  • In this video I identify and describe Chicory.
    Chicory is known for the root being used as a coffee alternative. It is also edible. The young leaves can be eaten raw or cooked to remove some of the bitterness if they are older. The flowers and roots are also edible.
    Chicory has medicinal benefits and uses. It is high in Vitamin A and C. Chicory root is also high in inulin and is used commercially. The extracted inulin is used in yogurt and other processed foods and is a prebiotic which improves gut health. The root tea has been used to treat things such as fever, inflammation, lung problems, and liver problems. The mashed root has also been used as a poultice to heal sores from fevers and venereal disease. Studies have shown that chicory root extracts have slightly sedative, mildly laxative, antibacterial, liver-protective, and anti-inflammatory effects.

    Have you tried it as a coffee? What does it taste like?

      Not yet. I plan on trying to make some soon, and I will let you know what I think. I have eaten the flowers and leaves. They are a little bitter, but some people like that bitterness!
