    KETO CHEESECAKE FLUFF
    Serves: 4
    8 oz cream cheese, softened
    1/4 cup sugar free powdered sweetener
    1 teaspoon lemon juice
    pinch of salt
    3/4 cup heavy cream
    1️⃣ In a large bowl, cream together cream cheese, powdered sweetener, lemon juice and salt until smooth and silky. Set aside.
    2️⃣ Pour heavy cream into a medium bowl. Beat with an electric mixer until stiff peaks form.
    3️⃣ Add 1/3 the whipped cream into the cream cheese mixture. Stir until smooth. This will lighten up the mixture to make it easier to fold in the rest of the whipped cream. Add remaining whipped cream and gently fold until combined, fluffy and smooth.
    MACROS (PER 1/3 CUP)

    KETO CHOCOLATE MOUSSE
    Serves: 4
    1 1/2 cups heavy cream
    1/3 cup sugar free powdered sweetener
    1/3 cup unsweetened cocoa powder
    1 teaspoon vanilla extract, optional
    pinch of salt
    1️⃣ Pour heavy cream into a large bowl and beat with an electric mixer until slightly thickened.
    2️⃣ To the thickened cream, add powdered sweetener, cocoa powder, vanilla and salt. Continue beating until stiff peaks form.
    MACROS (per 3/4 cup)

    Net Carbs 3.1g
    CHOCOLATE CHIP COOKIE
    Makes 1
    2 tablespoons almond flour
    1 teaspoon coconut flour
    2 teaspoons monk fruit
    1 tablespoon unsalted butter, softened
    1/4 teaspoon vanilla
    pinch of salt
    1 tablespoon keto approved chocolate chips
    DOUBLE CHOCOLATE COOKIE
    2 tablespoons almond flour
    1 tablespoon unsalted butter, softened
    2.5 teaspoons monk fruit blend sweetener
    1 teaspoon coconut flour
    1 teaspoon 100% unsweetened cocoa powder
    pinch of salt
    1 tablespoon sugar free chocolate chips
    1️⃣ In a small bowl, add all the ingredients listed above. Mix together using a fork until combined.
    2️⃣ Mold into 1 or 2 cookies. Place in the refrigerator for 5-10 minutes to allow the flavors to meld together and to keep the cookie from spreading while baking.
    Oven instructions: Place cookie on a parchment lined baking tray and bake at a 350 degrees for 6 minutes or until the edges start to brown. Remove from oven and let cool completely before handling.
    Microwave instructions: Place cookie on a piece of parchment paper and microwave at 70% or high for 60-90 seconds. Let cookie cool completely before handling.

    CHOCOLATE CREAM PIE
    Press 1/4 the double chocolate cookie in the bottom of a mason jar. Microwave for 60-90seconds at 70% power. Let cool. Pipe in 1/4 the chocolate mousse. Top with whipped cream.

    Press 1/4 chocolate chip cookie in the bottom of a mason jar. Microwave 60-90 sec at 70%. Let cool. Pipe in 1/4 cheesecake fluff.

    I am on a sweet (Keto) fast too. Stopped losing weight when I added Keto sweets. After all, sweets is what got me overweight in the first place. Once February fast is over keto sweets ONLY as a treat once a week. Keto sweets make me binge.

      And you should check and see if it spikes your blood sugar. Just because something is a sugar alternative doesn't mean it doesn't do that. Like stevia makes my sugar Spike and for some it doesn't do that at all but for me it acts just like regular sugar and the same goes for anything because we're all different

      I’m very sensitive to stevia also...I made the chocolate mousse with cocoa & allulose which doesn’t seem to bother me. It was really tasty!

    I made a batch of the low carb shortbread cookies for a family gathering. I halved the recipe. In one batch, added dark chocolate chips, unsweetened coconut, and pecans....in other half, added some reconstituted dried cranberries just a few, that I took scissors and cut in half, one berry per cookie, white chocolate chips and macadamia nuts MUST WAIT UNTIL COOLED ON RACK!!!! EVEN NON KETO family members were crazy over them. Couldn't decide which was best, they both knocked it out of the park!!! Ty! For all the time , effort and energy you have poured into these videos, saving lives, one recipe at a time. Been keto 5 yrs, I feel so much better, I'm 59! Feeling better than I did in my 40s!! 😘

    I realize this video is about KETO and not reducing carbs for blood glucose management. But…Have you looked into ChocZero? MANY people, including myself, noticed a huge spike (30+ points) in their blood glucose after using even though they are marketed as safe for diabetics. Their products are not healthy or safe for people looking to avoid carbs as a means of managing their blood sugar. Lily’s chocolate is actually a healthy choice and very good at that.

