I've grown beets as microgreens instead of as root veggies. They taste amazing with a bit of balsamic vinegar.
Great, as always; I love this series! Thank you. Whole beets only take 20 minutes in the instant pot. They peel beautifully afterwards, and the pot just rinses out - no staining, and no mess. It certainly ‘beets’ all other methods of cooking.
Beets are my freaking favorite vegetable. I strongly believe that it’s because I used to have anemia as a baby lol and to this day I still have low iron. My mom makes it with olive oil, lime juice, and parsley. Yummmm!

I love beets. It’s a staple of russian dishes- “vinegret salad”, borsch, “fish in a coat” are just some of it.
Dan, I figured you would have found that beets and Swiss chard (aka silverbeet) are the same species, _Beta vulgaris_. They were just selected for different traits, root versus leaves, respectively, which is why beet leaves can be used in place of Swiss chard. Thanks for highlighting beets, as well as for all other your other ingredient deep dive videos.
Just like EVERYBODY at America's Test Kitchen, Dan, you are one of my top favorites. (Ok, well, EVERYBODY there is "one of my top favorites", but, whatever...it's the truth!) I love getting SCIENTIFIC information as well as cooking info and techniques, so I'm always "schooled" very well by everything you present. in Iran cooked beets are a famous street food. people bake or steam peeled beets with a lot of sugar in their carts and then put them in a skewer or just chopped in a plate it's a nice sweet treat to eat specially in cold winter!
Use an instant pot and beets are cooked perfectly in 30 minutes. Slide their skin off under cold water and you're done. Turn them into a soup with a white sour cream heart on top and voila, Valentine's Day in a bowl.

You can always go for beets the "Dutch" way. Cook them until they are tender....like you said...about an hour. Then peel and slice thin. In a saucepan combine; 2 tbsp butter, 2 tbsp of apple cider vinegar, 2 tbsp of sugar, 1/4 tsp salt, 1/4 tsp pepper, 1/8 tsp of ground nutmeg and 1 small finely diced onion. Melt the butter and make sure everything is combined. Then put the sliced beets in the mixture and warm them through and slowly simmer for 15 mins. I bet even the kids will like those beets. 😉

I guess I'm super weird. Grew up in Lancaster County, PA (yes, Amish and Mennonite area) and pickled red beets were super common. Which I adored as a kid. Like pickles but stained you pink and tasted a ton sweeter? Hell yes.

I absolutely love this video...and the love you show towards beets. I have become an obsessed beet fan recently (hated them for over 30 years). Now, I look for them on the menu every time I’m out. But I also make them at home (the 1 hour wait is worth it!). Beets are simply delicious and there’s something oddly comforting about them. Great video!
As fabulous as they are roasted, boiled with their skins on they shed 'em like overcoats in the Spring.....AND they don't get even remotely mushy! I think of beets like Bubba thinks of Shrimp.....'boiled, broiled or roasted, fried, sauteed or braised' and on and on and on. Beets, it's what's for dinner.

My fav way to eat beets is to make them into a beet curry ( very popular in Sri lanka, where my parents come from), it doesn't take very long to make. The curry is warm from a special blend of spices used for the curry power goes really well with the earthy ( Geosmin?lol) flavor of the beets, finished off with a touch of coconut milk in the end to bring a little creamy sweet taste really brings out the sweetness of the beets.. my mouth is watering as i write this. When i make a pot of beet curry, with the cooked greens on the side with some warm rice, i'm in heaven! Hope you give it a try, happy to share the recipe, perfect for the fall!

Before the invention of Red dye 40, beets were crushed or juiced and used to make in red velvet cakes in the south. Beet that!

I ate beets when growing up, but have not eaten much of them since then. I love the taste of them
Last night I minced some beets fairly small and put on a pizza I was baking. I like it, and seems to work well with the other toppings.

I have loved beets my whole life (I'm 52). My aunt used to make me a tossed salad with beets (nothing fancy) and made the dressing using Marzetti slaw dressing or Miracle Whip, ketchup, and beet juice. I LOVED this salad and its dressing.
I'd just like to suggest that people try beet risotto, it looks as good as it tastes. A little goat cheese on top and it's just gorgeous.
To cook beets until they are soft throughout, I place them, unpeeled, into a glass casserole dish, add a half inch of water, cover, and bake at 365F for an hour (a bit longer if they're really big). Perfect every time, and the skins just slip off. So easy and mess free.

Years ago I tried some kind of pickled beet that was sweet, and had cinnamon and clove and nutmeg in it. It was delicious.
Pressure cook those beets! It'll take a lot less energy than running your microwave that long and they'll cook evenly even if whole!
That's only true if you own a pressure cooker though.
@laReina Diondra: Just like you can only microwave if you have a microwave. Come to think of it, you can only cook beets if you have beets.
Yes, pressure cook them, it’s fast and they turn out great, but be prepared to have your pc smell like dirt for a while.

