Ingredients list:
2tsp fast action yeast
2tsp sugar
180ml Warm water
130g plain flour
130g cake flour / 00 flour, plus more as needed
Pinch salt
1 Egg (yolk only)
1tsp vanilla extract
1tbsp milk plus extra if needed
Sugar glaze
150g sugar
50g icing sugar
80ml water
¼ tsp egg white powder
Oil for frying

So I was born and raised in the home of Krispy Kreme. I moved overseas a while ago, and I was walking around Tokyo one day when I saw people walking around with boxes of these. This was a bit of a 'wait WHAT' moment until I found, to my delight, that they'd gone global. And now, thanks to you, I can make them at home? THANK YOU!

@@mrbarrylewis not the same guy, but Winston-Salem, North Carolina. I currently live here and was surprised to see how different they look over there. Ours turn out more smooth looking and have probably too much glaze, not that I'm complaining. Just neat to note regional differences.
I’m in Oregon, US here, and when Barry said they’re just barely glazed, I guffawed. The ones we get here are so thickly glazed that I can’t even eat them. It’s interesting to see how companies change things for different regions. I absolutely want to try a Jaffa cake donut!
@@mrbarrylewis Sure thing! Like others have said, the company is from North Carolina in the US. My first experience seeing them overseas was in Shinjuku, Tokyo.
I grew up near the original KK myself (Original location is in Winston-Salem, NC, I lived in Smithfield, NC). We actually went there on a field trip during school once, talk about awesome lol.
Idea for outdoors. Foraging, I watch Atomic Shrimp quite a bit and I LOVE his foraging videos, I think that would be ace!
I'll have to watch some of those as i've never done that in my life, apart from foraging for videos for ingredients in late night supermarkets and there are some sights then too lol

Cake flour isn't just milled finer :) It has less protein in the flour. Less protein means less gluten, which means it won't get too much structure which in turn can make the dough tougher.

One of the best things to do w/ the odd stale krispy kreme (and sometimes i'll even buy a pack and let them stale specifically for this purpose), is butter both sides and toss them in a pan for a couple of minutes per side. The frosting caramelizes and whatnot, and they get delightfully warm and gooey. Highly recommend.
Good video as usual 🙂. The only part I have a question about is the glaze. Why didn't you dunk the cooked donuts into the glaze instead of the drizzle? Most bakeries dunk the handmade ones. The automated bakeries will have a machine that drenches the glaze in the line.
Those look incredible. My favorite donut/doughnut is a Boston cream. Chocolate covered and a splodge of custard inside. I love the variety of these videos. Thank you!

I used to eat Krispy Kreme doughnuts for breakfast with my father when I was a teenager. To me they'll always be more or a breakfast food than a treat or a dessert... Just like pies. ("Pies are filled with fruit, they're a healthy breakfast!" we'd jokingly claim together to anyone who'd want to hear it). Thank you for the great video Barry. I've had a bit of a "meh" day at work and watching you during my lunch break has made it better.
Watching and realized after that flashback that I think this is the 6th version of a kitchen (including that barn and remodels) and maybe the 4th house? Wow! Looking forward to the outdoor kitchen.

Living in Maine I've never had a Krispy Kreme before. They've tried to put a few shops in New England, but they just can't edge into Dunkin's territory. Now there's just two, in Connecticut.
I think it would be neat to see what new ideas you have! As someone who cannot travel much, I love seeing new places, even if it's just a pretty sunset backdrop while you eat what you made in the kitchen. Nothing wrong with mixing it up a bit!
The freshness is key. That is why I like to go there when they have the hot light on.
I love the cow in the corner! The donuts looked amazing. I read the original Krispy Kreme donuts had a potato dough, very different from the current ones, I guess. I liked their pumpkin spice donuts best.
I made( cake and raised) donuts at a job in a donut shop through my entire pregnancy with my daughter in 1987. I worked the day I had her and went back to work frying them the 2nd day home. I took her to work with me in her carrier and put her in the next room where I could see her on top of the big bags of flour…. I worked also with my brother, who I lost 2 years later at 33 from a valiant fight with leukemia. We always had a great time making donuts together - going to work every day at 3am! Such good memories! But it is fast paced work ,you must move fast to fry the trays of yeast donuts in the proofer or else the ones on the bottom last one will start falling! I had some great KK ones on a trip to Arkansas I took in 2018, they were SO GOOD!
The best Krispy Kreme flavor they ever did was a collab with a Soda-Pop company in the same city called Cheerewine, and they had Cheerwine Glaze and Cheerwine Kreme filled doughnuts that were phenomenal, if you source the Cheerwine I highly suggest attempting it.

