Delicious Corn Casserole // Side Dish with Tips Step by Step❤️

- When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

14.5 ounces and 15.25 ounces for your canned corn. They USED TO BE 1-pound cans back in the day before the age of smaller cans = less product and raise that price, too!

I only recently found her channel and without even seeing any other comments I told a friend who I shared the channel with, that I thought it was so cute how she says " my Ron". What a huge library of recipes she has. I want to try them all. Her fried chicken recipe was the first one of her's that I tried and it is the best I have ever made, easy with super clear instruction. I am cooking this corn casserole tonight with chili and a salad.
I love making something very similar but I like to bake it in muffin tins. This way I can freeze them and take out one or two as needed. I can microwave it or heat it up in the toaster oven. Great with a bowl of Chilli or soup or as a side for a roast turkey, bbq chicken or brisket.
Great idea! Feeding just two of us in the house, freezing is such a time-saver and keeps dinner rotations interesting.

I love adding green Chili's too. I also use shredded pepper jack cheese for a little kick.

I'm going to add a can of hatch green chilis next time. I used one of my last summer garden chopped red cherry bomb peppers this time and it was pretty and delicious.

That looks so delicious. The best I ever had was in my hospital cafeteria in the early 90s. They served the best food. Some older Southern ladies were great cooks. The best dressing and gravy. Fabulous rolls, cakes and pies. Not a bunch of frozen stuff back then.😊

At our Family Night Pot Luck Suppers at church, a lady used to being this same recipe minus the onions and cheese at the end. Think she made a double recipe If you weren't close to the beginning of the line, you missed out. Every one loved it including me. She gave me the recipe. Yummy.

I've always made kind of a corn soufflé, and it's such a production. This looks so delicious and SIMPLE! I think I'll be adding some cotija and hatch green chiles in the casserole... I can't wait to try it.

I didn't have sour cream, I used a combination of cream cheese and cottage cheese and blended with a tablespoon of white vinegar. It worked. Wonderful tasty casserole! Thank you!♥

This is one of my favorites, too. I like to add a small can of diced chili peppers and chopped cilantro to the batter. Tasty compliment to a bowl of chili. Very nice presentation Rachel--happy to have found your channel!
This is so delicious!! I’ve been wanting to add a new side dish for Thanksgiving; the traditional trio of green bean casserole, stuffing, and mashed potatoes needed a new friend. I had looked at several videos for a corn pudding; casserole; soufflé, and I liked the simplicity of yours. It was a huge hit and has been requested that I continue to make it every year. So clear and friendly. I will be watching for more. I especially like how you make so many possible suggestions for variations and invite us to use it as a foundation we make our own. The ONLY problem with this is it's so incredibly delicious, I could hurt myself devouring it all ;-D I packaged up most of it for my son to take back home.

Rachel, I made your casserole today. They didn't have green onions at the store so I substituted yellow onions. It was delicious. My husband had seconds, and my brother said he could eat the whole pan. I'm going to try it Italian style next time, using ricotta, and a little touch of oregano, I want with the red pepper flakes rather than the jalapeno. MIL rule: Thanksgiving requires this recipe (full tilt white, though). 2 eggs, local baby swiss cheese. And we NEVER have enough. You think that it might occur to one of us to make two casseroles of it. But no. We are cart horses. God I love that recipe
