    INGREDIENTS FOR THE CRUST
    Almond flour = 120 g / 1 cup (You can also use any other nut flour)
    Unsalted Melted Butter = 50 g / 3 1/4 tbsp
    Monk fruit = 20 g / 2 1/2 tbsp (OR any keto friendly sweetener)
    Salt = 1/4 to 1/2 tsp
    OR
    Coconut flour = 60 g / 1/2 cup
    Coconut oil = 50 ml / 3 1/4 tbsp
    Monk fruit = 8 g / 1 tbsp
    Salt = 1/4 tsp
    Flax egg = 1 (Mix 7 g / 1 tbsp flaxseed meal + 45 ml / 3 tbsp water. Rest for 15 minutes until thickened)
    INGREDIENTS FOR THE GELATIN MIXTURE
    Gelatin Powder = 8 g / 3/4 tbsp
    Fresh Lime Juice = 60 ml / 1/4 cup (Around 3 to 5 limes, depending on the size. This amount makes a stronger lime flavor but if you prefer a milder flavor then you can reduce the lime juice to 40 ml. I used regular limes, but you can use key limes too)
    INGREDIENTS FOR THE BATTER
    Cream Cheese (softened) = 375 g / 13 oz / 1 3/4 cup (I used Philadelphia Cream Cheese) Whipping Cream (cold) = 225 g / 1 cup
    Allulose = 120 g / 1 cup (Allulose is recommended as it does not crystallize when chilled. But you can also any keto friendly powdered sweetener if you do not mind the grainy texture)
    Lime Zest = 2 to 3 limes
    INGREDIENTS FOR THE WHIPPED CREAM
    Whipping or heavy cream = 150 ml / 2/3 cup (The cream must be cold)
    Powdered sweetener = 2 to 3 tbsp (I used Allulose but you can use any keto friendly sweetener) Vanilla extract = 1 tsp
    Arrowroot powder = 1 to 1 1/2 tsp (This helps to keep the whipped cream stable and lasts longer but it is optional)
    DIRECTIONS FOR CRUST & BATTER
    1. In the video, I used a 6-inch (15 cm) round pan with a removable bottom. You can also use a springform pan. Line the bottom and sides of the pan with parchment paper. Set aside.
    2. Mix all the ingredients for the crust in a bowl until crumbly. Transfer into the pan. Spread evenly and flatten with a cup. Then smoothen the edges with a spoon. Chill in the fridge until needed.
    3. Add the gelatin powder and fresh lime juice in a bowl, stir to mix then set aside.
    4. In a bowl, add the softened cream cheese and mix with a spatula until creamy.
    5. Then add the powdered sweetener and mix until well combined, smooth and creamy.
    6. Add the cold whipping cream into the batter (in two batches) and whisk until well combined.
    7. Place the bowl of gelatin mixture over a small bowl of hot water. Stir until the gelatin is dissolved. Then remove the bowl of hot water and add 2 to 3 tbsp of the batter into the gelatin mixture. Mix until well combined. Pour the mixture into the batter and whisk until combined.
    8. Zest the limes into the batter and mix with a spatula until combined. The batter is smooth and creamy.
    9. Transfer the batter into the pan with the crust. Tap the pan a few times to spread evenly.
    10. Chill in the fridge for a few hours but preferably overnight until well set.
    11. Once ready, remove the pan and parchment paper. Smooth the sides of the cake with an offset spatula.
    12. Pipe the whipped cream around the edges of the cheesecake (optional). Then sprinkle with lime zest. Slice and enjoy.
    DIRECTIONS FOR THE WHIPPED CREAM
    1. Everything must be cold when making whipped cream. Chill the bowl and beaters in the freezer for 30 minutes. And if it doesn't whip out well, use a bowl of ice cubes to hold the bowl for the cream. This creates a colder environment to help with the whipping.
    2. Beat the cold cream, sweetener and vanilla extract at high speed.
    3. When the mixture has thickened slightly, add the arrowroot powder (if using) then beat until stiff peaks.
    4. You can frost immediately or chill in the fridge until needed.

    I made this cheesecake twice! It's delicious! Didn't have lime so I used lemons from my garden! Second time I made it with strong apple cinnamon flavored tea bags instead of the juice of the lemon and it's a tea cheesecake! DELICIOUS 😋

    I made it yesterday & omg ..it's so DELICIOUS...it's so smooth & limey but in a nice way. It's difficult to explain. The lime taste is there but it's not too loud...it's absolutely fantastic.
    I added more erythritol & few stevia drops & it was perfect & not so sweet. Simply a perfect summer dessert.

    This is a delicious recipe! However, it does not need the gelatin. I've tried this recipe with and without gelatin, and it's great even without it.

