Carla Makes 30 Minute 'Brick' Chicken | From the Test Kitchen | Bon Appétit

  • Join Carla Lalli Music in the Bon Appétit Test Kitchen as she makes 30 minute chicken under a skillet. Butterflying and flattening the bird might feel like chicken chiropractory, but it’s all in the name of crisp golden chicken skin, and what more noble cause could there be? The flatter the chicken, the more contact with the cast-iron pan and the more crackly skin to enjoy at the end. And we wouldn’t tell you to invest in a second cast-iron pan if we didn’t think the crackly skinned roast chicken waiting for you on the other side was 1,000 percent worth it. Using the top pan as a weight maximizes the surface area that makes contact with the bottom pan, which all translates to-you guessed it-ethereally crispy skin. We recommend using a bottom skillet that’s at least 12"-any smaller and you won’t be able to fit the whole bird.

      I would love his articulation but I know his palette is way too sensitive for the last few wings. I mean I'm sure he prides himself on his palette, everyone in the kitchen knows him for it and his particular BA series is really dependent on his ability to taste really intricately

      When I switched to Mac it took a while to figure out how to "right click" on a device that had just one pad to click. As a software engineer I know that Macs are superior products. IRL it was a challenge to make the change as I worked as a programmer always on Windows machines (and before that DOS machines where there was no click and no mouse.)

      recoil53 This devolved into madness at my office. We had a 7:45am meeting and the boss’ motto was “10 minutes early is on time, on time is late.” So everyone started showing up at 7:35am. So then everyone was there so they’d just start early at 7:35am. So people started showing up at 7:25, so they’d start at 7:25. Mind you, the meeting still officially started at 7:45am. When people were there early enough that the 7:45am meeting was starting at 7:15am, I quit my job.

      Well. It is as he stated. Its not the Right-Click of a regular mouse, but of a Macbook. There is no explicit button. I have been using Windows and Linux PCs and Laptops since 98 and i had no idea how to rightclick on a mac until 2 years ago (after having to ask).

      @@kollegex6946 if you've used a regular laptop that has a physical right click button on the trackpad, surely you would've wondered how to right-click on a macbook trackpad at least once and then googled/asked about it?? Also regular windows laptops and macbooks use the same 2 finger tap gesture for right click so that doesnt really make sense.

      @@kollegex6946 I didn't grow up with a Mac, and so I find the menu placement disorienting sometimes, but I believe that there is a "Trackpad" section in the menu where you can see all the clicks and gestures you can do.

    In addition to having really beautiful eyes that express her honest enthusiasm, Carla really inspires appreciation for how much useful detail she tells you about food and cooking - and - it's all the kind of information that actually relates to what many of us are trying to do in the kitchen. This 30 Minute "Brick" Chicken is just one excellent example of all of the little DOABLE things we can do to make food, not just okay, but better and better.
