HAMBURGER STROGANOFF
1\2 stick butter
1\2 c. minced onion
1 lb. hamburger or ground venison
1 clove garlic, minced
1 tsp. salt
1\4 tsp. pepper
1\4 tsp. paprika
1 can mushrooms with liquid (optional)
1 can cream of mushroom soup
1 c. sour cream
parsley & chives
Sauté onion in butter until brown. Add meat, garlic, flour, and spices. This would be the point where you can add the mushrooms. Cook until meat is just barely browned. Add soup and simmer for 5 minutes. Stir in sour cream; sprinkle with a pinch of parsley and chives. Serve over rice or noodles.
MILE HIGH BISCUITS
2 c. flour
4 tsp. baking powder
1 T. sugar
1\2 tsp. salt
1\2 c. shortening
1 egg
2\3 c. milk
Sift together dry ingredients. Cut in shortening. Whisk egg and milk. Pour in all at once and stir until dough follows fork around bowl. Turn out onto lightly floured surface and knead 5 times. Pat out to 3\4 inch thick and cut into 12 squares. Place on ungreased light colored baking sheet one inch apart and bake at 450 degrees for 10-12 minutes. Serve warm with soup or drippy fried eggs.
SIMPLY-POTATO CASSEROLE
1 1\2 c. milk
6 T. butter
2 pounds frozen, shredded potatoes
2 T. dried minced onion
salt & pepper to taste (use plenty)
freshly grated Parmesan cheese + a little extra cheddar
In a large saucepan, bring milk and butter just to a boil, then stir in remaining ingredients except cheese. Mix well. Put in greased 2 qt. casserole; top with cheese. Bake at 375 degrees for 45 minutes. After 30 minutes loosely cover with foil (just lay the foil over the dish). Mine was very golden brown on top and a little browned around the edges. This was so good for such simple ingredients.
SPINACH SALAD
Spinach
Sliced apple (dried cranberries would be so good, too)
Green onions
Crisp bacon
Cubed jack cheese
Dressing: 1\4 c. olive oil, 2-3 T. white wine vinegar, 1 tsp. sugar, 1\2 tsp. dry mustard, garlic salt and pepper to taste. Shake hard. Serve over salad.

Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 8 - 24. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

Awe Jennifer gave a shout out to this community ~ how sweet. This is the best CZcams channel and I really do love reading the other comments. I've learned a lot and gotten some great tips. Thanks for the video, Jennifer, I love the meals of the week videos you do. That salad looks so yummy, going to have to duplicate that soon.
I agree....
You're the best! The salad was so good. I wasn't sure about the thinly sliced apples, but that really added to the texture. And the dressing was very zippy.
I love Maria's reaction to the sneakers lol
Yess!😊
Jennifer these meals looked DE-LI-CIOUS!😋😋That stroganoff is on the menu for Friday!!😋 I Really enjoy your content and appreciate all you do into Continually making Relatable Enjoyable content!💕💕
You are a brave woman cooking in your new white jacket! So many great meals here. That spinach salad does look delicious.
Jennifer- I can’t tell you what a blessing your frequent recent uploads have been. I’m in bed with Covid feeling pretty miserable, but your videos are to sure to cheer me up. Thank you! Kim from Philadelphia
Oh Kimberly I hope you get to feeling better quickly. I'm hearing of more positives again.
I agree. I listen to Jennifer at all different times a day, from 4:30 am on...
I hope you recover quickly and feel better soon!
Growing up, my dad owned a specialty cheese store Cheddar's Wheel. They had a soup and sandwich special every day for lunch. There were homemade breads too. It was next to my mom's store, The Needle Nook. 🪡 Back in the 80s when malls were cool! All the rage. My parents were gems and I definitely owe my love of good cheese to them. Anyway, all that to say they still swear by the old style adjustable wire cheese slicer. I love mine too. ♥
I have a wire cheese slicer, but the wire is broken (has been for quite some time) and every time I go to the cheese factory I forget to buy a new one. They keep them behind the counter at the cash register. Out of sight, out of mind. I bet you spent a lot of time at the mall.
