How to make Tuo Zaafi and Ayoyo Soup

    INGREDIENTS:
    Marinade ingredients:
    * 8 shallot onions
    * 1 thumb size ginger
    * 8 cloves garlic
    * 3 habanero or scotch bonnet chilis (adjust amount to taste)
    * 2 sprigs of scallions
    * 1 tsp rosemary
    * 2 calabash nutmeg (optional)
    * 1/2 tsp aniseed
    * 1 tbsp black
    Red stew/soup ingredients:
    * meats - 1 bs boneless beef shank, 1/4 lbs each beef tripe, parboiled beef tendon, and cow foot
    * Add 6 tbsp of blended marinade, and 1&12/ cup water to meat.
    * 2 cups thinly sliced shallots
    * 1/3 cup blended Serrano chilis (adjust amount to taste)
    * Rest of marinade
    * 3 tbsp cooking olive oil to brown beef shank
    * 1 cup palm oil
    * Salt to taste
    * 1 tbsp all purpose seasoning
    * 2 cups tomato sauce
    * 1 tbsp dawadawa (locust bean)
    * 4 tbsp dry smoked herrings
    * 2 cups mackerel in tomato sauce (may use canned/store bought)
    * Half of derived meat broth
    * 2 Cup of water if needed to thin sauce up.
    Green soup ingredients
    * 1/4 lbs Molokai leaves (may use 2 packages of frozen version) blend with 1 cup water
    * 1 cup boiling water
    * 1 shallot onion thinly sliced
    * 3-4 habanero chili left whole
    * Other half of meat broth (about 1 cup)
    * 2 tbsp dry herrings pieces
    * 1 tbsp dawadawa (locust bean)
    * 1 tbsp dry shrimp powder
    * 1/2 tsp all purpose seasoning
    * Salt to taste
    * 1/2 tsp grated ginger
    Tuo zaafi (white dumpling) ingredients:
    * 1 cup white corn meal (add 4 cups water and stir to combine without lumps)
    * 1 cup cassava flour
    * 6 cups boiling water
    ** add 2 cups to boiling water if a softer mixture is desired **

    This dish looks absolutely delicious. The stew is cooked to perfection. Yes i love ayoyo leaves. As we call it kren kren in Gambia 🇬🇲. Lots of names for it. Jute, Mulukhiyah love it. Such a small world as we all cook the same leaves and different cultures. I would love to try this dish just the plating itself is beautiful. Well prepared and well explained. Tfs.

      I am trying to find out what planet you are on where cow foot and beef shank can get soft in 30 minutes because that doesn't happen here on earth

    In Nigeria, the green soup is called Ewedu soup. The leaf here is called Ewedu and it's normally eaten with Yam flour or Plantain flour(Amala in Nigeria) with the stew. And yours looks so delicious and it's gonna make me prepare mine soon...😘

    I absolutely loved watching you make this dish, I keep hearing about Tuo Zaafi and Oyoyo and finally I get to see my favorite chef , Sister Madam make it. This must be the tastiest Ewedu ever made, love all the flavors you added, smoked herring powder and Iru but what took it home for me was your "STOUP"! Fantastic!       how do you claim it’s nigerians food when it’s a very big part of the northern people of ghana . The hausa’s basically own this as an occupation selling it’s in big cities. it’s just similar cultures. just don’t claim it entirely when hausa people live in many parts of africa.Should every country with hausa people claim it as theirs??
