separate bowl thoroughly combine all the other ingredients except the breadcrumbs. Then pour the mixture over the meat.
Fourth, sprinkle the crumbs over the meat and wet stuff and *then* gently work through to combine.
Then chill, form into loaf and bake.
Your method means you're mixing the meat at least four times; my method mixes once. And the more you manhandle ground meat the tougher it gets.

I have to agree - - I kind of thought it looked like it was over mixed also. Over mixing compacts the meat too much and makes for a less tender loaf.

That's a beautiful meatloaf, definitely going to try that. I make mine with all the same stuff except I don't use the BBQ sauce. I use a large can of hunts tomato sauce and I add half of it inside the mixture and the other half on top for the last half hour of cooking it. Makes for a delicious moist meatloaf as well. Looks divine! My Mom always used crushed corn flakes instead of bread crumbs as a binder, but I like to use crushed saltine crackers. She made her topping from tomato sauce and brown sugar. I use tomato paste, brown sugar and ketchup. I love a good meatloaf sandwich with the leftovers. Thanks for sharing. I’m going to try your recipe.

I made this (without barbecue coating) and it was a big hit. My husband likes his plain with beef gravy and we like it coated with ketchup. It was terrific. I had a hard time finding the Boursin but think it made a huge difference, that and the sour cream. I will make it with the barbecue sauce next time to see how it turns out.

That Meatloaf looks delicious. Instead of using ketchup I use French or Russian Salad Dressing. Yum Yum. Now I want Meatloaf for dinner.

Just my opinion... Since I don't eat pork, I replace that with ground lamb with the beef. Secondly, I've used bread crumbs in the past, but to me, it makes the loaf "gritty", so I go back to old school and use crushed Saltine Crackers. I do cook my loaf in a glass, pyrex dish which still gives a great crush, but also keeps all those spiced juices absorbed into the loaf. Lastly, I just use Sweet Baby Ray's BBQ sauce to candy the top. No need for mixing extra ingredients. Serve with xtra sauce if needed. Yet, essentially the same. Good stuff!
Sweet Baby Ray’s is the best barbecue sauce ever made imho! I first saw it in my local grocery store, thought I’d give it a try and am I ever glad I did. (I buy the plain sauce as we have those who don’t like spicy or hot flavours; my son adds hot red pepper flakes to his own plate.) I prefer crushed saltine crackers in my meat loaf over bread crumbs but to each, her own. I’ve never tasted ground lamb before, I will have to give it a try. We usually serve Boursin with crackers at parties. They sell it at Costco if you're in the US.

I made this meatloaf yesterday and it was great! I used 90/10 ground beef instead of the 80/20, only 1 cup of homemade bread crumbs, and omitted the 1-2 tablespoons of garlic, but that's just me. Thank you for sharing this recipe.

To make a low carb meatloaf, I like to use finely chopped mushrooms as a substitute for the breadcrumbs. It's awesome!
You can also use ground up pork rinds.

You out did yourself, this meat loaf is delicious. I made it exactly the way you did just minus the red pepper flakes. It's moist and flavorful not greasy at all. These freeze beautifully. I have even made them into individual mini loaves, meatloaf meatballs, even stretched them out into the length of a bun for easy assembly and plenty seasoned glaze and crunch crust. This is recipe is definitely going in my keeper box.
