- Join Carla Music in the Bon Appétit Test Kitchen as she makes spiced roasted pork with chili paste. This recipe is from chef Vivek Surti of Tailor in Nashville, No. 7 on our 2019 Hot Ten list. “In India you’ll find pork dishes in Roman Catholic areas, like Goa. When I think of pork in America, my mind goes to barbecue: rubbed with spices, cooked low and slow, and served with slaw,” he says. “I give this pork the Goa spice treatment, roast it, and reinforce the flavors of the marinade (it’s got both fennel and coriander seeds) with our version of slaw, which has fennel and cilantro.” A note from the BA Test Kitchen: The chile paste for this pork is added in two stages. Initially it acts as a marinade and permeates the interior of the roast. After a second addition is applied, it’s roasted over high heat to create a spicy, toasty bark.

Editor note: At 1:40 when Clara mentions "whole clove" the animation came up as "garlic". While there are cloves of garlic, she added cloves, as in the dried spice.

When I saw the choice of spices being used, my mind went "hey that's kinda like what my Mom and I do". Then I read the description about this being Goan inspired! So happy to see our Goan heritage showcased on such a huge platform! It's so easy to overlook our tiny but unique state when taking about Indian cuisine!
Here's a tip: Cider vinegar is great and the closest substitute to use, but if possible (and I know it's hard to find) use coconut vinegar. Also a few cloves in the blender goes as long way!

Pre-roasting and even roasting spices is a common thing in many Indian dishes. It really does bring out all the spices and gives it a coming together effect than where all spices retain their single raw flavour.
We almost always roast our spices before we blend them.

This reminds me of Sorpotel, ambot tik and Recheado masala. But mainly Sorpotel which is a famous dish known to Goa and goan cuisine. And then i read the description and I am so happy to see my home's food is inspiring. Also try adding Tamarind. It helps with flavour.

It is the brand but scruncis are actually named after the inventor's dog, who's name is Scunci. So technically speaking, saying scrunchies or Scünci is correct.

Huh I just Googled it. Apparently, in the US it's ANNis, the UK aNEES.
It might be pronounced like anniss because aniseed is another spice/flavour. Aniseed is the flavour of licorice. I don’t think star anise smells too similar but they might be related to each other.

Just wanted to come back here and say I made this recipe, and it was SO FREAKING GOOOOD!! Our oven was definitely not as consistent or as reliable as the ones in the BA test kitchen, so it took much longer to cook, but it was well worth the time and patience. Thank you Carla~
You're not really wrong, Carla: Scunci is a maker of scrunchies, so you're just saying the brand name.
I would love for the BA team to go on tour. Even if it's just a few of you per show, and you switch out. Y'all should write an actual book with some of your favourite anecdotes, reveal behind the scenes secrets, include your fave recepies, etc... and then do a book tour!
