How to make Amala and Plantain Fufu

  • In this video, I'm showing step by step how to make the perfect Amala and Plantain Fufu, no lumps. Just follow my steps and you'll be making your swallow perfectly in no time.
    Plantain Fufu
    2 Unripe Plantains
    3/4 Cup Water to blend
    Amala
    1 1/2 Cups Yam Flour
    2 Cups Water

      Adesuwa Ighodaro Yes you can. There’s the fresh plantain Fufu (this one) and also the dry milled one.

    In my country we use milet flour and cassava flour for amala and it's done exactly the way u do amala

    In india karnataka a staple food is ragi mudde.. Or finger millet ball which lokks same like this fufu eaten with indian gravy or curry or chatney. Its really tasty.

    Thank you for the recipe. I’ve made it a couple of time with no lumps. Other recipes I’ve seen online say to turn off the heat when you’re turning it, I noticed you never turned off the heat though. Any particular reason why, or that’s just how you make it?

      Charity Maduka I didn’t turn off the heat however I turned it down. This is how I make it, it works out great for me.

    Can u also mix it smote with a cold water and cook it stiring till it solidify and continue from there to avoid any hard work on lumpy situation , try that and see , I will try the cold water mix by next week and I will let u know the result , I am a Ghanaian and it's going to be my first too early cooking amala , so will see

    Why did the yam flour turn dark. Do the manufacturer add iron because yam has a great deal of its natural iron

    Ok so what is the name of the brand of that yam flour that comes out so brown, just exactly the way that Amala is supposed to look? I've looked everywhere on Amazon, in all the Caribbean/African/Latin stores and I cant find anything that comes out that color, the actual way that amala is supposed to look, so please if you can tell me the BRAND NAME of that yam flour you use to make that amala it will be very much appreciated. Thank you

      They dont put salt in Amala nd dey dnt d flour near d salt bcoz if it near salt, it will jst turn to water, i mean u wont like it at all

    It seemed you were cooking the amala on high heat all the way through but as you made no mention of the heat aspect, I don't know for sure. Could you please give guidelines on the kind of heat to be used to make the amala? How do you know that the amala is done? Also, how long are you supposed to stir and combine it for before adding hot water to let it cook the second time? I hope this makes sense. Lovely video.

      You start it on high heat to avoid lumps, once all the powder is mixed with the water you can reduce the heat to medium. You know it’s done when the texture gets silkier/shinier if that makes sense. All of this will take about 10 minutes. Add the hot water and let it cook for another 3-5 minutes, combine again and it’s done. Hope that helps.

      I’m in front of the stove with all that heat, sweating was inevitable.
