Carla Makes 30 Minute 'Brick' Chicken | From the Test Kitchen | Bon Appétit

- Join Carla Lalli Music in the Bon Appétit Test Kitchen as she makes 30 minute chicken under a skillet. Butterflying and flattening the bird might feel like chicken chiropractory, but it’s all in the name of crisp golden chicken skin, and what more noble cause could there be? The flatter the chicken, the more contact with the cast-iron pan and the more crackly skin to enjoy at the end. And we wouldn’t tell you to invest in a second cast-iron pan if we didn’t think the crackly skinned roast chicken waiting for you on the other side was 1,000 percent worth it. Using the top pan as a weight maximizes the surface area that makes contact with the bottom pan, which all translates to-you guessed it-ethereally crispy skin. We recommend using a bottom skillet that’s at least 12"-any smaller and you won’t be able to fit the whole bird.

Carla Makes 30 Minute 'Brick' Chicken | From the Test Kitchen | Bon Appétit - Jak na to + styl
Chicken: *takes more than 30 minutes to cook*
Carla: “time is a cultural construct”
my professor when he came into class 2 hours late
It definitely only took 27 minutes
If only legs, thighs and then the breast of the chicken cook at the same final temperature... isn’t she a chef?
I'm looking for her statement in the video.. not found it explicitly.. 🤔😅
*"Thyme is a cultural construct" is what she actually said
I wanna see Chris on Hot Ones, smelling every wing before he takes a tiny little bite and beautifully describes each sauce with a runny nose and watery eyes.
Same
He would explode.
He’s way too sensitive, he has some issues with high heat and sour, that would probably be pretty bad for him. It’d be great for the first half, but afterwards I’d be worried for him
"ring zing pow"
I would love his articulation but I know his palette is way too sensitive for the last few wings. I mean I'm sure he prides himself on his palette, everyone in the kitchen knows him for it and his particular BA series is really dependent on his ability to taste really intricately
Watching Carla struggle with Siri just reinforces the fact she’s everyone’s favorite auntie. See you at Holiday Auntie Carla
It's also a subtle "win" for Android :P
I've always called her Crazy Aunt Carla.
Carla being Carla.
I have an Auntie Karla with a K! ☺️
Dont come on time though, she wont be ready.
We should all strive to have the sitting posture of Chris
**slouches more into bed as i read this**
My punkish slouch blearily eyes you up, gets a smoke.
He's so serious till he realize you can right click on macbook, 😅 I guess he learn windows first
Meanwhile, Rick at 11:57
Omg yes!!!!!
I love the line "I think our relationship with time is too exact these days", gonna use that on my boss when he tells me I'm late for the 25th day in a row
They should put that on a shirt!
Chickens dont think about time. And if they did, they'd be extremely anxious all the time
Probably the wrong person to use that excuse on.
Save it for when an underling is late.
"is this gonna be a quarter cup? who can say?" Is the most relatable thing Carla has said.
"But I made more compost" - such a relaxed way of accepting making too much.
shes so relatable, I love it
I like how the whole video is Carla justifying the title. “Well if you think about it, time is all relative anyway so...”
Carla is pure cool mom energy. To be clear, NOT “mom trying to be cool” energy, actual cool mom energy. Like she is the mom people are referring to when they say “my mom is my best friend”
TOTALLY!!!
and she cooks you great food. what more do you want? :D
I didn't realise until just now how much I missed Carla.
The most important thing we've learned is that Chris has never right-clicked before
On a mac.. maybe he learnt windows first, 😅 it's not easy transition you know.. little things get moved to other places
When I switched to Mac it took a while to figure out how to "right click" on a device that had just one pad to click. As a software engineer I know that Macs are superior products. IRL it was a challenge to make the change as I worked as a programmer always on Windows machines (and before that DOS machines where there was no click and no mouse.)
I have never really used a mac, I still don't know how to right click on MacOS...
@@lightriver7860 You can use Control+Click, there's also a two finger gesture on trackpads now.
