    I made this last year for thanksgiving for my family when I JUST moved into my house. I’ve never really cooked anything before and my family laughed and made jokes about how I was gonna pull off cooking a Turkey with me never cooking before. My family is full of wonderful cooks and they’re known for their cooking. I did my best to copy EVERYTHING exactly as he explained. I woke up early and worked so hard to make sure this was perfect and I watched intently on everyone’s first bite and they all looked at me with huge eyes saying “HOW?!?!” They said it was the best Turkey and gravy they’ve ever had and nothing will ever compare They wanted me to host thanksgiving from now on! They just asked me this week if I was going to be hosting this year again so they can have that gravy and Turkey again and I said absolutely!!! Thank you Gordon Ramsay! The approval from my family meant EVERYTHING to me! 😭

    Ok...hear me out. I love to cook, but last Thanksgiving was the first year my family trusted me to make the turkey. Thanksgiving fell on my mother-in-law's birthday so it was a present of sorts that she didn't have to do the cooking (graciously offered by my wife of course, LOL). I was slightly panicked because my first turkey was going to be a pretty large 22lb bird. I watched video after video thinking I have no clue what I want to do, but knowing that I really wanted to wow her. After so many different CZcams "cooks" I found this gem by Chef Ramsey. I made copious notes with a timeline and everything. When I showed up with this glistening brown beauty and the homemade gravy in tow they were all in shock. I just found out I'm cooking the turkey again this year, but this time for my parents and my 102-year-old Polish grandmother who I got my love of cooking from in the first place. Thanks Gordon!

    HAPPY THANKSGIVING! I just did this again yesterday and last year. I always come back to say it's a winner! Juicy good! Also note: when he says put in oven at 220 for 10 mins to brown he mean's 425 and turn down to 350, that's what I did. I don't use lemon and you can add or reduce the spices you want. Using butter and oil is what keeps the bird moist and not carving it straight out of the oven let it rest MININUM 30mins. Hope everyone has happy holidays!

    Thank you Gordon Ramsey. My five year old grandson and I made the turkey and gravy and the whole family raved about the flavor. It was amazing. Resting the turkey for as long as we did was so scary, but we trusted you and you did not disappoint. We love watching your videos and will be making many more meals. Can't wait to make the whole deboned chicken with stuffing.

    Turkey Recipe: Turkey cooks at 30 minutes per kilo, basting every so often. (1 Kilo = 2.2 Pounds)
    The butter mix:
    375 g of butter (1 2/3 cups) room temp
    A touch of Salt and Pepper
    1 tablespoon of olive oil
    Zest of two lemons and the juice
    3 garlic cloves finely chopped
    Handful of Parsley chopped
    Inside Turkey:
    Season with salt and pepper
    Add two halved onions and one lemon
    Two bay leaves
    Cooking Instructions:
    Turkey cooks at 220C (430F) for 10 to 15 minutes to get really nice and brown. Then take turkey out of oven and baste with pan juices.
    Reduce temperature of oven to 180C (360F).
    Here is where Ramsay adds the bacon about half way to cook on top of Turkey (Ramsay puts bacon on when he takes it out to cook at lower temp, after basting. I do it half way through so it doesn't burn).
    Put turkey back in over at the lower temp mentioned above for the remainder of cooking.
    When turkey is done cooking, let rest, uncovered for 2.5 hours before carving.
    Gravy : 5:27
    Drain excess fat from the Turkey tray and put it back on the heat
    Take the onions out of Turkey and chop
    Take the bacon and chop
    Add to pan
    Chop the lemon and add to tray
    Two sprigs of Rosemary in tray
    3 tomatoes chopped and add
    Get Turkey trimmings (wings and butt tip) and add to tray
    1 bottle of dry cider (1liter) (I use 750 ml)
    As it reduces add the resting juices of your Turkey
    Reduce by half
    Smash everything with potato smasher
    600ml of chicken stock and reduce again
    Strain it and add a rosemary for flavor
    To serve gravy get a handful of walnuts and crush put at the bottom of gravy tray and add gravy (remove the rosemary if you added it at the end)
    Done

    I've made this turkey for five years running and each year the crowd gets bigger. Once people start eating all you hear is yummy noises and "please pass the turkey" or "please pass the gravy". It's just a fantastic recipe that I follow word by word, extract every last drop. Thank you, Chef Ramsey, your recipe makes me look good.

    My first time made thanksgiving turkey dish. It turned out so delicious. I followed the exactly he explained in the video and it turns out perfectly. I ate 1/3 of the turkey because it was so yummy and I just kept eating it. When baking the turkey, the smells was so good and it spreads the entire house. The potato was easy to make. I only seasoning with salt and pepper, and it was so tasty. Amazing thanksgiving Turkey receipts. Thank you for the video. Love it!

