  • Today we taste and review Eau Claire Distillery Single Malt Whiskey, Infinity Hopped Spirit, Bearface Triple Oak Canadian Whisky, Lip Service Rye, and Driftless Glen Rye.

    Amazing! So happy to hear you enjoyed our first batch of Single Malt Whisky from Turner Valley! Thank you @canadianwhiskysmith for sharing a bottle with the Whiskey Vault crew!
    The second spirit is Eau Claire Distillery's Single Malt Whisky and is actually from Turner Valley, Alberta, Canada and made with all Alberta barley! Fun fact: "Eau" is pronounced like "Oh" and so "Eau Claire" means "Clear Water" in French which works perfect because we get our water from the Canadian Rockies! The Infinity Hopped Spirit is actually from Infinity Beverages Winery and Distillery located in Eau Claire, Wisconsin so not from the same distillery but similar name/location.
    Either way thank you for the Canadian Whisky love! We'd love to have you guys up to the distillery one day!

    Eau Claire Distillery's master distiller is Caitlin Quinn (born in Winnipeg, but raised in Scotland...now living in Calgary).
    This is the first edition of their malt and it is only 3 years old. Eau Claire runs a farm where they grow their own barley for distilling. They have to supplement with barley sourced from other local producers, but it's still pretty cool. They farm using historic tools and a team of horses. They do tours of the farm and folks can even sign-up to come help bring in the harvest in the fall.
    While Alberta has been a major producer of whisky historically, this is the first Alberta Malt produced by Alberta's first craft distillery and one of the youngest master distillers in the industry.

    I’m proposing that Daniel and Rex release a Rye from crowded barrel that recreates the Lip Service label picture, but with their faces instead of that female models. I would pay money just to have that bottle with their big faces on it - regardless of the whiskey that was inside. Lol

    You finally tried the Bearface and just skimmed over it. Personally love this whisky to me it's a subtle bourbon, a little on the sweet side but oohh so good, dangerous as you say

    I was in the Caribbean the last two weeks and found the only Whiskey made in the islands. I thought about grabbing extra for you guys but I had already went over budget and didn’t want to risk a crappy whiskey. I’m sorry I didn’t get an extra bottle. It’s called Captain Don’s whisky. Named after the guy who brought diving to Bonaire. It’s magical. Only 3 years old and it’s already so special. It reads at a 6 year old level though because of that Caribbean heat. They import rye and corn but also use sorghum grown on the island. Couldn’t get the mash bill. The kicker is they age it with Cuban tobacco in the barrels. Couldn’t get the barrel type either unfortunately. It’s one of the nicest whiskeys I’ve had. Not just nicest young whiskey. It holds its own. The tobacco note is so perfect right now it’s incredible. I’m back in Bonaire in November of 2020 and the vault is definitely getting this. You guys have to have this whisky.

    Only 6% off of being a bourbon. Just the way I like it.
    Looking through CZcams trying to find a good review of "The Burning Chair". I was recommended it while going to pick up Woodford Double Oaked. Walked out with burning chair. I like it. Even the hippie type bottle and stopper.

    Eau Claire...I live in Alberta and I just might have to track some of that down. You guys have convinced me! Recently bought Glen Breton and loved it. If you say Eau Claire is right up there with it, that's good enough for me! Great video guys!

      I was there too, where IPA's became the biggest trend several years back - which is unfortunate if you don't like IPAs... HOWEVER, I kept trying them and I found Deschutes "Fresh Squeeze IPA" (and their limited edition NWPA: "Northwest Pale Ale") which has a VERY refreshing blend of citrus and hops. I don't know if I can say I like hoppy beer, but at least that one has a nice crispness that the citrus is well balanced with the bitterness.
      It may not be for you, but when I want a juicy chilled beer on a hot summer evening - that is probably the only one I will go to.

      As someone who started out where you are now, may I suggest trying one of the New England style of IPA? They are generally unfiltered and a lot of them have lactose in them as well. So they usually are not aggressive like the older style of IPA. I used to refer to those one's as "tongue scrapers". Was not a fan at all.

    I can’t send whiskies, but if any other viewer has the chance, please send them some stuff from two brewers, de vine or some more unique distilleries. Glenora is good, but they’re like the macallan or glenfiddich of Canadian single malts. There’s much better stuff hidden in local distilleries. The master distiller of De vine studied under bruichladdich’s master distiller, and you can taste that. Two brewers are using the best malts out there and creating incredibly complex blends (single malt, but from different types of cask maturations, basically what glenfiddich wanted to achieve with the XX experimental, but failed to).