In Canada we have Krispy Cremes too, these look amazing, but another favorite donut we usual get is called a "Boston Creme" pretty much a custard filled donut dipped in chocolate (fondant) but probably even better with real melted chocolate 😋😘

@@mrbarrylewis On the east coast of America and in Florida they're very well known, because I live in New York and I love them to death.
If anything I'd love for you to try them because they are very unique in that they're not the conventional standard of what a cookie is, and are actually cakes with a special cooking method and royal icing on them.

Hiya Barry! Thank you so much for making the donuts. I've always wanted to try making bread, and donuts. I'm just was not really sure about what the dough stage should look like. Viewing how you made the dough has helped have a better idea, so I don't add to much flour.
I'd love to see a video about what you actually cook each night. Maybe a week of dinners/meals in your home

For the lumps in the icing try sifting the dry goods prior to adding in the wet goods. It apparently helps prevent clumps from forming, probably breaks up any "bonds" that the dry mix has.
I so adore your videos, I miss living in Cornwall! I have been back in the United States for 11 years. I am not a fan of doughnuts as I worked in a doughnut shop as a teenager having to scrape off and scrubbing icing sugar 🤣

@@samanthahughes7783 sadly with social services and care I don’t hold out much hope. National shortage of carers as no one wants to do the job when easier jobs pay more. But this agency just quit with no notice leaving me instantly without a carer and my retired dad is having to come round and help which is far from ideal. Just feeling fed up that I’m in my 30’s and my body is so useless and I can’t do everything myself, probably doesn’t help that I’m in loads of pain too. Thank you though ❤

I have a spinal problem that started being noticeable when I was about seventeen, so I understand the frustration, depression, annoyance, and deep down rage (usually about yourself and directed towards yourself as well) that long term pain can cause. And of course, you now have the worry of trying to find another carer, and of your dad having to help.
I hope you can find some help, and wish you some relief from your pain, both physical, emotional and mental.
My biggest piece of advice I can give you is to not be afraid to ask for, or admit to the fact you need help. It doesn’t mean you’re weak, it actually means that you’re smart (I wish I’d of admitted to that thirty years ago, maybe I’d be in a much better position than I am today) aaaanyway (sorry if I sound ‘preachy’, lol)

Maybe an idea to make this recipe (or recipes in general) where you use a different version of ingredient to see the difference (so in this case skimmed milk for your whole milk) and what it would do to the end result

My only question is can you fry these in a deep pot rather than a fryer? I don't have a fryer. I have pans and deep pots that I used to use for canning jars of jam.
You can microwave the store bought ones for a few seconds and they taste like the ones from the restaurant. Soft and warm.

I'm not too fussed on Krispe Kreme but I _do_ like their "apple pie" flavoured doughnuts -- little cinnamon sugar on the outside, and a lovely warm apple cinnamon filling, MMMMMMMMMMMMMMMMMMMM good.

Growing up my mom would make homemade donuts using canned biscuit dough and then make the glaze to drizzle on top.
Wagamama actually does exist in other countries. We got one here in Denmark, but it's located in central Copenhagen and is the only one we have. I understand that it's the same with Netherlands that only has one located in Amsterdam. They are more wide spread in UK, Irland, Australien, New Zealand, Switzerland, Turkey and USA. So not much to prevent you from trying out doing a copy recipe :D

It's best practice not to close the lid of your fryer, as to let the stream release properly. I know you're not a fan of hot oil, but it's perfectly safe to leave the lid open.
Used to love going in Krispy Kreme shops about 15 years ago (are they still in the UK?) watching the donuts whizz round you in the machine and the smell...
Yep, no big machine mainly just on the shelf to pick but they have some really interesting flavours / combos. There's some great independent folks in London too doing donuts up a notch even more so when I was last there, crosstown donuts is one, really cool stuff!

I would recommend to dip the doughnut in the glaze rather than dripping the glaze on the doughnuts - less mess ;)
Save the donut centres to make TimBits, one of the staples of Canada's default coffee place Tim Hortons, where they make little donuts out of the centre nuggets of dough... :P
I think during the summer you should absolutely do some BBQ videos outdoors! I know from previous vids the part of the country you're from, and you are indeed blessed with some sublime scenery :)

Definitely gonna try this, you should experiment with different flour ratios. KKreme donuts are ridiculously soft, maybe even too soft although that doesn't stop me from scranning the whole box mind you 🤣

Australia used to have Wagamama's but the stores closed about 8 years ago. I never got to go to one but know a lot raved about it, so maybe people of the southern land might actually like some dupe recipes for it!
