    I love this channel, it's such a cultural treasure trove - there are so many things I forgot existed, and then things like this which I have NEVER seen before. The little role-playing intro was really insightful as well, it seems like such a simple thing, but capturing the interaction and language used for the dish is something you don't often see (hear?!) and I love that extra detail! It gives it context that would otherwise be lost :)

    Proud Yorkshireman 'ere. Yorkshire fish cakes done in beef drip are to die for!! Unlike those little orange hockey pucks they sell everywhere else.

    The local chippy where I grew up, deep fried battered thick slices of potato and called them potato scallops. Delicious with lots of salt and vinegar and mushy peas.

    Being a Yorkshire lass i can attest to the cake and chips being the best treat ever on a Friday teatime, we even got a bag of scraps to share for free.....We had the best chippy.

    We grew up on a cake butty for lunch pretty much every school day. Your mam gave you a quid for lunch and you could get a cake butty for 50p, a can of Quattro / Lilt / Cherry Coke for 20p, a pack of pickled onion space raiders for 10p and a Milka Lila Pause chocolate bar for the other 20p. there was nothing better than a hot crispy cake in a soft buttered breadcake with tomato sauce and loads of S&V. Every day and we were still thin as rakes from walking a mile to and from school, playing football or BMXing until dark every night. Good days.

      Yes 100% straight from my favourite chippy, when I was there last year. They showed me everything. I din't know until then. It amazed me. Actually if you google now Fish and chips shop, rice cones it comes up in a couple of very small mentions. Best, Rik

    I moved from Yorkshire to Lancashire over 30 years ago and recently have been craving these fish cakes. I'm hopeless in the kitchen but a couple of weeks ago decided to make some. Took me back to being a kid again.

    I'm Australian, so have not had fish cakes like this. I bet my late English father in law would have though! I'm definitely trying these. I could smell them cooking from here! Plus, the sound of that crispy batter......I'm drooling!

    Bang on. I fondly remember cake and chips as a kid, with scraps, with salt and vinegar which I would mop up with a tea cake. Nice one, chef from a fellow Yorkshireman 👍

    Hey up, lad! We had these in Lancashire too, tha' knows. 😆 My mother reckoned it was a cheaper meal than the normal fish filets made for poor people. 😮 I loved them.

    I went to boarding school in Yorkshire, happy days. The chips were to die for. I have never had fish cake like I ate while I was at school. 😃

    We used to have fish cakes like this as a kid when I grew up in the 70s and 80s in a Nottinghamshire town that was not far from South Yorkshire. I think they had a slightly different name as we also had fish cakes made with mashed potato and fish. But they were always handmade by the fryer, never frozen.
    And in a chippy you never asked for fish and chips, it was always “one of each” or “one of each with peas” if you wanted mushy peas.

    Rik, you have made my day. The first time I tried these was when I used to go to a Chippie in Yeadon, that was back in the mid 80s when I used to go to a place that was one of our customers and they were then and still are, the Best Fishcakes I have ever eaten and I have worked all over our Country and I always looked forward to it. No matter where you go, the best Fishcakes are in Yorkshire Mate 💯%. Some of the Chippies in Wigan still do Scraps and I love them, who wouldn't, with Salt & Vinegar. Nice tip with The Batter too 👍👍

      Went to a fish shop in Hemsworth many years ago, on the main road across from the market and asked for fishcake and chips. They give me one of those round things covered in breadcrumbs. When I complained and pointed to a fishcake in the warming cabinet, she said ' You mean a turnover' . 'What's a turnover 'I said. 'One of these'. Where I come from they're called fishcakes. I live at the other side of Wakefield.

    I was brought up in the West Riding of Yorkshire in the 1960's. My dad would sometimes bring home fish cakes and chips and I loved it! We went south in the ate sixties because of my dad's work and I have not eaten them since, but still have a strong memory of how great they were. Curiously I was reminiscing about them only the other night and this video has turned up by coincidence!! Thanks so much for the memory!!

