- Join Priya Krishna in the Bon Appétit Test Kitchen as she makes her mom's roasted cauliflower and potato aloo gobi. Too often aloo gobi is mushy or greasy. Here’s how to make crisp, crunchy, cumin-coated morsels of cauliflower and potato.

The excitement when someone gave Priya a "shabash" after having cooked the veg just liked her mom, ADORABLE!!!
So it’s the Hindi version of “Bless your heart” in the South?
@@CantankerousDave Could be. Doesn't "Bless your heart" have a sting in the tail?
It's actually Urdu and not hindi. *facepalm*
@Vikas Sharma that's not the nicest thing to say?? The only way the world is going to really come together is if you actually took the time to help us learn about your culture... not when you immediately dismiss us and force us to stay ignorant. I'd love to actually know the proper difference!

Ahem... Tasty!
Well that's the difference between a test kitchen and let's say...a studio.
right! i love watching ba not only for amazing food and people but the kitchen is delightfully bright and alive
thats what top dollar office space in 1 world trade center gets you
Plus that atmosphere noise of other people in the kitchen, talking, clanging of bowls and utensils. The entirety of it is so wholesome ^.^
Because of this series, I've opened my self up to Indian food. I thought I wouldn't like it, it always looks and smelled delicious but I never had the nerve to try it. But because of this show, I've broadened my pallet and culinary skills. I've started making my own butter chicken and naan and it turned out great!! Its now a common weeknight meal and my husband loves it. Thank you Priya, you inspire me.
🤩 Sha-bash.
I'm happy for you Tabatha that you gave a try to the Indian cuisine and adapted it in your household meal. Shabash :D
What a wholesome comment! Have you tried any of Priya's recipes specifically? Or just Indian cuisine in general?
You thought you wouldn't like it, but thought it looked and smelled delicious? Makes sense.
@@evanschroeder8411 I love the way coffee looks and smells but can't stand drinking it. There could be issues of texture or spiciness at play as well.
I am also intimidated by indian cuisine. When it requires the skills of an indian aunty to master the recipe. Indian cuisine is delicious. I can eat it with my eyes 😍😍.

Priya calling out Gaby on being amazing is the wholesome content I need more of in my life
i love how much of priya's dishes are tied so intimately to her past/family.
Have there been any that aren't? Not being snarky, I just can't remember any that aren't a family recipe.
That's because they're based on her book which are a compilation of home and family recipes that she modified/updated
@@recoil53 Asian dishes are mostly, if not, all super tied towards family because it's a mix of "this version of this classic Asian dish is not as good as my [family member]'s version" and being raised with this Asian dish always on breakfast, lunch or dinner, basically a constant on an Asian kid's life.
it's not really different towards non-Asian people with their non-Asian classic dishes, tbh. everyone has their own preference of pie for Thanksgiving, their own savory crepe, the mushiness of aloo gobi, or the chicken broth with rice, waiting on their home or maybe even still opened restaurant/food joint.
Every pro chef's goal is to make it as good as their mom did
Andy is worried about double dipping his fingers. Priya feeds everyone on the same fork. love it.

her lack of eye contact is so darn relatable
Audrey’s daughter Isn’t it?? 😅
Huh? She’s cooking so she has to look at the food right?
I didn't notice anything unusual the first time but watch her interact with Andy, definitely isn't doing much eye contact, at one point he leans in to try to connect more. Like her I'd rather be looking at the aloo gobi, no offense to Andy :)
Danielle Goldman gotcha
Might also be a culural holdover, looking elders in the eyes is often considered rude or impudent in Indian/Pakistani culture.