This entire conversation is so strange to me. That it is a conversation, talk about mind-blowing.
"I went to bon appetit test kitchen culinary school, which means at some point Carla just teaches you how to do something"
alex delaney, everybody
11:48 "Chickens are not thinking about time, and if they did, they would be extremely anxious all the time."
Wow guess I'm a chicken now.
She basically just called all of us, chickens.
Kristy D. Very sad indeed
Mooooood
“Because chickens’ time is very limited...”
Carla does philosophy. Chicken philosophy.
"oh my god, she won't do it" has the same energy as "and they were roommates"
It makes sense in a weird way
YES
roomies*
This made me laugh way harder than it shouda
@@TheCarboxylicacid it's roommates
i only read "carla makes 30 minutes brick" and i was ready for the madness but im satisfied regardless
bars
I wish I had Chris’ posture when I sit at my desk for 8 hours a day
"There's so nothing wrong with that" Chris Morocco definitely is the Princess Margaret of the Test Kitchen
*Carla getting mad at Siri just had me dead* 🤣
RIEIRIRIEIIRIEU I just saw something very unpretty! I looked in the mirror! RIRIRIRIEIIRIR!!! But I am the cool CZcamsr with two hazardously hot girlfriends so it is all good! Thanks for you attention dear canada
I'm always yelling, Alexa! Alexa! Getting more and more disgusted every time I have to repeat myself.
2:51 we just witnessed a BIG moment in the BA test kitchen. CHRIS took a *BIG* bite out of something!! Lets all applaud Chris!!
Haha no little nibble over there
Is this a "BIG" bite for Chris? It looks like a regular bite to me.
Who is big bite Chris? I don’t know him 😂
Yup, this is a huge bite for Chris, he normally takes the smallest of bites out of food😀
So then at end he takes the tiniest nibble I've ever seen off a chicken wing to compensate 😂
alt title: a discussion on how time is a man-made concept
I'm so happy I'm not the only one who loves the word spatchcock.
My dad used to say, "If you're not early, you're not on time." Then again, he'd also be that one that said, "I'll be there at 7:06" and that's when he'd roll in. It was spooky.
The one i know is "On time is late"
I always say “if you’re not early, you’re late”
It is so annoying when a boss is like that. If you want me somewhere at 10:27, tell me 10:27. Don't be p!ssed off if you said 10:30 and I'm there at 10:30.
That’s an old Dale Carnegie thing. People tend to remember an odd time and will be prompt. At the top and bottom of the hours...not so much
recoil53 This devolved into madness at my office. We had a 7:45am meeting and the boss’ motto was “10 minutes early is on time, on time is late.” So everyone started showing up at 7:35am. So then everyone was there so they’d just start early at 7:35am. So people started showing up at 7:25, so they’d start at 7:25. Mind you, the meeting still officially started at 7:45am. When people were there early enough that the 7:45am meeting was starting at 7:15am, I quit my job.
Siri has Carla more outraged than that time Molly used turnips instead of POTATES in her Chicken Pot Pie
LMAO I guess you still salty about that
she WHAT
Carla's never be on time to a dinner invitation is such a mood. Love it! Seriously, everyone needs to hear this message.
Nah, always be prompt. If you want people to be there at 7:30 say 7:30, not 7:00. She's the jerk in this situation.
*Its kills me how Chris can figure out THE most random ingredients in the blindfold challenges yet he just figured out the right click function of the mouse!* 🤣
Well. It is as he stated. Its not the Right-Click of a regular mouse, but of a Macbook. There is no explicit button. I have been using Windows and Linux PCs and Laptops since 98 and i had no idea how to rightclick on a mac until 2 years ago (after having to ask).
@@kollegex6946 if you've used a regular laptop that has a physical right click button on the trackpad, surely you would've wondered how to right-click on a macbook trackpad at least once and then googled/asked about it?? Also regular windows laptops and macbooks use the same 2 finger tap gesture for right click so that doesnt really make sense.