    When I lived in the uk, I lived in Dorset. The scraps as you call them are known as scratching there. One of the best things to have with fish and chips, makes it all worthwhile. Since living in Thailand, I haven’t had this type of dish for the past 30 years. This video brought back a lot of memories of going to the local fish and chip shop. Never a lover of fish cakes myself but pineapple fritters, potato fritters, a piece of roe in batter, lovely. Have to introduce my son to this stuff this week and get in to the kitchen. Thanks Rik for the memories :)

      Not really. Potato is highly nutritious when cooked without water. It has high amounts of vitamins and minerals, and together with the cod fish providing protein and more minerals. Back in Ireland, the Potato Famine was so impactful because potatoes were a staple supplemented by oats, wheat, eggs, cheese, milk, and vegetables. Meat was a luxury the tenants farmers couldn't get hold of, as the British colonists exported food for sale in Britain, and allowed the Irish to starve, and didn't stop when Blight attacked the potato crop. The only questionable thing about this meal is the quality of fat used. Beef dripping would have been traditional and less damaging than hydrogenated alternatives, and too much polyunsaturated oil consumption is suspected to be implicated in inflammatory disorders. So... Do not look down on the humble potato. Nutrition used to be bad before World War II and because fresh fruit, veg, and dairy were expensive. And those times have been visited upon us again by lousy ideology impoverishing people in the Cost of Living Crisis.

    What a fascinating recipe! You are making this New Yorker very hungry! I love how the scraps are contained between the potato slices. I've never seen that technique before, with using the "rice corns" (what we might call farina or Cream of Rice cereal) as kind of an absorbent glue. Bet it gives some texture, too, similar to external cornmeal "breading" on southern US fried catfish, etc. I've never seen the vinegar technique, either, to catalyze the leavening. Here we might use baking powder/baking soda, or in the south, buttermilk to provide the acidity for lift. Really enjoyed this, Rik!

    I miss the Yorkshire fish and chips especially the fish cakes. We don’t have them in OZ. (Loved going to Harry Ramsdens 😊 as a kid) I’m going to make tonight as I never knew how to make fish cakes. 👍

    My first full time job was at a store next door to a fish shop. The fish shop had a deep fat fryer & we used to get fish & "chips" for lunch. It was the best fish & french fries I ever had. It's gone now, been gone for a long time. 😢

    When I was young, I used to go into old town Alexandria Virginia and have a huge plate of shoe string potatoes all for 25 cents.. and a Coca-Cola, and we thought that was the best thing in the world, smothered and catsup sometimes Malt vinegar…

    That looks good! It reminded me of what they have in Wigan- a smack. Which is basically a potato fritter. Youd have em on a barm cake with mushy peas 🤤. Easy enough to make your own too! Some neighbouring towns call em "specials" instead of smacks

    That looks delish... Round our way (Hartlepool, in the North East) they're called a fritter or fish fritter. The savoury ones are called a pattie.

    Being a Yorkshire man I grew up on cake and chips it was great when the fish and chips shops only sold the basics none of this kebabs and burgers rubbish , whenever I get back to west Yorkshire I try to find a small back street chippy and have cake and chips finishing off the cake in a well buttered bread roll , proper fish cakes are getting harder to find where I live now so I'm going to be giving this a try at the weekend thank you for an excellent video to follow

You get back to West Yorkshire my favourite chippy by far is; Park View Fisheries 83 Ackworth Rd, Featherstone, Pontefract WF7 5LY, United Kingdom. I ate from there regular - picking up and taking to Mum's. I always got a bit extra sharing with her (even though she always said she didn't want any) She always did. Good times! Take care mate.     Never seen this anywhere..I worked at a Scottish merchant, old town, Alexandria, Virginia and Irish connection in Occoquan, Virginia the Washington metropolitan area. Have many cookbooks it is definitely a local regional loved dish..