I like to grate a little beet into my marinara. Makes the color uncomfortably red and adds sweetness.
I am tomato intolerant so I make my marinara with beets as the base! It works shockingly well

Here on Australia, pickled beets are often placed in burgers. It's surprisingly good!

I LOVE beets. There. I've said it. Cubed and steamed, pickled or roasted I have love them since I first sunk my teeth into them as a child. I'm nearing the age of official geezerhood now too.
According to Cook’s Illustrated, one of the best methods to cook and tenderize beets is by peeling and cutting them into chunks before microwaving them for about just 20 minutes. Then they’re ready for whatever you need them for.
I can my own beets. Love them any way I can get them.
I'm not into all that frufru nonsense of prepping sauces etc.
One of my FAVORITE ways to eat beets is take a jar of beets, drain them, chop finely or small dice, mix in mayo, horseradish, salt and pepper, toss/mix, refrigerate few hours or heck eat right away.

We loved to grow beets in our garden because there was little to no waste. We ate the greens and the beets served the same way, salt, pepper, butter, and a splash of vinegar. This video makes me drool for beets. It just so happens I have a nice container in the freezer. I'm going down to pull them out now. I also pickled some beets to try and make a habanero/beet hot sauce.

My son loved beets so much as a toddler, my Mother (his Grandmother) got him a tee-shirt that read "I ♥ Beets!", which was severely stained with beet juice over the next year. Ah, the memories.

Wait isn't the pickling liquid salty? How do you make panna cotta? Also-- my favorite beet recipe: shaved fennel, beets, avocado, ricotta insalata, shallot, lemon, oil. Yum
Grow white sugar beets or red monster mangels. Can still use the large beet greens for salads and pickled/vinagrette salads. Mandolin slice into long and large slices. Bake for beet steaks - sugary sweet. Goes well with your real steak meal. Even shredding and making into a sweet beet and greens salad. Very healthy.
Instant Pot beets, IMHO, are better and faster. Small beets cook in as little as five minutes. If I'm making pickled watermelon rind in the summer and have extra pickling juice leftover, beets are great in that. Oh, do I love beets!
Roasted sliced beets with crumbled bleu cheese and thinly sliced red onion is heaven on a plate.
We eat beets a few times a week. I’ve found that slicing or dicing them and sautéing them is fabulous.

You can speed up the cooking by using a pressure cooker. I use the recipe by Lorna Sass in her "Vegetarian Cooking Under Pressure" cookbook to make delicious borscht. Not the awful Mother's brand borscht you can drink from the jar, but real, rich borscht with Yukon gold potatoes, leek, carrot, savoy cabbage, fresh herbs, lemon zest, topped with Greek yogurt. Throw in whatever strikes your fancy.
And I don't have one of those fancy insta-things, either: I've been using the same Presto 6-qt jiggletop pressure cooker since 1972.

I was never able to enjoy beets as a child. Finally, in my 40's, I attended a dinner in Anchorage where the host served beets that I liked. Now, with your touting of them, I'm resolved to try some on my own. Thanks for the fun, Dan.

Dan, I just want you to know that literally 5 days ago, I held my Beet leaves up in the Zoom camera and asked my friends if they bared any resemblance to swiss chard like I thought they did. Everybody looked at me like I was crazy, which I understood, cuz it got a weird type of nerdy mundane for a moment there. But now I feel validated. Thank you.

I'm always willing to try a new preparation of beets but I've yet to come across a beet dish that doesn't taste like wet dirt. Beets taste like dirt because they contain a compound called geosmin (meaning “dirt smell”), so unless someone figures out a way for me to enjoy eating wet dirt I may never like beets.
I say there's no wrong way to eat beets. I like them roasted, boiled, steamed, shredded or "spiralized" and served raw on a salad, as micro greens, sliced thin and caramelized in a dry cast iron skillet.
BTW, I have roasted candy cane beets and they didn't turn pink. There was some "bleeding" but they were clearly striped still. Only if I roasted them with red beets was that a problem.

Thank you for explaining why I hate beets. Like mushrooms, which I also hate, they taste like dirt ... and apparently for good reason. Now, please explain why I love the artichoke heart that I get to from eating a prepared artichoke, but think frozen or canned artichokes are awful.
Do you have the prepared artichoke with butter or a creamy sauce? The compounds in artichokes make milk taste sweet!
Natalie Kirch We do butter sometimes, or a mayonnaise-based dipping sauce. It really depends.
I've heard tell that when you buy beets with the stems/leaves attached you should immediately chop them off lest they keep draining precious nutrients from the beetroots. Is there any truth to this? I recently tried eating the leaves and stems; they were indeed delicious.