Man, that sounds like a dream childhood 😊
I love to see your meals and especially the way you serve them. It’s interesting to see what each child likes to put on their plate. I can tell you love feeding your family, me too! I won’t know what to do when there’s an empty nest, but then there’s always grandchildren, right!? 🙂
You can do what my mother in-law does, cook a lot and tell people to come and get it!😂😂😄
@@RunninUpThatHillh haha! I do that a lot!
@@tamwillie2039 You are our favorite type of family member :D

Wallaceburg here 😊 I agree with what you said. I look forward to each video. I love the day in the life videos also. The rural area here is so different to where Jennifer lives.
Good evening Jennifer,
Love watching what you feed your family. You did a fabulous job stretching your money for the bang on that ham, love it. ❤👍
I'm always happy when I see a new A Country Life video up.🙂 Thank you for another great meal video!
Wow, it all looks so good! I am going to have to make that salad soon. Love all your videos, especially the cooking! Thank you for sharing!
Everything looks so good! You can thicken your soup with instant potatoes,we always have grilled cheese with our potato soup, salad looks delicious 😋 yummy.thank you
That sounds like a great combination.
Hi; Sandy here, I always make Grilled Cheese W/ my soups too! Nothing like dipping the tip of the triangle into my soup. (Yes, even @ my age I still slice on the diagonal), my grandkids even tell their mom (my daughter) she forgot to cut it like Grammy does or it won’t be right! That Ham & Potato Soup looks soo…. Good!!! I like to add cabbage too ( like you, I use what I have on hand). Your making me think, I need to get on my soup kick (I Love it, doesn’t matter what time of year). Ham (lunch meat)w/sliced tomato grilled cheese), Or a garden fresh sliced tomato sandwich slathered in mayo, s&p, toasted or not (depending on my mood) now you’ve got my wheels turning! Thanks for sharing, I Love Your, “What we Eat in A Week”, too! They all look so good, along with reading the comments. Thank You All for Sharing. See Ya on the next one. -SANDY-

What a yummy week of food . Loved it . Enjoyed it .
Jennifer, I use cream of chicken instead of cream of mushroom in my hamburger stroganoff and it is delicious. Thanks for all the videos!
Everything looked absolutely delicious.

I loooove your meals of the week videos!!
So do I!!😋😋
Watching the stroganoff night and seeing everyone dish up their plates, I kind of chuckled and said that is definitely Maria's plate (4:06). Lol. Your family meals give me inspiration for meals for my son and I. Thank you!
Always look forward to your videos, Jennifer. Love your cookbook & can't wait for volume 2 to be released. Can you demonstrate the Emily's biscuit recipe you mentioned in the video?
Biscuits look really yummy. My mom always just cut hers in squares. She would prick the tops with a fork I guess to make them look fancy.
Going to try to make the salad, it looks yummy. Thanks so much for sharing.
Hope you enjoy it. It was so fresh tasting.
Great video...
Loved sll the meals!!! I never knew ylj should not open the lid on the crock pot while cooking.
Jennifer, sometime w your Kluski noodles, boil them per instructions ~ drain ~ put back in the pot and add 1/2 -1 stick of butter (depending on amount of noodles you made). Then add about 1/2 to 1 cup of seasoned bread crumbs and mix well. These are so so so so good!!!!!!
Everything always looks so good. Thanks.
So nice of you to say Billiejo.
just love your videos , please keep on sharing .
The steak bites and the spinach salad look like the hit of the week
I just love all of your videos
Thanks for the food inspiration. Your kids sure do get a lot of compliments on here but I think you’re gorgeous, you feed your family well with love, and you make great videos! 👍
Spinach salad looks delicious. 😋🥓🥗
Thank you so much for sharing more yummy recipes and ideals and a glimpse of the young ones being surprised with gift box. Take care and keep making memories. God bless 🙏
Glad you like them!
Your meals always look delicious, think I'll come for supper!!
Sure thing!
I just love you and your family! 😍
You're the best!
It may be helpful to place a dishtowel under your cutting board it helps it not move so much.
New to channel I purchase a cook book just love will be trying the recipes try the all bran bread was great thank you
Awesome! Thank you! I'll ship it out right away.
I love salads with apples and anything with bacon is wonderful!
Bacon makes it all better.
