Try using an injector with the buttermilk. Brine also foil wrap the drumstick so they don't burn and I use a little honey glaze the last hour. Happy Thanksgiving gobble gobble
I have used a brine with chicken where you take milk and a little vinegar. Fry it in olive oil and oh man. Best ever! The vinegar would definitely make it moist. Have tried a brine before and oranges really moisten them up too. We have also found that older birds tend to tougher in our opinion
