    Our Girl Scout troop here in Alaska, USA chose Brazil as their country to represent at the World Thinking Day for Girl Scouts/Guides. The girls made brigadeiros following your recipe and technique. The 11 9 and 10-year-olds made over 300 of these wonderful treats to serve at the event. They were the hit of the day. Each and every batch turned out perfectly, no matter who was at the stove. Thank you for sharing your recipe and idea for using the large non-stick skillet. It is worth 5 stars!

    I love these so much! My sister in law hostessed a family of exchange students from Brazil. One high school student would spend a year here and then the next one would come and so on. We all got very close to them over the years and we still see them every few years for holidays. This is how I was introduced to this yummy candy. Thank you for this video!

    If you're wondering whether or not to make these, you don't have to. Tis is my 7th time making them😁😅! I follow her instructions exactly and they turn out PERFECT each time! This also works with fat free condensed milk, it just takes a little bit longer to thicken AND to cool for rolling😉

      So glad you found us here! I tried the Trader Joe’s ones and the difference is theirs must have a touch of instant coffee added to their recipe. You can add to yours if you want. Just make sure to not add too much. Ours (as any traditional brigadeiro recipe) only contains cocoa powder. Enjoy!

    I've been wanting to make these for a while but was trying to get a heavy bottomed pan because I had been told non stick is no good for making Brigadeiro. I am so glad I found your video! My daughter and I are making them tonight. Thank you!! xx

    Love making these, I was introduced to them when I lived on Guernsey and a friend who had lived in Brazil made them for me. I am actually this week making 300 brigadeiros for a project my church is doing. I am wondering how many brigadeiros one tin of condensed milk can make?

      So glad to hear! A 14 oz (about 396 grams) tin of sweetened condesend milk yields about 14 brigadeiros if you use a TBSP as measurement. But for parties or large get-togethers, we use a TSP (teaspoon) as measurement in Brazil which would yield about 28-30 brigadeiros per tin. Yes, we make smaller brigadeiros for large parties. If you are making such as large amount, I suggest you use a large non stick pan (wider, not so deep) to cook them faster, otherwise you will spend a long time stirring them while cooking. You can make them in batches of 2-3 tins at once. The more spread out the condensed milk is into the pan, the faster it cooks. Please do not use a pot which is deeper or your arm will be useless at the end of the cooking process. Well, enjoy and have a great get-together.

    Dear Denise! I want to congratulate you for such wonderful video which helped me a lot. I am Russian living in Mexico city, and 2 years ago was needed to cook brigadeiros for school event. I saw many videos and recipes, but yours i really loved. My brigadeiros were very good from first time i was cooking it.     I want to try this but I don't have a non-stick wide pan... All I got is aluminum ones. Will it still work?

      Hi Patricia! It will work but you have to cook over medium-low heat and stir constantly. It will take more time to cook if you don't mind, but you can get great results. These tips are to make them faster and without the risk of burning before achieving the correct consistency. I hope you try and come for a feedback.

      You omit the cocoa powder and add 3-4 tbsp milk powder. Make sure to whisk together the milk powder and condensed milk very well before starting cooking.

    I made a new batch of Brigadeiros today following your technique. I have the perfect pan to cook them in, and everything went according to plan. They turned out great! I just rolled them and they're a little bit soft. Will they firm up as they cool more?

      You had to wait for the brigadeiro dough cool completely and then roll it into balls. But since you already rolled them, if after waiting for the balls cool down completely they are still soft, cover them and refrigerate until they are set. Serve them chilled so the balls won't be soft.

Aonde moro nao tenho acesso ao tipico creme de leite brasileiro vc sabe se posso usar heavy cream como substituicao do creme de leite brasileiro?

      Ola, Daniela!!! Obrigada! Sim, voce pode usar o heavy cream para substituir o creme de leite sem problema nenhum. Faz anos que somente uso heavy cream apesar de que eu tenho acesso ao creme de leite da Nestle (em espanhol se chama 'crema de leche' e se encontra na secao latina dos supermercados americanos). Eu somente uso o heavy cream ou creme de leite para preparar brigadeiro mole, do tipo que se serve em copinhos ou se usa para rechear bolos. Espero que eu haja lhe ajudado em algo.       Yes, Tang! You can absolutely use cocoa powder instead of sprinkles. Some people in Brazil cover them with white granulated sugar or sweetened coconut flakes. These are less common then the chocolate sprinkles but they are still delicious. Another option is to use finely crushed toasted nuts such as cashew nuts or any other type. Just make sure the toasted nuts are not hot anymore; otherwise it will make the brigadeiros melt.

      If you freeze them, it can be stored for up to a month. If at room temperature, it is best to consume them within 2-3 days (in this case, store them into an airtight clean container).

