Homemade Blueberry Muffins!! How to Make Fruit Muffins from Scratch

- Learn how to make moist and tender blueberry muffins at home! Loaded up with fresh blueberries, topped with coarse sugar and baked until golden brown, these are the perfect breakfast or morning snack! You can also use raspberries, strawberries, blackberries, make them triple berry, etc. Any berry will work for this recipe.
What you'll need:
1 3/4 cups all-purpose (plain) flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
3 ounces (6TBSP) vegetable oil
1 large egg, beaten
1/2 cup milk
1 1/2 tsp white vinegar
1 tsp vanilla extract
1 cup fresh blueberries (or frozen, thawed first)
coarse sugar for topping
In a small bowl, combine milk and vinegar and set aside. (Alternatively, use 1/2 cup commercial buttermilk.)
In a large bowl combine flour, sugar, salt and baking powder. Mix well and add in blueberries and toss to coat. Add in milk and vinegar mixture, oil, egg and vanilla and mix just until incorporated. DO NOT OVER MIX! Mix only until no more dry ingredients remain. Let rest for 15 minutes.
Prepare your muffin tin by greasing the tops (or entire cups if not using cupcake liners). Evenly divide batter into 8 muffin spots. Top with coarse sugar and bake in a preheated 450*F oven for 10 minutes, reduce heat to 350*F and bake an additional 10-12 minutes. Let cool slightly and then serve! Store in an airtight container. Makes 8 medium muffins.
For jumbo muffins, bake at 450*F for 12 minutes, reduce heat to 350 and bake an additional 12-14 minutes. Makes 6 jumbo muffins.
**For mini muffins, bake at 450*F for 5 minutes, reduce heat and bake an additional 4-6 minutes. Makes 20-24 mini muffins.

I made these yesterday and we ate them all in the day! Didn’t have white vinegar so I used apple cider vinegar, and it worked great! I also used almond extract instead of vanilla. These muffins had a great rise to them, and I’m making another batch today. Thanks so much!

RECIPE IN GRAMS & CUPS:
- 1 3/4 cup plain flour, 230g
- 3/4 cup sugar, 150g
- 1/2 tsp salt
- 2 tsp baking powder, 8g (but for such a small amount I recommend using the tsp measurement)
- 6 tbsp oil, 90g or 90ml
- 1 large beaten egg
- 1/2 cup milk (room temp - I just microwave it until a bit warm)
- 1 1/2 tsp white vinegar (or any kind of vinegar or acid like lemon juice)
- 1 cup blueberries,

I didn’t have muffin pans where I’m at so I made it into a bread instead. It came out amazing! I had to make a lemon glaze because I didn’t have the sugar for the topping. I also used one tablespoon of molasses and 5 of oil. Thank you for sharing!

Wow, he gave some helpful tips that the other channels I've come across for this recipe don't give you. I knew about the buttermilk and the coating the blueberries but never thought to just let the batter set for a while. Which is weird because I've done that with brownie mix and it gets a crispier top to the brownies if you let it set before putting it in the oven. Same with cornbread mix.
Made them today and they turned out AWESOME. Can't wait till my blueberry bushes start to produce.

I made these and added half a 1/4 cup of melted butter and WOW HEAVENLY!!! The sugar on the top before putting them in the oven was a beautiful touch 😋
Recipe was a success! Honestly this is the first time I have heard these techniques such as folding the blueberries into dry mixture and the part about reducing the oven temp in the middle of the session. A home run batch!

Baked the muffins just now. Turned out so good, absolutely delicious. Crisp on the oitside and moist inside. They are not too sweet so that's great. I didn't have vanilla essence so made muffins without it. Also, I used canola oil instead of vegetable oil since that's what was there at home.

these turned out awesome!!! I doubled the recipe but kept only 1 cup of blueberry and found that it was just enough berries for my liking! I also reduced the sugar to 1 cup (that is, 1/2cup instead of 3/4cup) and they are amazing without being too sweet! the berries add a decent amount of sweetest! Thank you so much for sharing this recipe! Will make them again :)

I’m going to try this and substitute almond milk and an egg replacer I’ll let you know how it turns out. I’ve used vegan substitutions for this guys recipes before and it’s all turned out great I really like his style of baking
Great recipe! Here is my little revision: 1cup of flour and 3/4 cup of almond flour, 1 tsp baking soda and 1 tsp baking powder instead of 2 tsp baking powder, 3/4 cup of milk (since almond flour absorbs more liquid), replace sugar with low GI sweetener, and reduced the oil to 4 tbsp. Turns out beautiful and healthier!
These are really delicious, light, super easy to make, and not full of oil like other recipes.

This is THE recipe for blueberry muffins---I should have known that when you tossed the blueberries in the flour mixture---and it really works to evenly distribute the blueberries! Just a heads up, I have successfully made this using Oatly as the milk and it worked wonderfully with the vinegar; unlike other non-dairy milks I have tried like So Delicious unsweetened shelf-stable coconut milk, which never really became "buttermilk" when I added the vinegar...I also use rehydrated freeze-dried blueberries and they work great! These make the best crunchy muffin top "cookies" as we call them and the bottoms are awesome, too---definitely use the coarse sugar--you won't be sorry! I was trying to avoid making yet another internet muffin recipe that ended up dense like banana bread, and this one is a hit! I have made it several times now and we all love it....I have added a lil almond extract at times, or all natural butter extract to great success...if you like citrus than you probably could use lemon or orange extract too. His tips and directions are so clear and concise it is very easy to make and definitely use the oil around the tops of the muffin cups...they never stick and are always yummy!

Soooo good. I added extra blueberries first time making this. I'm sticking to this method. Greasing the muffin pan instead of using paper gives the crunch all around and super moist inside. Ah! Thank you for sharing.

Wonderful recipe, I love the way you prepare them. I am vegan, so I used organic Non-GMO soy milk, it thickens the same as milk when adding vinegar. Instead of the egg, I just added a little bit more soy milk.
You could use soy lecithin to replace the egg. Google it.
I’m vegan to and I just used an egg replacer powder, turned out perfect. Found it at bulk barn years ago I always use it for my egg subs.