      The butter under the skin and bacon over the top definitely helps moisture. Myself, I love to smoke turkey, so I tend to inject with apple cider and chicken broth. Baste every 15 minutes or so. Is some tending, but yes you can achieve moist turkey.

    Okay I have been making my turkey for years with butter + olive oil + stuffing onion, garlic & fresh herbs in the cavity + putting bacon strips on it and using that for the gravy, and letting it rest for a couple of hours. Everyone always raves about my turkey. I feel like I got a Gordon Ramsey seal of approval, my method is so similar to his.

    Im convinced, best turkey and gravy possible, started following this three years ago and Ill never do anything different. The only thing I change is I add thyme, rosemary, sage, carrot and celery inside w the onion, lemon, and bay leaves. I add the walnuts earlier to be sieved out w the rest. I usually dont have the hard cider so I add regular apple cider/white wine but just small splashes. Make sure to do that to deglaze the sauté and reduce it down before adding the stock.
    DONT SKIP THE RESTING😁👍🏼👍🏼

    Im a 25 year old single lady. After years of my parents putting on thanksgiving, this past October (Thanksgiving in Canada) I offered to do the meal. I followed this turkey recipe from this video. Gordon is a genuis. It was the best turkey, even better than my moms! I will use this recipe for turkey for now on for every special occassion (Christmas, Easter, Thanksgiving)

    It was my first time to cook Turkey and this came to my feed in Pinterest I’m telling you all this is the best recipe and I followed Chefs step by step and it was perfect! I love how the bacon made the skin crispy and meat so tender and not dry thanks chef! My first Turkey attempt was a huge success and still this day my only recipe I use every thanksgiving