Between Siri not responding and complicated MacBook right click mechanisms, this is like the opposite of a commercial for Apple electronics
a large percentage of his unworldly powers are concentrated elsewhere... even Superman would struggle with his zipper now and again..
@@kollegex6946 I didn't grow up with a Mac, and so I find the menu placement disorienting sometimes, but I believe that there is a "Trackpad" section in the menu where you can see all the clicks and gestures you can do.
Just last week I was thinking it been awhile since we seen a Carla episode. And now here we are watching Carla being the best Carla she can be.
Amiel : "Chicken is a bit overcooked. You see how brown the edges are. It should be pink all over"
HONESTLY Carla, this is one of the best recipes I've seen on this channel. Thanks.
7:16 "Morning-Chris is like, Quality Chris."
*Every-Living-Moment-Chris is Quality Chris.*
"I think our relationship with time is too exact" Undeniably true. Love your recipes! Thanks for sharing! and yes . . . chickens do not think about time. (smile)
Me before this video was released: I'm doing Meatless Monday.
Me after watching this video: I need to go buy a chicken.
OH MY GOD IM NOT THE ONLY ONE IN PUBLIX WITH THREE CHICKENS LOL
Kristy D. LOL
Chicken is my favorite vegetable.
Literally me today now. I am going away on holidays in two days time so I now have two days to eat a whole chicken!
@@Deepseasilence I typically go through 3 chickens a week if that makes you feel better
Carla: “...I will be just stepping out of the shower, guaranteed!”
Me:
🤣❤️🤣
" Chicken in a chickeney formation and turn it into a chicken in a pancakey formation" said no one ever.... Until this moment
"It's fine." Me to my wife who is always worried if I'm properly cooking meat.
Rare Meat is safe
@@jocaingles8464 Not poultry. You'll kill someone that way.
@@river7874 medium rare chicken is my favorite chicken 😉
Her at the end with just like, "my hair will be dry somewhere around dessert" is so relatable for a thick curly girl lol.
Immediately clicks because the word "spatchcock" is going to be used often and is a GREAT word.
Great, this is good, I was looking for a "30min" chicken recipe that I could make in 45min or more
Queen Carla struggling with Siri in the intro made me love her even more because I FELT THAT IN MY SOUL.
“Shimmer shimmer, smokey smoke”
Carla is a national treasure
That’s the most delicious looking 35 min chicken I have ever seen
Carla’s explanation about not being out of the shower by the time she told people to come over is so me
Shimmer shimmer smokey smokey
Bingo bango
Qwatta' kwapp
Bazoom
Kitten kaboodle
Notch in the notcher
Chicken time
Lemon squeezies
I see Carla is taking to Brad's language.
Kinda, but Brad, Molly, and Carla are consistent lingo creators.
@@rafaelmanzo9497 Lingo creators? Bazooms - 1950's, Bingo Bango Bongo - 1940's, Kit and caboodle - mid 1800's.
@@rneufeld6886, I was *honest to Gawd thinking of stuff like "Brasta"* (brunch-pasta by Molly), and quick phrases like "tossy-toss" when I wrote that comment! LOL Of course Kit-and-caboodle and those others are *existing classics.* In retrospect I should've focused on the list that was up there and said "Lingo users" or "jargon pros" or something. Sorry for the confusion.
"Ring Zing Pow" needs to be Chris's catchphrase.
That chicken was gorgeous and the fact that the leg was falling off was a sign that it tasted amazing too. I really like that the mistakes weren't edited out, makes for a great CZcams video.
i love all the small talks that she has, it's not just her directing what should be done. it's so comfortable watching her
Love how Chris pulls out the massive spoon to taste the sauce. Spoon man!
Carla subsequently sends everyone else’s Siri into a 30 min timer loop.
SHUT UP SIRI !
I feel that a book entitled, "Lallisms: Defining Food." (or something of the like) needs to be created and shared with the world. Thank you, Carla, for sharing your world in food and making us smile each time. :)
I Love Carla, she is so bubbly, always smiling and so real. Thank you Carla for an awesome recipe for some of the best spatch cocked chicken on earth !!!!
