Impossible Meat Pasta Recipe - Why we should stop saying Super Tuscan

  • This is my first time using Impossible meat to make an Italian meat sauce (ragù - bolognese) and it turned out pretty good! I recommend using a wide pasta like tagliatelle or parpadelle, but spaghetti will work just fine. If you want to make this totally plant-based, replace the beef stock with vegetable stock.
    This is a glimpse into how I do my food and wine pairings and come up with my recipe ideas.
    I paired it with a Bolgheri wine from Tuscany Italy. We're going to learn a little bit about Bolgheri and why I think the term "Super Tuscan" is outdated. We will also discuss other Central Tuscan wine areas that are also producing Bolgheri-style wines for a fraction of the cost.
    Wine:
    Antinori Il Bruciato Bolgheri 2020
    Region: Tuscany, Italty - Bolgheri DOC
    Grapes: Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Petit Verdot
    Price: $35 USD
    Recipe
    1 medium onion, chopped
    1 carrot, chopped
    2 stalks of celery, chopped
    1) Saute veg in olive oil on medium heat
    2) Add impossible meat. Break up and brown. (Optional to add chopped mushrooms)
    3) Add 1 cup of red wine
    4) Let it reduce until half of liquid is gone
    5) Add 2 cans of crushed or diced tomatoes
    6) Add 1 Tbsp of Tomato paste
    7) Add 3 cups of beef stock (veg stock for vegans)
    8) Simmer for 2 hours on low heat
    9) Season with salt and pepper
    10) Cook pasta until 1 min undercooked
    11) Add pasta and a little bit of pasta water to sauce and cook for remainder time. Sauce should thicken
    12) (Optional) Serve with parsley or parmesan cheese