They're delicious !!Apricots ,organic dried apricots is what I usually eat almost everyday ,too !! Apricots can prevent colon cancer. Peaches are very good for your skin !! Love 'em !!! 😋👍👍I know you're in winter over there !! You decorate x'mass trees in summer ,which is December there !! Lol. I learned that when I was at my grade school as one of my classmate moved to Australia as his dad was a diploma.
      I can be wrong, but I've read before that in Australia, the government doesn't allow cats to roam around & if neighbours see cats in their gardens ,stray or not ,they can kill them !? Is your cat safe for going outside !!? Or,maybe your cat is very smart & stay inside of your garden ? My cats were super smart & one of them was really a stray cat someone dumped ( both I rescued ) & a long time outdoor cat I could tell ,but yet never left my backyard !! Lol. I wasn't sure if I could keep him as I had another male cat & a dog !! Eventually in several months ,I really adopted him & everything worked out after my dog's passing . My cat missed her badly & went depressed ! 😞So he accepted him right away & they hecame besties !! I admire people with green thumbs !! Your garden must be filled with the delicious aromas all the time for those fruit trees !!😍 🌳 😋 😀 I can imagine !! Just be careful as those fruits are toxic to cats !! I was shocked to learn of those when I learned !! Almost all plants,fruits are toxins to cats ,they're truly carnivores !! 😅 Thank you so much for your lovely reply !!       @@spark_6710 The rules for cats are that you need to keep them on your property …….. but your neighbours are not allowed to kill them. 😵‍💫 All pets have to be registered with the council ………. neighbours should ring the council and tell them the cat or dog is roaming ….. then the council will come to the neighbourhood and investigate, and catch the cat/dog if it is off your property……the council then notifies the owner (getting the information from the registration tag worn by the pet) and they have to pay a fine to get it back …… around $250. So you try not to let them roam too often, it can get expensive. 😁
      We do decorate our Xmas trees in summer, and sometimes spend the day at the beach 🏖️ which I supposed is a bit strange for people who live in the northern hemisphere. As our winter and snow season is in July, a lot of restaurants and businesses, especially those in the snow fields celebrate “Xmas in July” ……….. so we get to celebrate twice. 🤣 Just the food and decorations NOT the presents…😂🤣

    Ohh !! Is that you in the very beginning !!? Yay !! Ebook ,congrats on your publishing !! I'd love to see you coming up with vegan versions ,too !! It doesn't have to be all ,but some vegan desserts ! Then ,I'll definitely buy one !! As I have vegan sister/ her husband & friends ,so I cook vegan dishes more often !! I am vegetarian, mom is ,too ! But,we eat vegan meals a lot & vegan sweets/ desserts as well .We often cook for everyone ,so naturally desserts are vegans,too !
    I have to say that you guys do have better vegan sweets/ desserts over there in U.K.than U.S.!!! And they are way more affordable than here !! Boots got vegan yogurt in tropical fruits flavour ,it was the best vegan yogurt that I've ever tasted in my life !! I got 'em for 50 P !!! Each ! As it was going to expire in 4 days ,or so ! I also loved M&S 's vegan raspberry jello !!! Again it was the best vegan jello I've ever had !!

      Yes its me and thank you. I live in Kuala Lumpur, Malaysia. Making keto bread and cake is very challenging. I managed to make 12 vegan keto bread and they are included in my first e-book on Keto Bread. Kelto cake is even.more difficult due to the low carb flours without gluten. I have tried and failed many times so I only have limited vegan cake and cookie recipes.

      Do you mean whether you can substitute whipping cream with yogurt for the batter? Frankly, I have not tried it, but I think it's doable. Whipping cream provides a smooth and velvety texture and does not alter the cream cheese flavor. Yogurt has the same consistency, but if used too much, may mask the cream cheese flavor. You can certainly give it a try, and please let me know how it turns out 🙏

    have you ever tried pecan flour? a lot of us avoid almond flour because of the high oxalate and phtic acid content.

      Yes, I have. I have used it in my Keto pecan buns and bread, and the texture is lighter and fluffier than almond flour. Pecans have the lowest carb content, but it is very expensive in my home country. It may be cheap in the US but very costly elsewhere. I am aware of the high oxalate in almonds so that's why I experimented with other nut flours such as pecans, walnuts, hazelnuts and peanuts as well as ground seeds such as sunflower, pumpkin, black and white sesame seeds. You can find a lot of recipes in my PLAYLIST that uses these great alternative low-carb flours. Thanks for sharing 🙏

    Excuse me.. I don't understand batter.. Isn't butter? What you added to the dissolved gelatin ?

      There's no butter used in this recipe. Batter refers to the cream cheese mixture. The purpose of adding 2 to 3 tbsp of the batter is to temper the gelatin mixture or to bring it down to room temperature before adding to the batter. Hope this clarifies 🙏

    The juice of 3 limes was over 100 ml, now it does not get stiff😢

      As the size of limes could differ, I mentioned that the weight of the fresh lime juice should be between 40 to 60 ml. So over 100 ml is too much. Do you mean it does not get stiff before or after chilling?

    Bake that crust for at least 10 minutes.