15:39 lol, i'm the opposite of Carla. If you don't show up at my house on time, you'll find a half-eaten chicken starting to get cold just sitting on the counter XD
Carla, the curly queen of my heart!!
carla is one of my favorites because she provides the comforting knowledge that i am not alone in how i approach the world.
I need more Carla videos in my life please. Thank you Bon Appétit.😊❤️
"Shimmer shimmer smokey smoke" - Saturday night at a club.
"there is nothing wrong with that"
What a great compliment.
words cannot express how much i love Carla Lalli-Music
Carla is hard not to love! She is great! She just expects us all to be better! I love it!
"Basoom" 😂😂 I can't wait for the Trixie back to back episode.
I love how Carla justifies having to cook her chicken for 5 more minutes by using the “time is relative” excuse XD
I love Carla so much. Her analogies and play on words bring me so much joy. 😂💕
Can i just say i have specifically wanted Carla to make this chicken on the CZcams channel, and its everything i needed and more.
Was hoping to see Gourmet Makes after that John Oliver shout out, but always happy to see Carla
I'd still be obsessed with this channel if it was just Carla cooking
Carla in this video is my FAVOURITE 😚
I love this whole video! Carla’s energy is on point
This comment sections has become as iconic as the channel itself! Great folks around here !✨✨✌️
Now my phone has a alarm set for 30 minutes because of Carla
a chicken is never late, nor is it early. it arrives precisely when it means to
with every carla video i watch, i love her more and more
Beyond disappointed that I don't get a 30 minute video. Bon Appetit fix it.
Don't worry because Claire's going to be up to making something soon and messing it up and it'll take like 45 minutes, when she actually perfects it on the first try, but decides to do it over 30 more times.
@@givememore4free Excuse you sir. Claire never messes up, she perfects...
They really need to start stitching together bonus Blooper Reel vids for all of the BA videos. 2 or 3 minutes of the hilarious mishaps that usually get edited out would be like the icing on an already delicious cake!
Any body else Siri went off when she said “Hey Siri set a timer”?? Lol just mines 😂😂
LOVE LOVE LOVE everything about this channel!!!
Saw this, looks pretty straight forward and delicious!
Tried it myself... burnt my left hand and threw the chicken across the kitchen and ordered dominoes.
how dare you make things look easy
carla i would like you to know you set off my siri three times during this video and i didnt realize you actually set a timer until i got jumpscared 30 minutes later
Chris looked like he was completely onboard with Carla's temperature check.
Im convinced "hey siri" is the new "PUT SOME MORE! DONT BE SHY PUT SOME MORE!" 🤣🤣🤣🤣💯
This is probably one of my favorite Carla videos.
"Ooo, ring, zing, pow"

They only ate the wings because that chicken was raw AF 😂😂😂 I love me some Carla but it needed about 10-20 more in the oven.
Carla has a huge cup of coffee the morning they filmed this and I am very supportive of this 💕💕
This is my favorite video of yours because of the recipe. Thank you for the great idea.
15:13 me when I look at myself in the mirror
UH OH Siri is drunk again. Talk about role reversal.
Dude, I had to do a double take when I read this. The second time I read it, it made me laugh so hard. 😂😂😂

That chicken looks divine, and the sauce is so perfect with it. Lemony 🍋 and herby 🌿
Clara’s Siri is giving her the brush off, but my Siri suddenly set a 30 minute timer 😂😂😂

When will you kick the bucket?
Ugh it’s been so longgg. I love my queen!
In addition to having really beautiful eyes that express her honest enthusiasm, Carla really inspires appreciation for how much useful detail she tells you about food and cooking - and - it's all the kind of information that actually relates to what many of us are trying to do in the kitchen. This 30 Minute "Brick" Chicken is just one excellent example of all of the little DOABLE things we can do to make food, not just okay, but better and better.