    It looks nice and I tried lot of differents ways to make them. I will try this one but I would like to know what is the last ingrediend you added?? It was vanilla extract? ... and unfortunatelly it' is not clear in your video if we need to put in the fridge as usually with a plastic.... or in how many hours it takes cold to make the brigadeiros?🙄

      Hi Mari! The last ingredient is vanilla extract. This recipe call for butter, cocoa powder, sweeteend condensed milk, vanilla extract and of course, chocolate sprinkles to cover them after rolling into balls. If you follow the tips in the video to get the correct consistency, you won't need to chill the "dough" in order to roll it into balls. But if the "dough" is still soft because you undercooked it, yes you will need to refrigerate the dough before rolling it into balls. It takes at least 2 hours to chill before rolling it into balls but I usually don't chill mine. Anotehr thing, if you are making these at summertime, I recommend you use one teaspoon of butter only. The more butter, the softer they may get. Please let me know whether you have any further questions. Enjoy!

    i just finsihed making my third batch of brigadeiros and i only got 15 out of this last batch..why? what did i do wrong?

      Hi Dee! The yield will depend on the measurement you used to make the balls (1/2 TBSP, 1 TBSP, or 1 tsp) and how greased was the spoon and your hands. When I use 1/2 TBSP I usually can get around 20-22 brigadeiros. But there is still a variation because I sometimes fill the spoon to make one ball more than the other. None of my balls are exactly the same size. If you didn't use a spoon as measurement the amount may vary even more. These are the factors that can make the yield from one batch different from the other.

      @@cake3020 mostly yes. You have to make it spreadable but not runny otherwise the frosting will run down on the sides of the cake. If you see my recipe, it takes half-and-half plus cornstarch besides the ingredients of a regular brigadeiro.

      Hi, Urip! Yes, you can make brigadeiros using the chocolate condensed milk. But I think it may take a bit more time than shown in the video to get it cooked. If using the chocolate condensed milk, you can add about 1/2 of the amount of baking cocoa powder stated in the recipe if desired. This will help cook the brigadeiros faster than adding no cocoa alt all to the recipe. Enjoy!!!

      Oi Val! Voce pode usar 2 colheres de sopa de cocoa powder ou ,se quiser, ate 4 colheres que equivale a 1/4 de xicara de cha para um brigadeiro bem achocolatado. Duas colheres de sopa eh suficiente pra mim. Essa receita rende uns 25 a 28 brigadeiros se voce usar meia colher de sopa como medida para fazer as bolinhas ou 14 brigadeiros se voce usar uma colher inteira de sopa.

      We call them 'brigadeiro branco' or 'white brigadeiros'. To make them, follow this recipe but don't add cocoa powder. In Brazil we have many variations of the classic chocolate brigadeiros. The recipe is the same except for skipping cocoa powder and add different flavorings or, fillings when rolling them into balls.

      @@nobinobuz Creme de leite ninho is usually used as a cake frosting. I don't have it on my blog because most of my audience doesn't have access to leite ninho. If you do, here in an easy recipe: In a mixer, beat 200 g (about 7 oz or 1/2 can) sweetened condensed milk for about 3 minutes.
      Then slowly beat 50 g unsalted butter (about 3 1/2 TBSP) until incorporated. Add 100 g (about 1/2 cup) heavy whipping cream and keep beating while adding about 1 cup of leite ninho to the mixture. Just beat enough so mixture is homogeneous and creamy before transferring to a covered container. Refrigerate for at least 3 hours before frosting cake. I hope this helps!

      @@nobinobuz leite ninho is a delicious milk powder from Nestle. The creme de leite is not sour cream because there is no sour cream in Brazil. Creme de leite is related to heavy cream.

    Hi this looks yummy. What is the name of the ones that you eat out of a jar with a spoon. I would like to make those and give as gifts. Is it the same ingredients and you just dont cook it as long.

      Hello, Mario! Please use the same ingredients and cooking process for making brigadeiro in jars. The only difference is: about one minute or so before taking the mixture out of the stovetop, you whisk in (very well) about 3-4 Tablespoons of heavy whipping cream to the mixture. Make sure to obtain a homogeneous, smooth mixture. This will make it softer and able to store in mason jars, similar to Nutella (although brigadeiro mixture will be more consistent than Nutella after cooling down). Let mixture cool completely before placing the lid on the jars. You can even wrap a cute teaspoon on the jars to give as presents. I suggest those jars are small because ,compared to Nutella, brigadeiro is quite sweet. Lucky people those who will receive the brigadeiro jars. Thanks for stopping by!

    Hi, I'm from Indonesia and I've tried once making this sweet.
    But, I didn't get the mixture right. I rolled but it's too soft and lose. Then I put it in the fridge and became hard. I want to try again and do you have a suggestion for me? Thanks

      Hi! If it was too soft it is because it needs to be cooked longer. If you cook it longer enough, they can sit at room temperature without problems. They will be perfectly round and fudgy.

      Hi! The cooking time will depend on the type of pan you use as you can see in the video, if you make a simple or double batch for example, if your burner is large or small, and even on the quality of your sweetened condensed milk. The brigadeiro "dough" is ready when the mixture has thickened and, as you can see in the video, it is not runny anymore when you pass your spoon through. Let it cool completely at room temp and then you roll them into balls. I hope this helps! But if it turned into a pudding don't throw away. Eat it by spoonfuls. That is what we do in Brazil where we call it brigadeiro mole (or softened brigadeiro). It is actually a pudding-like dessert served into shot glasses that graces party tables (birthdays, baby showers, and other casual parties). If you would like to, stir in a shot of heavy cream to make it softer like a pudding but not as sticky as a fudge. ;)

      You use the same ingredients and make the same way as the truffles here from the video. The only difference is as soon as you finish cooking the brigadeiros, you remove the pan from heat and stir a little bit of heavy whipping cream until obtaining a creamy and smooth mixture. For this recipe, start with 3 TBSP heavy creamy and add more if necessary to achieve the cupcake frosting consistency that you want.

