I am Nigerian but married to a Ghanaian. You can also use baking soda to give it that color. For the stew, they use LOADS of onion, lik almost 8bug onion for a pot. They say that is the secret of waakye stew. By the way I loveeeee kenkey and fish

Same here I'm American Nigerian married to a ghanian and when I tell you I love their food,I've learned how to make it ohhh!! Waakye is my specialty!! I love how they use lots of ginger and onions in their food which gives so many yummy flavors

Waakye isn’t compete without spaghetti, shitto, assorted meat and garri. For the longest time I refused to try banku. When i finally tried it, soo delish 🤤 The watery soup is called lite (light) soup. My favorite ghanaian “dish” is SHITTO! When my ghanaian friend mails me a big jar of shitto yeah, i can finish it within a week and half. Cuz i’ll eat it with anything and everything!!!! Gosh I love Shitto ❤️

Waakye is not complete without gari and spaghetti with salad. You should try waakye made in Ghana. You will love it. The waakye is red because they use millet leave which gives it that distinct colour. But you can prepare it without the leaves.

Interesting to see a street vendor in Nigeria selling Ghanaian food 😊
The corn dough used for banku is fermented hence the sour after taste and it is mixed with cassava dough
The waakye is a mix of beans and rice with a particular reddish/purple leave that gives it that colour
And oh I realize the difference in what is referred to as okro soup and stew
When a Ghanaian says okro soup, it is liquid in appearance and okro stew has less liquid

I’m a Nigerian currently living in Ghana and Waakye is lovely. Waakye is a mixture of rice and beans. It’s best eaten with some veggies, plantain , fish /egg or any protein of your choice and some people do add spaghetti to it tho. Banku slaps sometimes when you eat it and can as well be eaten with tilapia ganished with onion, blended pepper, ketchup and some tomato slices. 😋😋

    • @nurseorganics1589

Oh my, this is exactly how my Ghanaian friends served it to me recently. I mean the banku with tilapia ganished with onion, blended pepper. But I only ate the plain tilapia because I couldn't handle the fresh blended peppers or onions. Shito is the best thing since sliced bread!

Soup around the world is liquid..... stew does not have liquid. What you call soup is stew around the world . Ghanaians have soups ( okra soups) they also have stews ( okra stews ) you eat fufu in soups not stew you eat banku with soup, stew , fried fish etc you eat fufu in soup ( I said In because Ghanaian fufu sits in soup never separated )