    I am so happy to be back on keto track!
    Retired after 35 years of nursing because my joints were so bad (primarily decades of extreme wear and tear rather than being overweight). Because I knew I was coming to the end, I was working 50-65 hours/week and as you might imagine, everything else went by the wayside including my food plan. I’d sadly put on 35 unneeded pounds which is a lot when you’re small. But I got my brain in the game and I’m back on keto track!

    I make the chocolate mousse and use it to top the cheesecake fluff. That's my go-to dessert now and I make it for parties as well. So easy and delicious and no one can tell it's a "diet" dessert.

    Exactly what I need a single serve satisfying bite of sweetness for me not to fill deprived.

    REALLY, really impressed with the cookies.
    I haven’t been satisfied with keto cookie recipes in general and I was convinced it was because I wasn’t using xanthan or guar gum or collagen or lupin or some exotic flour. Now that I’ve made your version … it’s the egg!! It’s been the fricken egg all along. The omission of it, that is, makes all the difference. The butter, the chocolate and especially the crunch I’ve been seeking really come through. I love eggs, but not in cookies apparently.
    THANKS for solving this riddle for me!

    I didn't have cream cheese but I did have cottage cheese. I whipped the cottage cheese with the heavy cream, coco powder and swerve and it tasted just like a chocolate cheesecake. Next time I'll add the cookie "pie crusts". Thanks for this recipe.

    Thank you for giving us these excellent ideas. Your cookie recipe is extremely close to my muffin one - though I add the egg lol - and luckily, I have a more savoury than sweet tooth. But I make my muffins every day and putting a little effort into my daily baking, enables me to stick some fingers up at the greedy food industry.

    These look great! A tip though: use a ramekin instead of a mason/canning jar. These jars are not meant for dry heat so microwaving them greatly increases the risks of thermal shock, and the jars cracking or breaking. That would be heartbreaking with these amazing looking desserts

    Perfect! Simple and easy. I love the chocolate ice cream. I think the cookie recipes are wonderful too. I don't need desserts too much but it's nice to know of easy options when the cravings hit. These are especially nice for cooking for one. I have noticed with cookies that another very good reason to allow them to fully cool is that the sweetener tastes better when it is not warm. These recipes have rounded out my food plan very nicely, thank you! I think the cookie would cook nicely in my mini dash griddle, I am going to try that.

    Oh my gosh, these look amazing! Cheese cake is one of my favorite treats. I'm currently on my first week of a 3 to 4 week sweets fast, but when that's over, I'm gonna try at least one of these. Thank you for the recipe. ❤

      These are not going to spike your sugar so they're not really sweets they do taste sweet but these are sugar alternatives because it's keto

      @@Angelface11 that's probably true, but they do spike an insulin response. That's actually not why I had been doing a fast though. I have a binging problem, and was getting out of hand, even on keto. So I stopped eating all sweets until that desire left. It had nothing to do with them being bad to eat, but it's not real food. It's a treat. However, I wanted it for my meal. I was even finding myself eating less real food, so I can have an excuse to eat more desserts after. That wasn't healthy, so I took a temporary break on the sweets so I could focus on my health a bit better.

      @KathyL yes, I'm diabetic so I have count everything. Especially since I try my hardest to stick to 30-40 carbs in each meal and 16 carbs per snack. So if I have a high carb lunch, I try not to have too many carbs at night. Same with sweet even though they are considered sugar free, If I eat later in day my sugar is high in the morning.

    I cant eat artificial sweetners or most alternative natural sweetners, so it's really nice to see a keto recipe that i can just use regular sugar in. Not quite as low carb with normal sugar in it. But I'm ok with that!

    🌸 Tip since I quit sugar I have noticed I am revolted by anything too sweet
    I suggest before anyone puts same amt of cups of sweetener to sugar
    Just remember sweeteners are actually sweeter to taste than actual sugar
    Why not try safe low sweet substitute or try monk sugar or just another substitute that’s natural
    I found I rather taste of fresh fruits over a sweetener. Just make them to your taste
    I’m making it for my family who enjoys something sweet, I had small apple pie, all natural ingredients with almond flour to create my pie crust, crumbly but interesting 🎉

    Just made the cheesecake fluff 😍😍 I'm in heaven, this stuff is amazing! My new favorite dessert. My husband and I have been keto for about a year now and I've been craving cheesecake like the whole time lol this hit the spot perfect 😋😋

    What do you think about Swerve sugar used in place for monk fruit sweetener? Swerve comes in granulated, brown and powdered and it does not affect ones blood sugar.