I used to watch bend it like Beckham religiously
That and Bride and Prejudice
@@SourPeachHeart i love that movie to, I had a huge childhood crush on aishwarya rai

Honestly whoever is in charge of finding people for test kitchen videos, especially in cases like Priya who are more guests (vs direct BA employees) needs to get all the bonuses. How they manage to find such fun, interesting and charismatic people so consistently is beyond me. I love everyone in these videos and always come away with an abundance of knowledge.
I'll admit, I shied away from BA in the beginning because I though it would probably be pretentious and over the top, yet everyone and everything on this channel is amazing. A far more grounded, down to earth and enjoyable experience especially compared to Tasty and the like. Seeing the outtakes and especially keeping in things like Carla once throwing away a part of a recipe she messed up. Continuously reinforcing that mistakes in the kitchen are ok and happen to even professionals, and that things don't need to be 100% picture perfect is so refreshing and reassuring.
TL;DR All of you behind and in the BA Test kitchen are amazing and lovely people. I'm so glad to be able to have the experience this channel provides.,
Agreed!
And it's all supplied free to us!! 😭😍 We truly are living in the greatest timeline 💚
Yes, these are particularly quality people. They are all educated in the culinary arts and have unique cooking expertise. They are also in a creative field, which means they're generally going to be more interesting. Most people are not of this caliber, sadly.

This is the recipe that put Aloo Gobi as one of my fave Indian dishes. I always return to this recipe.
I adore how much joy she has when talking about her parents. I feel her love for her culture and heritage. It radiates. Can't wait to try this!
A quick story: my mum cuts up paneer into cubes and fries until crispy. Then she adds it into her aloo gobi. Delicious delicious
Wow, I'm doing that. Thank you!
@@karysmuh very welcome! lemme know how you find it!

Priya is the sweetest and most pure human omg I love her. Her feeding everyone at the end, she is so pure
I love roasting veggies but stopped drizzling oil over the top a few years ago (some get oil, other areas don't and it uses a TON of oil). Instead, I use a huge bowl or a bag and add 1-2 tbs oil and shake/toss with oil, spices and salt. SO much better and all get coated. Yum!
Olivia H. W. Honestly I just toss it in the pan so I don’t dirty a second dish!
You need to get in with your hands to rub the fats and seasoning onto the veggies. Can be done directly in the pan or a large mixing bowl.
Using a resealable plastic bag helps

SHOUT OUT TO BEND IT LIKE BECKHAM THE GREATEST MOVIE EVER MADE OF ALL TIME
You haven't seen many movies have you?
Bend it Like Beckham is one of my favourite movies, but I can't say that it's the best ever. It's very, very, good and it treats different cultures getting on with each other very well.
One of my favourites is "The Castle". It's very Australian :-)
That, my good sir, is a lie!
@@ElMoShApPiNeSs hey not every movie can be Chicken Run okay

That 7:27 shabash is what happens when you listen to someone instead of just hearing them.
I love mushy aloo gobi. In fact, i add tomatoes and peas to my aloo gobi. That's our family favourite! :)
I love all BA members!!!
They're all so perfect
Priya, you're making food for BA in NY on YT.
You're beyond shabash.

Literally only heard of this from Bend It Like Beckham. This is fantastic and now I can make it... or attempt to!

Today's Chris aesthetic (and everyday's): Chris Morroco is by day a chef for a food magazine but by night he's a forensic analyst who specializes in solving crimes using only his advanced palate and intense logic. He's a loose cannon and plays by his own rules. He gets a call from the CIA: It's an international crime only he can solve! Can he do it while Priya films at the next table over? In this episode of BA Nights, Chris Morroco is at his most desperate ... and deadly!
This week, Chris is ridding the world of "natural vanilla flavoring."

This looks incredible, thank you Priya. I am definitely a corn fed, meat eating, mid-western boy at heart, but dishes like this are why I don't put food in categories if I can avoid it. It isn't about vegetarian food, or molecular gastronomy, or gluten free, or regional, or whatever other category someone wants to pigeonhole themselves with. It's about good food. And while Aloo Gobi has always been good, this look amazing, and I know what I'm making this weekend.
I made this tonight for dinner and it went down a treat with my family! Thanks Priya!
