    3/4 cup (75g) blanched almond flour
    3 tablespoons (35g) powdered erythritol
    1 tablespoon (15g) unsweetened cocoa powder
    ( I used unsweetened black cocoa powder)
    3 tablespoons (43g) melted salted butter
    •BLUEBERRY PURÉE•
    150g fresh blueberries
    50g granulated erythritol
    1/2 (8g) tablespoon lemon juice
    •CREAM CHEESE FILLING•
    200g cream cheese (room temperature)
    50g powdered erythritol
    35g plain yogurt
    1 tbsp (15mL) lemon juice
    1 tablespoon (15g) powdered gelatine soaked in 2 tablespoons cold water.
    120ml heavy whipping cream
    50g of blueberry purée
    •TOP LAYER•
    100g blueberry purée
    50g heavy whipping cream
    1 teaspoon gelatine soaked in 1 tablespoon cold water.
    - Refrigerate for at least 3 hours before unmolding.
    Yields 8 servings

    I made this with my homemade chia seeds blueberry jam and it was amazing. The main filling didn't set into a jelly-like texture, as I expected. Instead, it was a bit like a marshmallow, which actually worked even better. The cocoa crust, vanilla/blueberry filling and blueberry cream on top make an excellent combination of different textures and flavours. I used allulose as my sweetener, so no sandiness whatsoever.

    Thanks again and again for the wonderful recipes, I usually do the traditional oven baked cheesecake “NewYorker”, however, I tried your recipe today and everything was smooth and perfect until I added the gelatin mixture to the cream cheese 🙂, because if you add the gelatin liquid to the cream cheese and go to prepare the whipping cream the cream cheese will become hard with clumps and won’t be as soft as it was before adding the gelatin to it. Although I followed your ingredients exactly in milligrams! Will try to make it again with less quantity of gelatin or at least add the gelatin to the cheese mixture after mixing the whipped cream with the cream cheese and not before, because perhaps the kind of unflavored gelatin powder available here is different than the one you’ve used. Many thanks for your great ideas 🙏🏻

      Hello Rabie, if your gelatine started to clump you can pop the whole mixture into your microwave for about 8-10 seconds just to loosen it all up. ❤️

      Merci! oui, vous pouvez les congeler mais je préfère le conserver au réfrigérateur pour le garder doux comme une mousse comme une texture. Mais n'hésitez pas à le conserver au congélateur et à le décongeler quelques minutes avant de le manger à nouveau.

    Thanks for this recipe. I just made it. It’s delicious! But there are some gelatin crumbs in it. Is that mean I didn’t dissolve gelatin well?

      Thank you Belina❤️ You can pop the whole cheesecake mixture (with gelatine) for about 15-20 seconds just enough to melt the gelatine if you see some gelatine clumps. ❤️🤗

      The gelatin is added to the batter for no bake cheesecakes to help give the cake more body and hold together when sliced. You can use gelatine sheets, powdered gelatine or agar agar.

    I can’t get gelatine. Is there anything I can substitute? Otherwise I could just leave it out and make sure the cake is well chilled ???

      The gelatin is used to help the mixture set up when the cake is refrigerated. The gelatin is added to the batter to help give the cake a little more body and hold together when sliced. You can also use powdered gelatin or agar agar if gelatin sheet is not available.

      Tuan Nguyen hi Tuan! 💕 You can actually toast or bake the crust for 5-8mins at 350°F. Almond flour is made from nothing but ground nuts, so it can be eaten raw and tastes quite good. It all comes down to your own preference.❤️☺️

    That is such a tiny cheesecake. You can tell it's tiny by the size of the fork. It would last 5 mins.

      Debbie Brazzale yes, you can. You can substitute the same amount of almond flour to the crust. You can also add some unsweetened shredded coconut to add some crunch! Yum! 😋Just bake the coconut flour crust in the oven for about 8-10mins at 350°F to cook it a bit.
