Blueberry Muffins + The Difference Between Baking Soda and Baking Powder

- Blueberry Muffins (yield: 6 large or 12 standard muffins)
2 1/4 c (315g) AP flour
3/4 c (150g) sugar
1/4 c (53g) brown sugar
2.5 tsp (12g) baking powder
1 tsp (6g) fine salt
2 eggs
1/3 c (66g) vegetable oil
4 oz (57g) butter, melted
3/4 c (170g) whole milk
1 tsp (5g) vanilla extract
1 1/4 c (205g) fresh or frozen blueberries
1. Mix all the dry ingredients together in a bowl.
2. In a separate bowl, whisk all the wet ingredients together until combined.
3. Mix the dry and wet ingredients together and stop mixing as soon as you can't see any dry flour. If there are some small clumps, that is ok.
4. Gently fold in the blueberries.
5. Divide between 6 large muffins or 12 standard size muffins.
6. Top the muffins with a generous sprinkling of coarse sugar (turbinado, demerara, or sanding).
7. Bake at 375F for 15-20 min for standard muffins or until a toothpick inserted in the center comes out with wet crumbs.

Not only that, but some baking powders are "two-step" where they release CO2 at 2 different moments, not only during the introduction of the powder to a liquid but also while it cooks as well! Cool stuff.

i made these with some modifications, and they turned out delicious. used 1/2 cup of sugar instead of 3/4, no sugar on top, applesauce instead of oil, and almond milk instead of regular milk. i made 1 batch with strawberries and 2 with blueberries. i upped the fruit to 1.5 cups bc my batter didn’t look as fruity as his did. thanks for the base recipe. each batch made about 15 regular sized muffins.
Could you explain the ingredients you used and if I could add protein powder to it?
If anyone has the issue of their fruit dropping to the bottom of the muffin. just coat them in flour before adding :) Works like a charm

I never knew this about the acid/base of baking powder. It makes SO much sense! BTW I love using dried blueberries!! They keep their shape and I can really taste them.
In culinary school we are taught that baking powder and baking soda give you different effects.
Baking soda usually makes the batter you're using expand more to the sides. While baking powder still expands a little to the sides but mainly it rises up.

Make sure your baking powder is not expired. Over time, especially if exposed to humidity, the acid/base chemicals of baking powder can slowly neutralize each other, leaving behind was is essentially just baking soda.

Those have to be the most generous blueberry muffins I've ever seen! Every other muffin I've eaten in my life had like 4-5 berries in it, but these have a whole army in them!

is there any downside to using baking powder instead of baking soda? I understand it's a problem to use baking soda when there is no acid, but what about the reverse? why don't we just always use baking powder?

I figured i overmixed and overbaked it but I never thought that using baking soda and not baking powder would affect the final texture as well, which is what i did.

Once a year in Massachusetts Montilio's Bakery makes the famous Jordan Marsh blueberry muffins 4 Enchanted Village at Jordan's Furniture. When I read the ingredients it listed leavening and it mentioned baking soda. The top of the Jordan Marsh muffins are very spread out and not is dome shaped as other muffins. Another thing I noticed in the ingredients list on the box was that it listed whole eggs and egg whites. The strange thing is on the Clone recipes for that muffin tend to use baking powder.

Im ocd, you could use many metal scrubs to clean pans and pots like SOS pads work great. Bar Keepers Friend also works wonderfully. :)

Me personally, I just go with the baking soda because that allows me to incorporate lemon juice as my acid. I also add lemon zest to pair well with the blueberries.