      It is - Its a classic Yorkshire Fish and Chip shop dish! Loved by many - it used to be so cheap to buy back in the day - not so anymore, still cheaper than Fish and Chips. Best, Rik

      Fish cakes (generally not as good as these though) used to be available in chip shops everywhere in England years ago. Mostly in breadcrumbs but sometimes in batter like these.

      I wouldn't put it down to ignorance - there are many different dishes to eat in the UK and this is more regional to the Yorkshire region - It is in other parts, however not as much. Next time! Best, Rik

    The cake and chips remind me of when I was a young boy. I loved cake and chips with salt and vinegar,a lovely treat usually on a Friday tea time 👍👍

    I live in Yorkshire too, we call that a Fish Pattie, with chips and scraps, never take the scraps, but I like a fishpattie.

    Missed a good cake & chips. 15yrs from Leeds and 15yrs away. Had some fish cake & chips during a trip back up north near Birmingham, it was sadly not the same cake & chips I remembered as a wee lad.

    Your channel is the best cooking one on CZcams. I love the way you have a down to earth approach to cooking. As you are making different dishes from back home (the UK) I'd be very grateful if you could find out the recipe for the M & S, creamy chicken pie. Also, I'd love to be able to make both pies and quiches with the pastry they use, is it like the 'exceedingly' good one you made the mince pies with, but without the sugar. Thanks again. BTW where are you from? Yorkshire or Lancashire?

    Loved your chippy conversation example - asking if you want "Salt & Vinegar" sounds much better than "Salt and Non Brewed Condiment, love?" ha.
    I know the dish is more about the Cake but those home cooked chips look absolutely stunning. The colour, the softness inside and the size are what I would describe as the perfect chip.

    They look handsome! I've put on a stone just watching this video! We have scraps down here in Brighton, but never the fish cake! Our fish cakes are made with cod roe. When I was little in the 50s and 60s, my mum used to get fresh cod's roe from the fishmonger, flour it and fry it. It was lovely.

    I did a year at law school in York early 90's, when the Terry's factory was still making chocolate orange (what a smell) - coming from the south I'd never had scraps before. What a revelation - I can't quite believe I'd never had them before. The other revelation was the occassional cake! I miss those days.

    Yorkshire is a BIG place with 5 million people - 2 million more than Wales, There are 5 or six Yorkshire accents and some traditions dont span everywhere. I am thinking 'cake and chips' comes from certain areas as I have never heard it. Where I come from it;s 'Patty and chips' or 'fishcake and chips' but we DO do the best fishcake and chips in the WORLD and yours look very very VERY good and I am famished. x

    I am lucky enough to live near to, what I think is, the best chip shop in Leeds. He still makes his fish cakes like this whilst many others have gone on to (I can only describe as a filling of mashed fish and mashed potatoes combined) horrible things. I hope this wonderful video inspires people to have a go at these because they are wonderful things to eat.

    Thanks for this , brings back memories of living in Bingly going to the pub then off to the Chippy for Cake and Chips . The cake was served in a Huge buttered Bap. Just the ticket after a few pints. Then jump on the bus about 11.30, yes they really did run that late in those days

    I’ve been looking for the chip shop batter recipe for years! All I knew was it was mostly just flour and water but could never understand why mine didn’t taste the same. I finally know! It was the bicarb and vinegar that gives it airation! Thanks for unlocking this secret. Unfortunately the chip shop nearest me is expensive and poor quality & poor execution, so now I feel excited to try this batter recipe out for myself! 😊

    The two slices of potato with fish in batter is a scallop round my area,a fish cake is fish flakes/chunks mixed with mashed potatoes,made into a patty/cake dipped in batter or breadcrumbs then fried

    I live in north Halifax, here they call it sandwich and chips, which it basically is a piece of fish sandwiched between two slices of potato and deep fried in batter. In south Halifax they call it cake and chips. When chipping potatoes were out of season, my local chippy used to cut small potatoes in half and deep fry them, they called those "chats".

      I think it's rice flour, which is a bit coarse. Not to be confused with glutinous rice flour a
      which has different uses.