      I did because I find better results especially when cooking the "dough" in a pan that cook them faster. But if you want to, you can add the butter with the other ingredients and see it melting as it cooks.

      To make these brigadeiros using only coffee, skip all the cocoa powder and use 1/2 to 1 teaspoon of instant coffee mixed wth condensed milk and butter. Try to add 1/2 teaspoon at first and taste. If you would enjoy a stronger flavor of coffee, then add a bit more of the instant coffee while the brigadeiros are not still cooked. Keep in mind that the taste will be stronger after they are completely cooked. So don't go overboard. I hope this helps!

      Hi, Shelby! No you don't need toppings but they certainly make them festive while helping not to stick in the bottom of the bonbon cups. Other options for toppings are coconut flakes, finely chopped toasted nuts, or granulated sugar but you don't need to use them if you don't want to. Thank you for stopping by and enjoy!

    I made them but they did not keep their round shape. They were melting as I was rolling them...they did not stay round....what do you think I did wrong. Also how can I reduce the sweetness. They are a little too sweet.

      Hi Filipe! If you followed the recipe yet they did not keep the shape is because they were not cooked enough. To make them less sweet use an unsweetened cocoa powder to balance the natural sweetness of the condensed milk.

      I am Brazilian and I agree with you - these turned out oo sweet. I used unsweetened cocoa powder and still too sweet. What finally worked for me was to use SALTED butter instead!

      Elisa, you are Brazilian but you found this too sweet? In Brazil we use exactly the same ingredients and the cocoa powder used there is sweet. If the unsweetened cocoa powder that i used in the recipe does not balance the natural sweeteness of the condensed milk I am sorry but a salty butter will not help enough. The best thing for those who think brigadeiros are still too sweet with dark or unsweeyened cocoa is not to make them. They are a dessert made with sweetened condensed milk and they suppose to be sweet. Gotta find a savory recipe or a sugar-free one to prepare instead.

      Hi! If you could give me furtehr details I could help you better. I can only imagine the dough was not as smooth as it should because you didn't whisk it well enough until homogeneous. It may have grits of undissolved cocoa powder or pieces of butter. But it is normal when cooking brigadeiros, the dough gets bubbly while you are mixing it over medium to medium-low heat. When it is ready and you remove from the heat, the bubbles will disappear as the dough cools down.

    Hi! I've tried to make Brigadeiros today but I've failed. Mine was too sticky and hard to chew. I used saucepan like other youtuber taught in their video. Will it be better if I use your method? I should have seen your tutorial before making it. 😂

      Hi Yuna! I am so sorry yours got sticky and too chewy using other person's method. Mine works! As you can see a no stick pan used in my method can make brigadeiros don't stick in the pan. But if your yours were too chewy 2 things may have happened. One is the type of cocoa powder that you used or a very small amount of butter. I suggest to use not the same cocoa powder that makes hot chocolate, but instead use baking cocoa powder. The amount of fat matters too. For 1 can of condensed milk, I use 1 tablespoon of butter in the summer time or 2 tablespoons in the wintertime this way the brigadeiros won't be so soft to shape into balls. Make sure to not overcook them. As soon as thickened and starts peeling out from the bottom of the pa jb, they are cooked enough. As they cool ? They will be thicker. I hope these help.

      No, you are not bad at all. You made this for the first time and is not uncommon to either overcook or undercook it a little. Please follow all the tips and practice once or twice more. If you undercook it, you can serve it in small glasses or ramekins to be eaten with a spoon. If you overcook it, no worries! You can stir in a little bit of heavy cream until getting creamy and serve it into ramekins also to eat it with a spoon. You can top it with berries or you can use it as a frosting for chocolate cake. We do this in Brazil.

    Update: I tried one batch with chocolate milk powder, and it didn't work. I added in another batch with cocoa powder. If this works, it's going to be interesting

    how is it a "perfect recipe" if you won't even give the proper measurement in grams or cups etc. ?? what even is a "can of condensed milk" because here I find cans of 125 gram and 400 grams as well. so tired of these CZcamsrs.

      It is the perfect recipe because it is done correctly and no one gives the tips that I give here. No one! Even children could make this correctly if you take a look at the comments. If you want the measurements please click on the link for the full recipe. There you will find that a can of sweetened condensed milk has 14 ounces. Since this is an American website, a cup is 240 ml and one tbsp is 15 ml... not much different from the 250 ml cup measurement used in the rest of the world. It doesn't take much effort to click on the recipe link and go to the full written recipe which you can even print if you want to. All this is available for free, so I don't understand your complain that you are so tired of youtubers. You have a good day!