    Could you guys tell me what level mooch that is? A friend of mine who mainly just drinks blended scotch took me with him to the liquor store, a couple of weeks ago, to recommend a whisky for him. I saw may favorite budget-ish whisky: Ardbeg 10 and decided to tell him to get it just so I could mooch it off of him. Turns out that JW Double Black stuff he’s used to is no match for the grandeur of Ardbeg 10!! A week later he called me screaming on the phone about how terrible the whisky is. He hated it so much that he gave me the whole bottle after taking only 2 shots. Am I a master mooch or just a lucky bastard?

    Oh, where's the Daniel mistake counter? Rex mentioned Glen Scotia and Daniel said that's what Glenora was, but Glen Scotia is a Campbeltown... Glen Breton is what he meant. SHAME. As punishment, more Canadian whiskey! (I know for a fact they have at least 6 or 7 more to review... most of which I bet they'll even enjoy!)

    i do think the infinity hopped spirit, was not distilled from a beer, but a vodka/whisky with hops. or am i wrong?

      One of the first steps in distilling, regardless of the final spirit, is to brew a "Distiller's Beer". It isn't brewed for flavour as much as for producing the maximum amount of alcohol in the shortest period of time.
      A Distiller's Beer isn't usually hopped. It is Water, Grain, Yeast, and sometimes enzymes (to help the yeast convert the sugars from the grains into alcohol).
      Once fermentation is complete, it is distilled.
      If it is distilled to a really high proof, you get vodka/neutral grain spirit.
      If it is distilled to a lower proof (160 proof is maximum barrel entry in the US, I think), you get new make spirit, which is aged (or sold as "white dog"/moonshine/etc.).
      The Infinity likely added hops to the distiller's beer. I can't imagine they added it after distillation.

Wich is weird, because on every home distilling forum I've been on, people warn against distilling beer. Don't remember why. But I think it has something to do with the hop oils

      There are definitely things to be careful of. A commercial (even craft level), would have measures in place to be sure it is done safely.
      The only other thing I can think of is that they are doing a third distillation run, and using the hops in a botanicals bag like gin or aquavit.

    Daniel: when I was eleven i crafted cd holders with engraving and sold it for 20 dollars each and bought a drum set.
    Kids now: i built a treehouse on creative mode on minecraft, and my mom was so impressed, i got an ice cream while I finished it, but I didn’t actually finish it, i got busy watching minecraft vids on youtube.

    Guys, it's pronounced "O-Klare" from the French Eau Claire for clear water. Just another of those difficult 'Sconnie names like Oconomowoc, Chequmegon, etc... It's a common mistake. Cheers!

      Yellow label is a mix of all 10 of 4R mash bills. It's hard to distinguish individual flavors and it's really low ABV. It's ok neat but better in a Kentucky mule. Keep it!

    Are there people from the government going around keeping track of the age of the whiskeys in all the distilleries? How do distilleries prove that their spirits are aged and what prevents them from faking an aged whiskey?

      All distilleries to highly-detailed reports of all production, processing, and storage. When things move they are reported down to the 100th of a decimal point on loss and transfer. Almost impossible to fake an age statement that way.

    Lip Service Rye...Haven't had that one, but have had their Burning Chair Bourbon, which is tasty.
    They are the ones making Ayate Tequila...which I had at a blind tasting on April Fool's Day. I'm not usually a t'kill ya person, but Ayate was rich, herbal, and almost delicate (in some respects).

      I would bet that in any US market, the value is worth the price.

      Absolutely. But for me, $100 or so per bottle is more than the value I get from it. If it were $60 or so, I'd be inclined to pick it up.
      The flavour profile of Burning Chair, for instance, didn't blow me away, although it was still a cool profile.

    One problem with the term "hoppiness" is that it really refers to two different things. It is really a language issue that the brewing community really has to correct because it makes discussing hops and beer flavor confusing. What I think Daniel doesn't like (and I'm mostly with him on this) is the extreme bitterness that kind of became a fad. The "west coast" style IPA at one point was a race to see who could pack the most bitterness into a beer. I'm not a fan. I have had the poster child for that stile (Pliny the Elder) and they managed to make it drinkable, partially by fermenting it to 11+%, but I'm still not a fan. New England style IPA on the other hand is also a "hop bomb" but the goal is for the hop flavors and not the bitterness. You might like those extremely hoppy, but not very bitter, beers.

      I'm actually not the biggest fan of the taste of whisky, but I'm obsessed with the process/art of making it, and I look forward to one day seeing my brand on this channel.