I would like cookbook and will try to remember to get check in the mail tomorrow. All of these recipes tonight look fantastic. God's blessings....:)
Hi 👋! Thank you for another divine video...sending love❤
You are so welcome. Have a wonderful evening.
I have a knife that the blade has ripples in it so when you cut potatoes, cheese, i.e. nothing sticks...love that knife. Everything looked so tasty...
Those cookies look wonderful
I can't get Kluski noodles where I live, but when I lived near Chicago I got them all the time.
Loved the choice of music today with your cooking ;)
Thank you 😋
GREAT vid gurl !!
Good morning everyone happy Tuesday morning and I just wanted to say that your vlogs is sooo beautiful I loved your channel and you are amazing Supporter and I'm proud of you
When I'm making bacon crumbles I chop it up before I cook it. Then I can put it in my cast iron on medium heat and just give it a stir now and then while I'm doing other things. It's easier than watching bacon.
It all looks delicious .
Thank you Brenda.
We were anxiously awaiting to see who won American Idol too ;) Everything looked great, as it always does. I made a cranberry orange loaf (actually in a bundt) and shared on my WFD video that went up today & I thought of you. I'm sure you've made plenty of them in your 'cranberry' day =) This one is my MIL's recipe and so very delicious. Your cranberry cowboy cookies made me think of it. I would love to try those.
I love your videos always.. ❤
Thank you so much 😀
Try marinating the venison loin in 2 parts soy sauce and 1 part worcestershire sauce. Don't marinate more than 2 hours. Then wrap it with the bacon. Cook it like you did or grill it. Delicious
Jennifer how do you make the half baked potatoes you were making in this video? I think that was the name you said! Thanks
Great video ☺️
Thanks Christie.
Thank you so much I will make the Hamburger Stroganoff tomorrow night so thanks for the suggestion. I love you're channel and everything you do. Thanks for supporting my channel I was surprised I have a supporter since I have not had the time to make utube videos, maybe sometime in the future. I mainly watch others who do it and maybe it will give me some insight into what I should do for my channel. I hope you enjoy seeing what I like and save I enjoy everything you do and thanks again and take care!
Those bacon wrapped steaks looked so good! I love your cranberry muffin recipe!
Thanks so much! 😊
As a country mom ( my children are all grown 😢), I say, thank goodness for potatoes!! 🥰
Ps…Everything looked delicious!!
I’m soooo hungry now! Your food isn’t always amazing. You are so blessed to have all that good venison. I miss it...
Your lilacs in the white vase are so pretty on your counter.
Thanks for all of your videos. I thoroughly enjoy and look forward to them.
Thank you so much 🤗
Sorry for the typo! Lol your food IS, IS, IS always amazing! It’s spell check. I’m a little challenged with computer and use to be able to edit and now can’t on ipad. Keeps making me resign in... ugh! Anyway, hope you didn’t take that as it was written.
What temp do you cook the half potatoes?
Your meals looked delicious. I wish I could be more creative. My guys have to have their food soft so it limits on what I can make
Everything you made looked Awesome, we don't do our venison like you do but love it either way. I haven't had venison in a long time because I can't afford a license, but sure do miss it.
Those licenses sure are going up. It's unfortunate because it's pushing a lot of hunters away.
I know that Kidpicks don't fit Joe, but have you ever made him a box to open with Maria and Peter? It would be wonderful to watch him open it with the other kids.
@topcat 8888. The kids put together a "kidpicks" like box for Joe. That was one of the sweetest videos ever. He was so excited. Even better was how excited the other kids were for him. Makes me tear up a bit just remembering it.
@@lindaray8352 Oops...I missed that vlog. Sorry!
@@MrTopcat3333 nothing to apologise for at all. I love that all of us feel so protective of Joe and I have a feeling Jennifer does too.
Jennifer the Flowers are beautiful and i love way you talk to Chickens 🐔 and your dinner looks wonderful You are a wonderful cook much love ❤️ 🙏🏻✝️☮️📿❤️💜💕🌷💗🌹🥰🇺🇸

Hi Jennifer, thank you so much for the awesome videos. Do you know if you can ship your cook book to New Zealand yet please?
Yes.
