    The Philippines cuisine is on the upstart on the global scene and FEATR is one the forefront, giving these less known Filipino food it's well deserve spotlight.     Not Lucena, but I am reminded of my grandmother bringing me to a small tinapahan in Calauag when I was young. Also, nice touch adding Gymnopedie#1 as background music.

    Market view, Lucena city is very near to our house.. You will know that you are in market view, when you smell smoke from the tapahan.. ☺️☺️Our tinapa in LUCENA city is probably the most delicious tapa i’ve ever tasted.. Indeed, this video is artisically .. World class, FEATR.. 👏🏻👏🏻…

    I remember when I was small, my lola would always bring me to the market and at the very end of our shopping activity we would get this tinapa. I hope they keep the business alive so that the next generation would still enjoy tinapa :)

    My favorite ulam in the whole world ❤ I always choose tinapa over all other dishes, local and foreign. Fresh sliced tomato, steaming hot rice, 2 pcs of tinapa and I'm in heaven 😋

    I found myself missing tinapa when I moved to Cebu. I used to live in Cavite close to Rosario where tinapa is also plenty. Now, I just buy online or yung frozen as grocery, pero iba pa rin yung fresh. As always, superb video Featr!

    I suggest they used bamboo strainers instead of those plastic crates 04:08 because plastic can leach harmful chemicals when it is exposed to a temperature of 65°C

    I love the content, history, and story behind the makers of Tinapa. What I disliked was that the narration was in English. Your interviewees were speaking in Filipino. You could have just added English subtitles for it. My point is to make the narrator speak in Filipino.

    Quezon Tinapa is the best tinapa so far for me. Smoky, not too salty, not dry.

    I only eat smoked fish when it's from Rosario, Cavite. Particularly, their Tinapang Salinas. But I would definitely try this Quezon's tinapa when I go there. Hopefully, it's equally as good as my favorite Tinapang Salinas.

    Our house in Nueva Ecija have one of these in the neighborhood. I remember my mother trading bundles of newspaper for some tinapa.

    I love a particular smoke Taal herring or Tawilis tinapa. You can buy them in Bicutan market if you don’t want to go all the way to tagaytay every Saturday fortnightly. Real Tawilis can only be found in lake Taal.

      It's not European smoked fish. The wood used traditionally didn't matter in Filipino tapa/tinapa. In fact, in the pre-colonial era they were just placed on racks (tapahan) over the cooking pit inside houses, getting whatever smoke is coming from the daily dishes. That is still the method used in the Cordilleras for etag (smoked pork) for example. Similar to traditional smoked fish dishes in other parts of Asia.
      It was a method of PRESERVING extra food so that they last longer. Using specific wood just for smoking fish would be wasting even more precious resources and defeat the point.

    I’m surprised they boil it first then smoke. I smoke mackerel whole and I allow the heat of the warm smoker to cook it and smoke at the same time. I’ll try this boil and smoke method now.

    i love tinapa pero im just concerned because this doesnt go thru fda or any regulating bodies for testing especially for lead content. given that they also use old newspaper as wrappers. we all know that soy ink or other food grade inks are not mandatory here in the Philippines.
