Creamy Corn Casserole - A Cross Between Corn Bread and Corn Pudding - So Moist and Delicious!

- Creamy Corn Casserole
1/2 cup butter, melted
2 eggs, beaten
8.5 ounce package dry cornbread mix
15 ounce can whole kernel corn, drained
14.75 can creamed corn
1 cup sour cream
1/3 cup sugar
1/4 cup chopped onion
Preheat oven to 375.°
Lightly grease a 9” x 9“ baking pan.
In a medium bowl, combine the melted butter, eggs, cornbread mix, the two cans of corn, sour cream, sugar, and the onions. Spoon this mixture into the prepared dish. Bake for 45 - 50 minutes, or until the top is a golden brown and the center is done.

This is a very old tried and good casserole. I think this is in almost every church cookbook. I put sharp cheddar cheese in mine. It's as good as a dessert!
Yes the cheese sends this over the top.
As well we add breakfast sausage. I was always told it was called spoon bread. Love all their vids.
How much cheese? Sounds good.

My wife has made this recipe for decades, with the exception of no added sugar. It is DELICIOUS! It is a favorite of our grandchildren as well Excellent recipe. Thanks for sharing and bringing it to the attention of more people.

I have made this delicious corn casserole for several yrs..I use the original recipe from Jiffy Corn Muffin mix website...No sugar or onions added... Always enjoy your southern recipes. 😊

I know! I always add these two ingredients as well…never considered leaving them out.

I love corn casserole we had a country cook who was the head cook in our hospital cafeteria and he would make this in huge pans for meals in our cafeteria and it was so delicious and every pan would sell out before shifts end every time he made it , he would make it for both day and night shifts meals which I always thought was so kind if him because the night shift sometimes felt like we got left overs or not as nice of meals as day shifts did ! I make my own creamed corn. Cut off the Cobb run a knife and scrape the juice out of the Cobb cook with butter or bacon grease, small amount of water cook slowly, for about 2 hours until creamy.
You just reminded me that my mother used to make hers like this. I would help shuck the corn & she cooked enough to freeze for the winter. It was delicious!
We love corn like that. We usually freeze several bags of it in the summer. It's delicious and always a crowd favorite.

Yummy. This is a holliday special in my family since 1982. I got this recipe from my mother-in-law. The kids and men always ask for it. Basicly the same ingredients minus the onions and sugar. We love it.
I always scrap out / off everything too.
I understand if you want to cut the sugar, but I do encourage you to try the onions if you are a fan of them. We think the onions add a lot to the dish. It's great having you at the table with us.

My grandmother made this only instead of onions she used finely diced pimentos and green pepper. Not much but just to give it some color for Christmas. So good!

This makes me miss my Grandmother's cooking. She would cook Silver Queen corn and take it off the cob and scrape the cob until the milk comes out of it and added other ingredients to make cream style corn from scratch and I promise you her dumplings were the best. They were so light, fluffy and tender and cooked with enough butter to clog your arteries
Grandmothers are the BEST cooks in the world. It's impossible to outcook them. But we can ask for their recipes.

I grew up on this and I make it for all family gatherings and holidays, my recipe also calls for sharp cheddar cheese, I add it occasionally, but I never add sugar because the corn is sweet, I’ll try adding in some onion next time because I’ve never done that!
We think the onion is a really nice addition. I can see leaving out the sugar. But we definitely encourage the addition of the onion.

Years ago a restaurant here in Danville made this and gave out the recipe…love it! We use it as a bread instead of a side dish

I make something like this but call it corn pudding. I double it and put in a 9x13 greased pan. I use an 8 oz softened cream cheese instead of sour cream. Fabulous!

Love this creamy corn casserole , always made it at my home back in the states, now we've moved from the U.S. and have been unable to find Jiffy mix.we never used onions or sugar, we did use cream cheese instead of sourcream. Yours looks delicious.thanks for sharing, and bringing back memories.

I have made this for years. I have never added sugar or onion but I have used southwestern corn or mexicorn in place of the regular corn. It has peppers and I think some onion in the corn which adds flavor. This is a great side dish and our family especially likes it at our Thanksgiving table.
