Hats off to the vision of this restauranteur who despite securing 3 Michelin stars decided to make the drastic shift to a plant based menu! While his courage is refreshing his actions speak louder than most for his kindness to animals and the planet. He was featured in Netflix - “You are what you eat” documentary!
It's not about there being a dead animal involved weird guy, it's about certain things being worth more and costing more but you're just trying to convince yourself you didn't waste your money
You're paying for artistry and the curated dining experience.. but it's not accessible to the general public so the cririque is understandable. You'll probably get more value going to your local farmers market and cooking these vegetables fresh with your typical diet at home.
The point is there is a lot of effort to obtain caviar, which is available in smaller abundance (not my thing though). And You cannot readily recreate the animal from which meat is taken - immediately - like you can a plant. And there is quite a bit of effort going after fish/lobster, etc. you can continuously grow vegetables in a greenhouse or hydroponically. So the cost of the raw materials to make the meal are significantly lower, a fraction, of the cost to procure animal materials for a meal. Your getting completely fleeced by the hype surrounding the meal. But heh, people pay thousands for ugly ass shirts that have designer labels in them too.
Absolutely not. I wouldn’t pay that for a meal with actual substance to it either, which this one severely lacks. The portions are tiny, the actual dishes themselves do not looks the least appetizing, and then to put a $400 price tag on it, without a 20% tip… total highway robbery. I guess if you have the money to throw away, but even then it would seem ridiculously opulent and ultimately wasteful.
I told my sugar baby that a $3 tote bag can carry all of her $hit just as well as the damn $100,000 Birkin Bag; but she still insists on me buying it for her. Well, I guess I am going to have to go get me a new sugar baby. LOL!!!

My wife and I went there a few years ago; long before it became vegan. The food was really good. Btw, afterwards, I tried not to $hit out about $1,300 worth of food & services for a while. LOL!!!
