- Homemade Blueberry Muffins
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
milk
1 cup fresh or frozen blueberries
CRUMB TOPPING
1/2 cup white sugar
1/3 cup all- purpose flour
1 1/2 teaspoons ground cinnamon
1/4 cup room temperature butter
Preheat oven to 400°. Place muffin cup liners in muffin cups.
Combine the flour, sugar, salt, and baking powder in a mixing bowl. Place the vegetable oil into a 1 cup measuring cup. Add the egg and enough milk to equal one cup. Mix into the flour mixture. Fold in blueberries. Divide batter between 12 regular muffin cups or six jumbo muffin cups. Sprinkle top of batter with the crumb topping.
Bake for 20 to 25 minutes or until done. Do not over bake. 
TO MAKE A CRUMB TOPPING:
Mix together, sugar, all-purpose flour, and cinnamon. Cut in butter using a fork or your fingers. Sprinkle over batter in muffin cups. 
I made your blueberry muffins today to take camping for breakfast. They are delicious, soft, moist inside and crunchy sweet on top. I love watching your cooking videos and learning to cook simple recipes is my favorite. I also made the mustard chicken, it was moist and delicious. Your cooking and you and Melissa are wonderful.
I’m making these on this Sunday morning for a quick breakfast before church. They smell wonderful in the oven. My granddaughter and son will love them with a few slices of bacon. Thank you for posting😘

I think some chopped dried blueberries and some chopped nuts like walnuts or pecans would be good in that topping too. Dried blueberries are available in a lot of grocery stores.

These are absolutely delicious. I doubled the batter and made a dozen of muffins. I didn't add the topping, my family didn't want it,they were still delicious.

I am not a fan of blueberries but my sister is and I will make these for her.
I use this same recipe and change the blueberries for 1 c. mini chocolate chips, or fry apples. Their are so many ways you can change the recipe. Come up with great alternatives. Just let you mind go!

I would use Rumford or Bobs red Mill baking powder, to avoid the aluminum in other brands. I also have been trying the gluten free flour blends, such as Bobs Red Mill, King Arthur Baking Co, or create my own using almond, coconut, cassava flours. I try to avoid soy, as it binds thyroid hormone receptors and causes thyroid function disruption (per.Dr Steven Gundry's book The Plant Paradox) .
I also like corn muffins with berries, cranberry and orange zest is another great combination, especially cookies.
I live in Washington state, and I can smell those muffins from here!🤤

What a wonderful recipe. I love to make grab-and-go breakfast is for my family. We all have to get up early and go to work and we don't have time to cook breakfast. I like to make this type of grab-and-go breakfast ahead of time. Can you answer a question for me? Do I need to change any part of that recipe for higher altitude? I always get confused with any recipes that have the leavening in them because we have a higher altitude.

Hi love your video's. Could you make a pound cake. I tried a recipe online and it was horrible. Too much sugar and hard as rock.
I forgot to fold the blueberries in so my batter turned purple. I also didn't use the paper cups. They're in the oven now so I hope they turn out ok.

I'd rather use olive oil or avocado oil rather than vegetable oil or canola oil for the base of the muffin.
You might of washed your hands but you did touch the plastic milk container, salt container, etc.
No like that part....otherwise yum I guess
For tender muffins, the less you mix the better.
Even if there's a few flour pockets, that's OK, in fact it's better, trust me. I'm cringing because to me, you've over mixed...sorry