    It's that time of year again, folks.
    If you are making his turkey again this year, here it is:
    This is based on a 11-13 pound turkey. Reminder that you should be thawing your frozen turkey in the fridge atleast 3 days in advanced. So, if you're cooking this for Thursday, you want to have it thawing in the fridge and thawed by Wednesday night so that you can do the pre-oven steps Gordon does. I advise putting your turkey in the fridge Sunday morning. Turkey's can sit in the fridge for up to 2 days when completely thawed. That said, here's my notes on Gordon's recipe in this video.
    Ingredients
    1 free-range turkey (ideally Norfolk Black or Bronze), about 11-12 pounds.
    sea salt and freshly ground black pepper
    2 onions, peeled and halved
    1 lemon, halved
    1 head of garlic, halved horizontally
    6 bay leaves
    olive oil, to drizzle
    8 rashers of smoked streaky bacon
    Lemon, Parsley And Garlic Butter:
    3 Sticks of butter, at room temperature
    1 tbsp olive oil
    finely grated zest and juice of 2 small lemons
    3 garlic cloves, peeled and crushed
    small bunch of flat leaf parsley, leaves only, chopped
    Method
    Preheat the oven to 428°F/Gas 7. Meanwhile, prepare the herb butter. Put the butter into a large bowl and season with salt and pepper. Add the olive oil and mix well. Add the lemon-2 zest and juice, 3 cloves crushed garlic and chopped parsley. Mix well to combine.
    Remove the giblets from the turkey cavity. Season the cavity well with salt and pepper, then stuff with the onions, lemon, garlic halves and 2 bay leaves.
    With your hands, loosen the skin on the breast from both ends of the bird so that you will be able to stuff the flavored butter underneath it, making sure you keep the skin intact. Repeat with the skin on the legs - from the lower side of the breast feel your way under the skin and out towards the leg, loosening the gap.
    Stuff half the butter mix into the opened spaces under the skin. From the outside of the skin, gently massage the butter around the breasts so that the meat is evenly covered. Finally, insert the rest of the bay leaves under the skin of the breasts.
    Place the bird in a large roasting tray, breast side up. Spread the rest of the butter all over the skin. Season well with salt and pepper, then drizzle with a little olive oil. (If preparing a day ahead, cover the turkey with foil and refrigerate at this stage.)
    Roast the turkey in the hot oven for 10-15 minutes. Take the tray out of the oven, baste the bird with the pan juices and lay the bacon rashers over the breast to keep it moist. Baste again. Lower the setting to 356°F/Gas 4 and cook for about 2½ hours (calculating at 30 minutes per kg), basting occasionally.
    To test whether your turkey is cooked, insert a skewer into the thickest part of the leg and check that the juices are running clear, rather than pink. As oven temperatures and turkey shapes and sizes vary, it is crucial to check your turkey about 30 minutes before the calculated roasting time. If the juices are pink, roast for another 15 minutes and check again. Repeat as necessary until the turkey is cooked.
    Transfer the turkey to a warmed platter and remove the parson’s nose, wings and tips of the drumsticks; reserve these for the gravy. Leave the turkey to rest in a warm place for at least 45 minutes; make the gravy in the meantime. Remove the bay leaves from under the skin before carving. Serve the turkey with the piping hot gravy, stuffing and accompaniments.
    Gordon Ramsay’s top tips for making roast turkey with lemon, parsley and garlic butter
    How to keep the turkey moist
    The butter in this recipe keeps the turkey moist - which is one of the most important things to do when it comes to roasting a turkey as its such a lean meat. Adding bacon to the top of the turkey (after 10 mins in the oven, and basting) also helps to protect the roast turkey from drying out when cooking.
    How do you stop the butter from burning when roasting a turkey?
    The olive oil in the butter mixture stops the butter mixture from burning in the turkey so make sure you add it in. Drizzle the turkey with oil before cooking too. This will help the skin crisp up and stop the butter from burning.
    How to prepare the garlic for a roast turkey
    Make sure you puree and crush the garlic before adding to the butter mix as it will make sure the turkey meat is infused gently and won’t be too overpowering.
    How to stuff a roast turkey
    Putting the onions in halved will make sure that when the bird roasts, the onion flavor will be transferred into the birds meat. The lemon and bay leaves add a bitter sweet flavor to the bird when paired with the onion is heavenly.
    How do you stuff turkey with butter?
    The butter in this recipe is placed between the meat and the skin, under the skin of the turkey to guarantee the meat stays moist during roasting. When adding the butter, add under the skin, pin the opening down and massage the butter into the middle of the bird to make sure the butter is evenly spread. The remaining butter should be massaged on the outside of the bird over the breast, wings and legs.
    Can you prepare the turkey the night before?
    You can do all the prep for the turkey the night before. Just cover the turkey in tin foil once you’ve buttered and stuffed it. You can then store in the fridge overnight ready to cook first thing Christmas or Thanksgiving morning.
    How long to leave roast turkey to rest
    Leaving the turkey to rest after cooking for about 2-2 and a half hours. As the meat relaxes it will absorb more of the juices and flavors making it more succulent, flavorsome and tender when it comes to serving, plus it’ll be easier to carve.
    *GRAVY*
    Gordon Ramsey Turkey Gravy
    Ingredients
    -Bacon from top of turkey
    Cut up the bacon, throw into tray
    -Roasted onions from cavity
    chop up, throw into tray
    -Roasted lemons -chop up and throw into tray
    -Springs of Rosemary
    FRY
    -3 chopped tomatos
    -Snap off the wing of the turkey
    -take off all the trimmings of the turkey
    -Pour in dry apple cider
    -Pour in resting juices
    -Chicken stock
    -Sprig of rosemary
    -Add crushed walnuts
    Drain excess fat from turkey roasting tray and put it back on heat. Then remove the bacon from the top of the turkey. And the roasted onions from the cavity. Finally take out the roasted lemon.
    First of all, cut up the bacon. Bacon into the tray. Chop up the onion and put into tray. Next chop up the roasted lemon and add to the tray.
    Put in a couple sprigs of rosemary. And fry.
    Add 3 chopped tomatos to thicken up the gravy.
    Snap off the wing, take off all the trimmings, bits never used. Add them into your gravy. Throw into pan. Next pour in dry cider. As cider reduces, pour in resting juices from turkey. When liquid has reduced by half, crush vegatables and turkey pieces with masher to extract maxium flavor. Pour in chicken stock and reduce again.
    Now sift it. use back of ladel to push it through the sift, pop in sprig of rosemary. Simply add crushed walnuts to the bottom of the gravy boat and ladel in hot gravy.

People only know it because of american pop cultural domination. Usually people in Europe when thinking on thanksgiving, they think also on Christmas and associate with it.     Thank you Chef for posting this easy, delicious recipe. We had two turkeys, one which was prepared by our family member who was a restaurant owner, and the bnb other by mre. My family quickly ate the turkey i made. When the second turkey was carved, my family was still asking for leftover crumbs of the one i cooked.     Made this turkey this year and everyone LOVED IT! I had a few people say they never like the turkey usually at thanksgiving but they loved this turkey. The turkey had such great flavor. The only thing is the bacon makes the gravy very salty. But you don’t taste the saltiness when it’s mixed in with everything you put it on. Mmm delicious!!!

    Just made this for my mom for Canadian thanksgiving, she loved it and the bacon was weird but man was it good also in the gravy. Thanks Chef Ramsey you did me well keep it up I have learned a lot for watching your shows.
