Ingredients
• 1 cup long grain white rice
• 1 ¾ cups chicken broth
• 1 tsp turmeric
• ½ tsp smoked paprika
• ½ tsp ground cumin
• 1 tsp chicken bouillon powder
• 1 can (15 oz) black beans, drained and rinsed
• ½ onion, small dice (about 1 cup chopped)
• 1 bell pepper, small dice (about 1 cup chopped)
• 4-6 garlic cloves, minced
• 2 tbsp olive oil
• 2 tsp white wine vinegar

I made this yesterday. It was good, but I didn't think I would make it again. However, the leftovers today were AMAZING. It is even better the next day! The flavor was so good! I think next time I'll try making it with chickpeas instead of blackbeans. The flavor was a bit reminiscent of the paella someone who is no longer with us used to make for us with chickpeas! Should be good!
