APPLE TART RECIPE | step by step tutorial

  • Today, I am sharing what I love to bake at home…French apple tart! I bake specially between fall to winter. Learn all the techniques including how to garnish apple slices beautifully!

    🍏INGREDIENTS FOR THE TART CRUST:
    • All purpose flour: 350g (12.3 oz)
    • Almond flour: 50g (1.8 oz)
    • Powdered sugar: 150g (5.3 oz)
    • Salt: a few pinch
    • Unsalted butter: 180g (6.3 oz)
    • Egg: 70g (2.5 oz)
    BAKE AT 350F / 175 C for 35-55 mins depending on the size until they are golden brown.
    (For commercial ovens, bake at about 325F / 162C)
    🍏INGREDIENTS FOR ALMOND CREAM (FILLING1):
    • Unsalted butter: 100g (3.5oz)
    • Powdered sugar: 100g (3.5oz)
    • Salt: a few pinch
    • Egg: 100g (3.5oz)
    • Almond flour: 100g (3.5oz)
    • All purpose flour: 10g (0.35oz)
    • Dark rum: 10g (0.35oz)
    🍏INGREDIENTS FOR SAUTEED APPLE (FILLING2):
    • Unsalted butter: 50g (1.76oz)
    • Apple(Golden Delicious or Granny Smith): 500g (17.6oz)
    • Salt: a few pinch
    • Brown sugar: 200g - (7oz - )
    • Cinnamons: Some
    • Lemon juice: Some
    🍏INGREDIENTS FOR APPLE SAUCE (FILLING3):
    • Granulated sugar for caramel: 50g (1.76oz)
    • Unsalted butter: 125g (4.4oz)
    • Golden Delicious: 1000g (35oz)
    • Granny Smith: 600g (21.2oz)
    • Cinnamon powder: 1 Tbsp
    • Salt: 5 pinch
    • Brown sugar: 200g (7oz)
    • Heavy cream: 50g (1.76oz)
    • Dark rum: 100g (3.5oz)
    • Granulated sugar: 50g (1.76oz)
    • Lemon juice: 50g - (1.76oz - )
    🍏FOR GARNISH:
    • Melted unsalted butter: Some
    • Granulated sugar: Some
    • Apricot jam: Some
    • Water: About 1/4 amount of jam

    I just found your channel and am binge watching your videos. I love to bake so my son bought me a French Pastry Technique book from the French Pastry Institute. It is a great book but, I am a very visual learner. You are covering the basics and have made me very excited about learning the recipes since now I feel like I have a much better idea of what the steps should look like. Thank you!     I can understand why you love 🥰 making this Apple tart as I absolutely adore 🥰 making a delicious dessert that is cathartic from making the pastry to slicing the apples then baking and glazing then eating or gifting too the people you love 🥰 Aussie gal is in the kitchen with pencil in one hand and my other hand is sipping on a hot cuppa ❤

    I wish CZcams has a thing for when people of the likes of me who would love to post a picture or video to show Aya after all of her hard work in bringing video’s after video’s to us to watch and hopefully make and to know how all of her community students are doing within her channel and how much we have grown since commencement of us/ me being able to watch her channel ❤❤❤❤❤ and put into practice of what we/us are making ❤❤❤

    Thanks for sharing your amazing recipes. I don’t think that a lot of pâtissier chef put the same time and ingredients to make a apple pie. Congratulations!! I love this way and I’m go try to make!!

    I faced the challenge yesterday. It took me 2 days to prepare everything from scratch and was stressed when I was handling the tart dough on rings. But everyone who tasted it said this is "Pro"! Worth the time to make it. I used Jazz apples (what I have at home due to Covid) but my favorite apples for baking is "OPAL" Opal holds the crunch and a hint of sour but lighter than Granny Smith. 😍 Wish I could share the pics of my tarts today! Thank you Aya for sharing this and made my first tart a memorable one.

      OMG it is amazing Katalina!!! I've got the moments too...lol It is totally disaster at the moment but you feel SO much accomplishments when you are done AND especially when people loved them...💓 That experience definitely gave you more technics and experiences besides more confidence😊 Congratulations!!!🎉
      I've never tried Jazz apple or OPAL as far as I remember, I would love to try them someday if I find them!

      @@PastryLivingwithAya Dear, you are forever in my life now and those who has tasted this and will taste this tart. I am getting better with prep time too. Hardest thing is to put the pie tart into my 8 perforated tart rings. Oh dear! Still patching the melting crumbs and yours are so even! Will get there one day. I just don't know how to upload my tart pics to share. You will be proud of this student.

    I love your videos. I’m so glad I found your channel. Very informative and easy to follow. I usually use golden delicious, but I’ve made things with pink ladies, jazz and gala or whatever I have laying around. I like making apple sauce with Rome apples, seems to come out smoother.

    Hi Aya!! Here I am again:) When I made SEVERAL of your BEAUTIFUL Apple Tarts, everybody I showed the pic said I should "open a bakery!!"...ROTFLOL...just because I set up the apples sooo pretty, as you showed me, I even brown the tops with a small torch:) I have another question: When making the apple "compote" to fill in the tart after almond cream, do you really use 500g of apples (about 3 apples peeled and cored) and 200g of Brown Sugar?? I find all that sugar would be way too much, looking at it while I'm making it, and have only included about 1/2. Am I missing anything in that section? Please let me know!!     Can you tell us the method you use to keep the sliced apples from browning while you are prepping the rest of the tart?

      Actually, i didn't do anything this time. I used up within a hour or so, so it did not get brown much but you could toss some lemon juice all around to prevent that from happening. Hope that helps!

    Dear Chef, I love your recipes, especially the tart video. However, I cook only for me and was wondering how to make a smaller recipe for the tart shells?? 400g of flour is a lot now that there's so little flour around, can you please help me?       Thank you! :) You can make a half batch of the recipes. or maybe less depending on the recipe. You can also store the leftover tart dough in a freezer! Thanks for the support!

      You can use any other apples of your favorite! Some apples are too crispy for me for apple tart/pie such as Fuji apple and apple crisp but I know a lot of people like to use Granny Smith, gala, red delicious etc for baked desserts!

    Hi Aya! I stumbled upon your channel about 10 days ago and I have tried two of your recipes so far. They have been a success. I intend trying apple tart this weekend. However, I have a few doubts. Please advice
    a) Do you think its a good idea to bake blind the tart? Usually, the tart remains soft and sometimes uncooked and not biscuity/crunchy that is if I put everything together and bake at one go. If I bake blind then the almond cream doesn't get cooked entirely. What should I do?
    b) When I bake blind, the walls of tart collapse. What can I do?
    c) The apple sauce has a lot of lemons? Will the apple tart taste sour? Indians don't enjoy sour desserts so much. Well, most if not all. Can I skip the lemon entirely ?
    d) The sauteed apple has 200 gms of sugar. is that a typo? It seems a lot of sugar for 500 gms of apple.
    Please guide.

    From video, when u saute the apples, it seems so dry. But when I saute, my apples, it came out so much juices. So when I saute longer, the juices did dried up some, but the apple bites also became too soft and mushy. Please advise🙏

      Hello! The most possible reason is that the kind of apples we used were different - I think I used granny smith which can be very soft after a long cooking but keeps shapes better than some other apples such as Macintosh or Gala. Those apples can get mushy pretty quick after cooking. Unless you liked the soft mushy texture, I recommend to try a different kind!

      Thanks :) It seems to work the best when I insert the tip of my knife on the very center of the tart and cut down straight to the edge. I hope that make sense! And of course, use the sharpest knife you have!
