How is the steam produced? Is it connected to the water line, do you fill a container in the oven, or does it create steam from vapor in the air?

So, the manual doesn't describe what the different racks are for. I assume the solid one is simply for leaving on tne bottom to prevent stuff from hitting the bottom?
The perforated are for veggies?
I'd like to see some videos describing how to use these. And then there's also a temperature probe.

no, you can cook on all the racks... I have made a meatloaf and ribs on the solid pan, it can also be used for a catch pan. The oven bottom, as well as the whole oven, wipes out easily with a rag.as it is shiny steel. I wipe out my wolf steam oven right after I am done cooking while it is still warm, I use a damp rag and dry after... cleans easily. I love mine...best feature you can reheat any leftovers just like you made it fresh.. enjoy!!
This would be a great oven if it had a swing door. Only reason my wife wont allow it. She is too short to reach over the door.
No so sure about this oven. It seems to require its own proprietary baking pans. Can it accommodate a traditional half sheet baking pan? And some of the pans pictured had perforated bottoms, meaning any drippings would fall to the bottom of the oven. It can probably do an excellent job with a French baguette, but how about with a sheet cake baked in a nonstick half sheet? The appliance store priced this one for me, butI didn't really understand what she was pricing when she said "convection steam oven." The "videos" on Wolf's own web page aren't videos. They're just still images. I might do some rethinking of my kitchen.
not true to all of your questions. Ive been using my steam oven and I use a standard microwave pan for almost all foods
Hi Fred, the Wolf convection steam oven comes with two wire oven racks, one perforated pan, one solid 17 3/4" x 1" x 15" pan, and a temperature probe. The perforated pan works well for many recipes that require steam, as is allows the steam to envelope the food. You can use a solid pan, placed on rack below the perforated pan, to catch drippings if you wish. We got this unit 3 years ago when we had the kitchen redone, at the same time we got the big ass 6- burner gas range. While we use the cooktop of the big range all the time we only use the oven part when we have multiple dishes - that is to say, we are constantly using the smaller "steam" oven. The truth for us is that we rarely steam but it is an awesome smaller oven for baking, casseroles, roasts. We don't use the sheet pans it comes with. Just a regular cookie sheet just fits. For our family it is simply the main kitchen oven. It hears up quickly and with less energy than the big boy unit., which has become our overflow. We really do love the setup. The matching coffee maker fits just above and we love that too. We've become foodies and cook all the time now (especially with pandemic). We've never had any issues with any of the units. Well done Wolf.

If the claims made in this promotion video are true, who would need to eat out or order take-outs? This would spell the beginning of mass unemployment for chefs and waiting staff in restaurants. All one needs to cook a meal for the entire family are recipe book(s), an expensive steam oven... Having said this, I must say that this trend is the life-line of those suffering from food allergies including severe gastro reactions to gluten.
Cooking isn't as simple as pressing a button (like that "expert" chef says in this video). Having steam function does help making steaming food a great deal easier though doing away with steamers etc., which take up great deal of storage space in the kitchen.