@@acountrylife awesome thank you so so much. I am from Scotland but living in New Zealand where good old fashioned cooking is not that fashionable. Your channel has given me some ideas as I am a passionate cook but find it tricky to get the ingredients for a lot of meals.
i'm going to make the potato casserole for our dinner tonight. I'm going to grate fresh potatoes though as you can not buy frozen shredded here in New Zealand. fingers crossed it will come together well. (Sue)
I'd love to know how it turns out. Shredding a few potatoes is definitely cost effective compared to a bag of hashbrowns.
@@acountrylife It was a hit! I squeezed out the juice from the grated potato and added it to the milk and butter, Instead of using the dried onion i added in a dry onion soup mix which balanced the seasonings well also added some dried parsley and it was delicious along side of meatloaf and vege.
Thanks!
Heather!!! Oh my goodness; thank you so much for your generosity. Have a wonderful night!!
@@acountrylife your family is my favourite channel to watch on CZcams and im from Canada and have wanted to support your channel for a long time. I was hoping to order a cookbook soon. How much approximately is shipping to Canada?
I believe it's an extra $7 on top of the $4 shipping added on at checkout. Buyers PayPal me the extra. Thanks!
@@acountrylife I purchased the ebook so excited for book 2. Made your cake mix cookies tonight!!!
@Heather Woods thanks for letting me know that the ebook worked for you. A couple people had trouble.
How do you like your Lodge cast iron pot? I've been wanting to get a heavy, enameled cast iron pan. I like the price of the Lodge pots, but was wondering about the quality.
I really like mine and use it a lot. The enamel is quite stained, but still performs well for me. I've heard from another CZcamsr that they don't like how the bottom curves upward and prefer their other enameled cast iron that has a big cooking surface and the sides go straight up. I have a 7.5 quart and 6 quart and use them both often.
Hi Jennifer. Who did you hope to win American idol? I thought Hunter Girl. But I was ok with Noah too, lol. Jennifer, I started watching this you tube channel called, "Frum it up". The lady, named Sara, is a really lovely woman who is Sephardic Jewish. She seems to be a really creative cook. Her salads look delicious. She has a flare for combining things that really come together nicely. I really want to try that spinach salad you made though. If you get the chance, you should try to look her up. She has me hooked, lol.
My first choice was HunterGirl, but I thought Noah was great, too. Thanks for the recommendation; there are so many great channels out there that never pop up in my feed.
I LOVE your half potatoes. Hope instructions made it to cookbook #2. I had to go back and watch a video last year because I coudn't remember what you said. . Ummm any full disclosure on why that can of cream of mushroom soup is "palenty of mushrooms"? LOL
Mushrooms could go away and I'd be ok with it.
😁
My mom was a beautician and the only night she worked late was Thursday. All through my childhood my dada made hamburger gravy with raw fried potatoes! Still can't eat hamburger gravy to this day, I am 55 years old.
After that many times, I bet he had it down pat. Sorry you had to eat it one too many times.
I loved hamburger gravy so much growing up that I chose it for my birthday dinner every year!
Every time I see a chicken run it makes me think that they’re wearing those big fluffy dresses from the 1800’s. It’s silly but in my mind that’s what I see. A lady holding her dress and running.
😝😝
How come joe didn't get a clothes box again only mariaand peter
Oh! Jennifer mentioned about that a few months back. Joe has gotten more into young men's sizes, and that particular subscription is for younger kids. She makes up a box for Joe herself every so often! He was so excited with his very own box last time Jennifer filmed it. 💗
Sherry, Rachal is a trusted member here and she gave the exact answer I would have.
Rachal, you definitely pay attention and answered exactly as I would have. Thanks.
@@rachalnocchi5600 ❤️❤️💯❤️❤️
Your hair looks darker. Did you hear about the Wisconsin couple that shot a black bear that busted their window and came in their house and attacked them. I think they were in Medford.
Why dose Marie eat so little
It all depends on the meal.
When I was growing up we weren't allowed to serve ourselves, everything cooked had to be tried. And if we ate all on our plate, it was okay to ask for seconds but, they couldn't be wasted & had to be eaten. We weren't allowed snacking between meals either. I think these rules stem from my parents coming from large families with many mouths to feed. Other side of this; I'll never forget the time I was left to sit at the table because I wouldn't eat liver & onions. My mother never made it again after that difficult & trying episode & I still won't eat liver. 😒😁
