Keep these coming! I had to laugh, cause I just got done making some meals for my elderly mother using the scalloped potatoes you show, but I used the Hormel Beef Tips rather than the roast beef. I would have never thought of doing her meals this way without seeing your great videos. You have made meal prep for my mom so much easier!

I have done this with the frozen lasagna and enchiladas. Just let it thaw enough to cut through it. Then box it up like you did , refreeze it. Then all of them will heat up nicely in the microwave. Most of the oven baked casserole kind of things will do this easily and will cook in the microwave instead of having to be baked. It also much quicker
